I have never thought about using cilantro stems in a sauce. I love ways to avoid food waste and just new ways to use ingredients in general. This salad is rocking texture and flavor, awesome video!

There are "studies" about the room temp thing and apparently the meat temperature doesn't really shift a whole lot even after one hour, but I kinda do it out of habit.😂 The salting ahead of time, however, is crucial in my book. With a thicker cut steak, it's best to salt and keep overnight in the fridge over a grate. The more moisture you can get out of the steak the better cook you'll get on that crust.✌🏾
