- On this video, I smoked up a 5 pound chub of all beef bologna on my Yoder YS640 pellet smoker. This was the 3rd bologna I've smoked and this one by far is the best! The 3 step smoking program I used on the Yoder drive app worked flawlessly. This was my first cook using the new ACS controller and I like it!

Thanks for the share. I follow the same process and smoke the bologna alongside ribs until it’s time to wrap the ribs. That allows u to have the bologna for lunch and the ribs for dinner. Only hard part is controlling how much bologna to have for lunch before having the ribs for dinner. 😊

Hey Joe!! Great cook. I love to smoke a bologna, let it cool and slice. The next morning I fry the bologna, add a slice of pepper jack cheese and serve with 2-3 over easy eggs!! Such a good way to start any day!! Thanks for the great content!!

Hey Joe, just wanted to thank you for a great video and great results on the bologna yesterday! I did 32 pound chunks and they turned out phenomenal. Are used Frank’s hot sauce as a binder and then one of my favorite rubs. Smoked it on my rec teq for two hours at the lowest which is 180° and then crank it up to 275° for the last hour. It was phenomenal! I sliced it all up on my Cabela’s meat slicer and my wife is taking it all minus a few pieces for me to work today for her team. Thanks again!

Bet that baloney was really good! I keep saying I ought to splurge on some beef bologna, but the cheap stuff smoked is really good, too, especially on griddled sourdough with pepper jack and some Wickles pickles. I don’t know how brown sugar would taste on the beef baloney, but in a savory or creole rub it tastes really good on the cheap stuff. The brown sugar also seems to help the smoke stick and the outside to get crusty faster.

Joe, I smoked 5 lb chub of bologna yesterday and it is freakin awesome!! I scored it a little too deep and it kind of fell apart but great none the less.

I marinate Chubs in Allegro Hot & Spicy in Zip Lock bags..smoke on indirect heat with Charcoal and Hickory..then grill over direct heat for desired char marks..Bolo is already pre cooked and doesn't need long time grill/smoke.Your Chub looks great!!

Man I love smoked bologna! I used to by a full bologna like that and then cut it in thick slices and grill. Then a little over a decade ago I saw Malcolm Reed on How to BBQ Right, do this in very similar fashion to the way you did by scoring it and smoking it. I’ve been doing it that way ever since then. I do prefer a low salt or no salt rub, or just use paprika with a little cumin in it or chili powder when smoking bologna or SPAM®️ because the processed meat already has a high sodium content. Does that rub you used have a lot of salt in it? Anyway, it looked real good and reminds me that I should do some again soon.

I usually do the "smoke at 175°F for two hours" and then increase the YS640 to 295°F and go an additional hour and a half. We cook a lot of bologna in Oklahoma and just about every BBQ joint offers it. Your's looks great and we are going to try the Plowboys rub and the 325°F temp. Thanks for another good tip!
P.S. Most of the people around here seem to actually prefer the cheap bologna from Walmart (Boars Head? Black Boar?) rather than the more expensive "foodie" versions found in stores such as Whole Foods. Costs less; tastes gooderer.....what's not to like?
Hey there IX, not so popular here in Texas. I'd love to visit Oklahoma to try some of these places out. To me, there's something in the flavor and texture on the chicken, pork and beef bologna. I'm not a fan. I fell in love with all beef hot dogs in Vegas believe it or not. We went to a Nathan's hot dog place and it was so good so I switched to all beef bologna too. When we were younger, all my mom could afford was the 4 for a dollar bar s hot dogs and it was good but not as good as all beef. Thanks for watching buddy. 👍🏼

My 640 is a cooking machine. I've used one for over 6 years now and it's still my go to smoker for many of my cooks simple to use, especially with the new controller. Best smoker on the market hands down. 🤘

My question is after u score it and olive oil and rub why not open up the cuts and get rub down inside the meat or at least when the cuts start to open up then add more rub into the it as the cut open up seems to me it would taste better with rub somewhat down in it . just saying smoke on brother
You can definitely do that but it might get a bit too salty on you. 👍
Is this a wood smoker or a pellet wood smoker? The pellet wood smokers act more like an oven that departs some of the smoke.
