It is so good seeing young people canning and preserving, I am 73 years old now and I am my husbands caregiver, he has dementia. We don't have a garden anymore and taking care of him takes my time. I really miss those days, I loved canning green beans the best, I sometimes wondered if it was really worth the time, until I saw one of our little Grandsons eating them and the look on his face was "Priceless" he acted like he had never had green beans that good b4. I just bought a newPresto canner that I can use to water bath or pressure can. I haven’t canned in many year but now that I am retired, I have renewed interest. Thanks for being an inspiration❣️

Thanks for the video. I just acquired 5 gallons of Scuppernongs and about 2 gallons of Muscadines. I've heard many people say the muscadines have rather "tannin" flavor that they don't like and I really don't want to mess up the scuppernong jelly because it has a better flavor (to me). Have you ever mixed the two? What about your muscadine jelly? Does it have that "tannin" flavor or do you have a way of getting rid of it?
So, I’ve wanted to do more canning, and I’ve done some, but I’ve used our outdoor propane burner because I read that you can’t can on glass top stoves. I’m not sure why. But I see y’all are using a glass top stove. Does it work?? No issues? Because that would be a lot easier than taking everything back and forth and messing with the propane tank.
I've never had a problem canning on glass top stoves. My Mamaw did it too. You just need to be careful moving around a full heavy canner but I think most people would do that anyway. :)
Put your muscadines in a bowl barely cover with water and cook down like I did then you will measure your juice and sugar just like I did. You can go ahead and make as much juice as you want, and can freeze it if needed to use later, but you need to make your jelly in single batches with the recipe I used here. :) You might could get away with doing a double batch but more than that and temperatures start to get off and your jelly may not turn out well.

This brings back so many memories! My grandparents had muscadine and scuppernong vines and I remember helping them make jelly! Wonderful memories!!

Get a steam juicer, it’s a lot easier. No straining, no cheese cloth, and a lot less clean up too. Go to RUclips and watch how a steam juicer works.

So when you make the juice to save its just covering the scuppernongs with water boil, mash and strain?

I’m not sure what muscadine is. Where do you find these berries?
Do I have to water bath them?
You could probably hot pack them into sterilized jars if that's something you're comfortable with, but I water bath them.
