  • What better pairing to flavorless tofu than kimchi? I'll show you my favorite way to caramelized kimchi and serve it with tofu. The traditional way is to cook the kimchi with pork belly, but I find prefer it without. It's a super quick and simple preparation of a side dish that can be eaten warm or cold.

    - 1/2 medium onion
    - 2 cloves garlic
    - Whites of 2-3 scallions
    - 1 cup of overripe kimchi
    - 1 package soft to medium-firm tofu
    - 3 tbsp mirin/mirim
    - 1/4-1 tsp sugar, depending on kimchi
    - 1-3 tsp soy sauce, depending on kimchi
    - 1-2 tbsp sesame oil
    - Greens of scallions
    - Sesame seeds

    I've never been a big tofu fan but wow does that look incredible! Yeah you're right my issue with tofu is that it's bland but this takes it up 1000 notches! Yum, I'd go for it!

      Haha, yes, tofu certainly needs to be paired with something as powerful as kimchi.😂 Growing up with Korean food, I never thought of it as a flavorless ingredient cause it was always paired with things packed with flavor.😊
