We actually have something really similar here in Finland. Instead of beef we use thinly sliced reindeer, and fry it with the onions, some black pepper, allspice, butter and a bit of water for the broth. Serve that over mashed potatoes with some lingonberry jam and pickles and you've made "poronkäristys" ("fried reindeer").

You sharing the Mega Beef Bowl with your friends makes me think it could make a fun group meal at a restaurant, just a giant beef bowl for 3-4 people to share.
For Vegan dashi, substitute the fish ingredients with sun dried Daikon. I also add just a bit of mushroom based oyster sauce for dishes with richer broths. Being allergic to seafood sucks, but at least there is a reasonable work-around for hotpot and ramen.

@@Landis963 both actually. In the game/anime it’s commonly shown on the side, and atlas released an official Leblanc curry recipe containing coffee when they released persona 5 strikers. I’ve actually made the Leblanc curry from this recipe card and it was one of the best thing I have ever eaten, highly recommend

Gyudon can be topped with eggs in many different ways, including raw egg, onsen tamago, sunny side up, soft/medium boiled, or lightly scrambled egg cooked at the last minute with the beef. It's perfectly legit to have a fried egg on top.

I think the official recipe that was posted by PlayStation Japan on Twitter calls for a raw egg yolk rather than a cooked sunny side up egg. But your version looks to be accurate to the look of it in the anime adaptation. That said, I actually suggested this a few days ago thanks to the recent tweet mentioned earlier with the recipe, talk about perfect timing (thanks for using the English dub, by the way). And since we’re on the topic of Persona, I hope you tackle Sojiro Sakura & Ren Amamiya/Joker’s curry from Persona 5 (Royal) as well as Ren/Joker’s recipes from Persona 5 Strikers at some point.
Japan has much safer food handling standards so it's much less risky to eat raw egg. I don't think I ever could anywhere, but I definitely wouldn't try it with commercially available eggs in the US.

Every Sunday I always end up cooking chicken curry and rice for my family (one of my boys dubbed it the curry of life even though it probably is far from spicy enough for the title 🤣) and it always a hit. If you avoid cutting the eye of the onion it won’t release the vapors that make you cry
If you sprinkle the onions with a little bit of cold water before/during slicing, it will reduce the amount of gas that rises to irritate your eyes.

I learned the finger trick from the anime Sweetness and Lightning, it has helped me make many perfect servings of fluffy but not too sticky rice

The egg in the clip was probably an uncooked egg, that would get slightly cooked when you stir the whole (regular sized) dish.
