❤ here's what I do with that little bit of wine and lees: I have a tall and thin iced tea pitcher that I pour all of the lees into. It settles in a day or two and we enjoy a glass of new wine. Then dump the lees into the compost. Love your videos, thank you!
I am fixing to make muscadine wine for the first time ever. I had to find an alternative to the Camden tablets as everyone was sold out! Even Amazon had to postpone my shipment by three weeks! So I found a brewery supply company and let me tell you! The owner was working hard to sell me everything! Fussed at me for not “washing “ my stuff with commercial cleaner, had me buy a testing jar and a hydrometer and Ph test strips. I told her that the video I watched didn’t involve all of this! And she said well you’re taking a chance that your wine is going to explode when it goes into bottles and all this other stuff. I finally told her listen, I’m not wanting to spend a whole lot more money than what I’ve already spent. I’m not looking to make commercial wine, everybody makes wine differently and bought my $30 worth of stuff and walked out lol so I’m praying this wine comes out delicious following your recipe!! At the end of the video I forgot to show me adding the last Camden tablet. 24 hrs before you backsweetn your wine, add the tablet to each bucket so it makes sure that the yeast is dead before you add all that sugar
Just finished our first batch and it turned out pretty good. We now have more close friends than we know what to do with. I am working on a second batch for a few months down the road. Thanks for the Video.
Just started a batch of wild muscadine wine. About to add the yeast around 2000 hrs. Getting around 15% because of the wife lol. Definitely appreciate the video. Wasn’t sure about the prep. on the grapes themselves. So thank you for sharing!

Left a comment on here about a year ago. Followed your instructions and we made the best wine! Got awesome compliments and were super happy seeing it was our first attempt. We did a 50/50 blend of muscadine and concord. Turned out beatufil thank you! We did experiment with the back sweetening using honey, aquave and cane sugar. The honey turned out ok but the aguave and cane sugar were the best.
I really enjoyed the video. Great job. I do have a few questions. First, after removing the sediment, what did you clean the carboy with? Second, the syphon tube and the bottles, how did you sterilize them? Lastly, if you were going to gift someone with a bottle, how long after bottling would you wait?
1st we drink right away its good. 2nd I just rinse out a few times really well. They do make cleaning tools for the carboys. Yoi can find them on Amazon. 3rd. The bottles I spray the sterilizer in the bottle then I place them upside down to drain in the dishwasher for a few minutes to drain then rinse and ready to go. The siphon I put sterilizer in a bowl pump through then pump clean water through to rinse out the pump

Very nice video. I was very interested in your experience with Ison grapes. Last year I made a 5 gallon batch of white wine from Ison’s then back sweetened to ‘Moscato’ sweet and it was good. I just started a 5 gallon batch of white and 15 gallon batch of red using Ison’s. Thanks for the video, it really helps!

I just got 1/2 bushel of Muscadine's today and have everything else on hand. I will be starting a batch this week. Excellent video for a basic homemade wine.
Have you had any that wouldn’t bubble in the air lock, but take the top off and it has a good cap and I can see bubbles coming off of it. I break the cap with a spoon and it has excellent foam in it. The air lock isn’t stopped up and these are new buckets. My other bucket does just like you show in the video.
After fermentation you need to be careful exposing must to oxygen. While transferring to the 3 gallon carboy you want to make sure you’re not splashing it to introduce oxygen. Keep end of hose under the surface of the liquid. And also eliminate the headspace in the carboy. Should only be about an inch headspace at the top.

I don't recall seeing where the Camden tablets were added again at the end, did I miss it, when do I add? I asked for & received a wine making kit for Christmas, but the instructions were very scientific, I was worried I wouldn't be able to do this. I absolutely love y'alls video, definitely simplified this process for me. We picked muscadines over the weekend and just started ours....I'm sooo excited and now more confident! Thanks so much!

Add it 24hrs before you backsweet and bottle. 1 tablet per gallon just to make sure the yeast is completely dead. I have a pineapple wine video you will probably enjoy as well. Loved this video. Watched it a hundred times. We bottled yesterday. We did not back sweeten because we like it dry. I’m just seeing the comments about adding the Camden tablet. We did not do this. Do we need to warn our friends who received a bottle yesterday?? 😂

Awesome video! Truly. Really love your approach, not just to brewing, but explaining or relaying information. I just racked 60L of a really big bold, dark red grape wine off of 100kg of Hamburger as we call it...but it's actually Black Hamburg muscat grape. And for the end of the year and the brewing season I've just started slightly over 10L, basically ~ 11L of dark cherry mead from the frozen cherries I had left over from the summer. Again, love the channel, happy the youtube algorithm finally recommended it to me...I just subscribed! 👍
Awesome video. What about the campden tablets at the end? Not sure I caught that step at the end of the video? Do you add campden after final settling right before sweetening or bottling?
Followed process the best I could. After one week of stirring and breaking up the cap I still do not have any bubbles in the carboys. Should I do something or continue for two more weeks?
As long as you have a cap to keep breaking up and the fermenting is happening don't worry. Probably a small leak somewhere in the lid. I have 1 bucket that I have the same problem with but it still works

I just had some muscadine wine made by a guy in Alabama. It is really sweet and I suspect very low alcohol. I had three glasses and felt nothing. But it is tasty.

I add a Campton tablet at the end before bottling just forgot to add at the end of video. But the yeast should be dead anyway. We have had some strawberry restart and blow the corks lol. It was a disaster
Good Morning Shane. Thanks for reply. I live out close to Villa Rica NW part of State. Will be trying Your recipe to the T ,only difference will be using Sccuppernongs,seeing how My Supreme & Ison Vine did not do Well & found a trick that works well to keep the Deer away from My Scuppernongs. Want to touch on why I use a Perservative Potassium Sorbate @ a very small amount 1/4 tsp. at bottling .I take a qt of same fruit & run it through a countertop Juicer+ the Sugar Syrup like You & add @ bottling, because was not getting that exceptional Muscadine taste that both of us go crazy about HaHaHa! . Seeing the way You make Your Wine I can see how You get more Flavor. I add the Perservative to keep from refermentation, does not seem to effect taste of Wine. Cheers! Kay

When you first add the sugar to the. water in the glass, before adding in the yeast, is that 1 tablespoon of sugar? Or 1 teaspoon? Stirred into about 1/3 cup of hot water? Thanks! These videos are just wonderful! I can’t wait to start my muscadine wine!

Do you use only one variety of grapes for your wine or do you mix them. I like a white wine and I have some grapes that are white. And do you cut your grapes in half and seed them. This is the most informative of any video. Thank you for sharing.
I love you experiment with mixed grapes yes. Always something different. It's all good lol. I just smash em up with a potato smasher. Depending would take forever
and have you not had any problems blowing the corks out but adding sugar at the end? most people add a stabilizer that doesn't let it start fermenting again
great video, I only have one question, when you made the last transfer to sweeten the wine, you did not add or did not mention stabilizing the wine, I understand that 1 cambden tablet is added per gallon and 1/2 Tsp of potassium sorbate, with the aim of slowing down the fermentation and preventing the corks from flying or exploding the bottles. I would use a mesh wine bag it makes life easy. It aids in the filtering so no chunks to remove. I also use wine tannins in none grape fruit wines. Do you? Iv never started my yeast in a cup. I sprinkle it on top of the liquid and never mix until the next day. Interesting the many ways to make wine. Did you wait 24 hrs to pitch the yeast after the Camden tablets? I must of missed that. Do you measure your abv or rely on knowing the levels your used to?

So was watching your muscadine videos - decided to look up muscadine wine and you were the top result! I have been making mead (don't know if you have bees but highly recommend mead) but want to start growing muscadines and I have pretty much all the equipment to do muscadine wine from the mead making. I have a question - if when you pulled the muscadines off of the vine could you have dunked them in a container with starsan water, then froze them and then not used the camden tablet? Or would you want to make sure and still use the camden tablet?
My mom use to make this stuff out of an antique glass container she said use to hold acid back in the telegraph days lol Muscadine wine.. Peach Brandy... I miss her wines and Brandys

I just racked 60L of a really big bold, dark red grape wine off of 100kg of Hamburger as we call it...but it's actually Black Hamburg muscat grape.
And for the end of the year and the brewing season I've just started slightly over 10L, basically ~ 11L of dark cherry mead from the frozen cherries I had left over from the summer.
Again, love the channel, happy the youtube algorithm finally recommended it to me...I just subscribed! 👍

No I actually forgot but it works out ok. No problems
Followed process the best I could. After one week of stirring and breaking up the cap I still do not have any bubbles in the carboys. Should I do something or continue for two more weeks?
As long as you have a cap to keep breaking up and the fermenting is happening don't worry. Probably a small leak somewhere in the lid. I have 1 bucket that I have the same problem with but it still works

@@KinfolkFarmofGeorgia I do have one question. At the beginning of your video, you mentioned that you use the Campden Tablets at the beginning and the end of the process but I did not see you use them again at the end. Did I just miss it?
@@KinfolkFarmofGeorgiathanks for offering to answer questions. My wine has been in the fermentation bucket now for about a week and half and my airlock still isn’t bubbling BUT there IS foam when I stir it every day. Any idea why the airlock wouldn’t be bubbling? Should I be concerned?

I just had some muscadine wine made by a guy in Alabama. It is really sweet and I suspect very low alcohol. I had three glasses and felt nothing. But it is tasty.

I add a Campton tablet at the end before bottling just forgot to add at the end of video. But the yeast should be dead anyway. We have had some strawberry restart and blow the corks lol. It was a disaster

Good Morning Shane. Thanks for reply. I live out close to Villa Rica NW part of State. Will be trying Your recipe to the T ,only difference will be using Sccuppernongs,seeing how My Supreme & Ison Vine did not do Well & found a trick that works well to keep the Deer away from My Scuppernongs. Want to touch on why I use a Perservative Potassium Sorbate @ a very small amount 1/4 tsp. at bottling .I take a qt of same fruit & run it through a countertop Juicer+ the Sugar Syrup like You & add @ bottling, because was not getting that exceptional Muscadine taste that both of us go crazy about HaHaHa! . Seeing the way You make Your Wine I can see how You get more Flavor. I add the Perservative to keep from refermentation, does not seem to effect taste of Wine. Cheers! Kay

Yea I forgot to add that to video. Add tablet 24 hrs before bottling we back sweeten just before bottling
When you first add the sugar to the. water in the glass, before adding in the yeast, is that 1 tablespoon of sugar? Or 1 teaspoon? Stirred into about 1/3 cup of hot water? Thanks! These videos are just wonderful! I can’t wait to start my muscadine wine!

Do you use only one variety of grapes for your wine or do you mix them. I like a white wine and I have some grapes that are white. And do you cut your grapes in half and seed them. This is the most informative of any video. Thank you for sharing.
I love you experiment with mixed grapes yes. Always something different. It's all good lol. I just smash em up with a potato smasher. Depending would take forever

and have you not had any problems blowing the corks out but adding sugar at the end? most people add a stabilizer that doesn't let it start fermenting again
We definitely have, only with our strawberry wine. Never tried the stabilizer but we still learning

great video, I only have one question, when you made the last transfer to sweeten the wine, you did not add or did not mention stabilizing the wine, I understand that 1 cambden tablet is added per gallon and 1/2 Tsp of potassium sorbate, with the aim of slowing down the fermentation and preventing the corks from flying or exploding the bottles. I would use a mesh wine bag it makes life easy. It aids in the filtering so no chunks to remove. I also use wine tannins in none grape fruit wines. Do you? Iv never started my yeast in a cup. I sprinkle it on top of the liquid and never mix until the next day. Interesting the many ways to make wine. Did you wait 24 hrs to pitch the yeast after the Camden tablets? I must of missed that. Do you measure your abv or rely on knowing the levels your used to?
I don't check Alco levels and I do wait 24 hrs

So was watching your muscadine videos - decided to look up muscadine wine and you were the top result! I have been making mead (don't know if you have bees but highly recommend mead) but want to start growing muscadines and I have pretty much all the equipment to do muscadine wine from the mead making. I have a question - if when you pulled the muscadines off of the vine could you have dunked them in a container with starsan water, then froze them and then not used the camden tablet? Or would you want to make sure and still use the camden tablet?
We pick and just freeze in 1 gallon bags and it all works out great

My mom use to make this stuff out of an antique glass container she said use to hold acid back in the telegraph days lol
