10 cherry tomatoes, halved
1/3 cucumber, chopped
Small handful fresh basil
2 tsp olive oil: amzn.to/2OsmV48
2 tsp apple cider vinegar: amzn.to/2F12D2c
Salt & pepper
Add the couscous to a mixing bowl along with the tomatoes, cucumber, basil, olive oil, ACV, salt and pepper. Mix through well.
Strawberries

ROAST VEG LENTIL PASTA WITH PESTO
HOMEMADE BASIL PESTO:
1 tightly packed cup basil
3 cloves garlic, peeled
Juice of 1/2 lemon
3 tbsp olive oil: amzn.to/2OsmV48
3 tbsp nutritional yeast: l.thrv.me/jb-bragg-nutr-yeast
2 tbsp pine nuts: l.thrv.me/jb-thrv-mrkt-org-raw...
Salt
1 portion pre-cooked red lentil pasta: amzn.to/2qkWEv5
2/3 1 portion roast vegetables (pepper, aubergine, courgette, onion)
Small bunch fresh basil
Add the pasta to a mixing bowl along with 2 tbsp pesto. Mix well, then add in the roast vegetables and basil, and stir though again.
Olive tapenade hummus, crackers, blueberries, almonds
HUMMUS, PESTO & ROAST VEG BAGEL
1 bagel
Hummus
Pesto
1/3 portion of roast vegetables
Rocket
Halve the bagel, spread some hummus on one half and pesto on the other. Add on the roasted vegetables, rocket, press together and half again.
Yoghurt and passionfruit, berries

Bunch parsley

Handful rocket
1 portion pre-cooked penne pasta
Rice cakes, yoghurt, berries.
GUACAMOLE AND BEAN SALAD SANDWICH
GUACAMOLE:
1 small avocado
10 cherry tomatoes, chopped
Small bunch fresh coriander
Juice 1/2 lime
Pinch chilli flakes
Salt & pepper
(red onion and/or garlic, optional)
2 slices crusty bread

Handful rocket
Spread the guacamole onto one slice of bread, add on the bean salad, some crushed tortilla chips and rocket. Press together and cut in half.

This is the first video I've seen of yours and automatically I subscribed. I'm a vegan now because I'm 14 and suffered from anorexia. My parents took me to a hospital and they said i wasnt low ebough. Then I felt depressed so I started binge eating and then purging. My parents figured out so now I'm recovering but I'm still really scared of food. This makes me happy that there is really good food I can eat and it's healthy so thank you. You don't know how much people like me you help also.

@@CarmenLikesApples I work for a bank. You wanna look for jobs where you 'telecommute'. That term means you either go into work maybe 2-3 times a week or work from home. You'd have to negotiate that. I worked for the company for years and was moving due to the husbands job so they worked with me. We moved again and I got a promotion but now I gotta go into the office and work from home sometimes.

honestly stop- Yeah. You could try quesadillas or you could also make seitan. It’s like vegan chicken. It’s really easy to make. Just google seitan recipe

Just a tip, I found the blurring effect at the beginning very annoying on my eyes, they kept trying to focus; maybe try keeping it for a shorter amount of time next time? Otherwise loved the video as per usual Jess!!!
