There were these Asian inspired chicken burgers my dad used to make for my family growing up. I think it’d make a fantastic bánh mì smash burger. Feel free to cut the recipe in half since we always made it in bulk and would defrost a pound of it whenever we had a craving. Asian Chicken Sausage INGREDIENTS 3 1/2 lbs. ground chicken 1-2 T. green curry paste 1 bunch (4-6 oz.) fresh cilantro (including stems) rinsed and finely chopped 3 T. Minced fresh basil 3 T. Minced fresh mint 2 cloves pressed garlic 1 inch freshly grated ginger 1/4 cup fish sauce 1 T. Kosher salt 1 T. Freshly ground black pepper 1 t. Red pepper flakes 1 t. Cayenne pepper DIRECTIONS In a bowl, combine all the ingredients until well incorporated. Fry a small piece of meat to test for salinity, spice, etc. Divide your meat mixture into 1 pound portions. Wrap tightly in plastic wrap or portioned in freezer bags and refrigerate/freeze. Makes roughly 4 one pound portions.

Recently we made the BEST grilled sandwich with leftover smoked pork. You would not necessarily have smoked, but the rest: sharp cheddar, fig jam and butter-grilled sourdough. The play of sweet and savory - oh my!!! Just think about it.....

Try a Turkey burger with chopped celery, onion mixed and bells stuffing into the patty. Use a large dinner roll with some amazing turkey gravy. No cheese needed.

PLEASE READ THIS ONE SAM, delicious looking smash burger and I love the idea for smash month. HOWEVER try this technique out!!when you smash the burger do a circular motion around the patty just after the initial smash. Really try to thin out the outer edges of the patty. it will make an unbelievable crust you cant beat. PLEASE GIVE IT A TRY!! Its a common technique used alot to make smash burgers. Essentially you want the edges to have a tapered edge YOU WILL LOVE THE TEXTURE
