    When I worked at a farm-to-table restaurant in NY, this time of the year was one of the most exciting for all the chefs as tomatoes were at their peak and there was just so much you could do with them. This technique I actually learned from the very first chef I ever worked with, Saul Bolton of restaurant Saul in Brooklyn. Super nice guy who didn't need to yell and scream at his cooks to earn his Michelin star. He used humor instead. And with humor, he got this newbie in the kitchen to line up the tomatoes neat and tidy like little soldiers. You never forget these lessons you learn in someone else's kitchen. So grateful to Saul!

    this video made want to buy a bunch of tomatoes, lol. This is a very great technique, I am going to make this just so I can say to the wife that I made some "tomato confit" and earn some fancy points. great video as always Annie!
