    To all of you who say this is not a real Ethiopian Injera recipe, please remember that in the beginning of this video she said she is substituting ingredients for when you do NOT have Teff flour! OMG, you can order Teff online if you want to, but please stop complaining that this is not authentic. I, for one, am happy she was kind enough to share the recipe with us - bless her heart!

      DeeDe Lowe : You can buy Teff flour through Bob's Red Mill flours and grains at some groceries stores. You can also find it at some Sprouts, Whole Foods (Now Amazon) and some health food stores. We can find it easily at north Texas stores because our Ethiopian population is increasing and we are happy to have them. They are wonderful, naturally happy, polite and CHRISTIAN people. We have many Ethio RESTAURANTS in the Dallas area and we love the cuisine and have eaten it all over the world. If you have Ethiopian RESTAURANTS in your area, that would be a great place to start. Ask where they buy their Teff , Then you might be able to order some yourself. There are many Ethiopian grocers listed on the Internet also from which you can order. So one way or another, you can find Teff flour here in America!

      @@marquitasozio4459 Not sure what difference it makes what their religion is. Many Ethiopians are Jews as well. I'm from a very multicultural city, Toronto, and we have a sizable Ethiopian community as well as many other cultures, and our HINDU and MUSLIM neighbors are just as welcome, polite, and eager to share their wonderful cuisines with us.

    Those of you saying using non teff ingridients isnt real injera, for your information a lot of people in ethiopia and Eritrea use substitute ingredients like mashala gebs and other grains. Not everyone grows teff nor does everyone can afford it. What she's made is as authentic as it gets, well done to tjis lady fir a great tutorial.

    I have a very nice Ethiopian restaraunt just a few blocks away from me here in Chicago. I LOVE this stuff and just bought two large bags of Teff Flour. Thank you SO much for this authentic recipe!!!

    Thank you so much for posting this recipe. I worked with a lovely Ethiopian woman and we often shared our lunches (I am from Romania and I would bring our traditional food) and she would bring this bread and delicious stews... yummmm.. I will have to try it this week. Injera sounds like a word from my country inger = angel :D

    Thank you for posting this. We just had Ethiopian food in New York City and it was so good. I was wondering how to make the bread and here you are so nice to show every step. I will try it with teff and let you know how it turns out.

    Thank you so much for creating this video. I have a friend from Ethiopia who turned me on to injera bread last summer. We ate it with cooked Kale/red onion/garlic/carrots/and hot pepper. And it was delicious! I'm confident with the easy step-by-step instructions you presented in this video it will turn out good. Also, I found some Teff at the health/vitamin store!

    kadi, i think u have made a wonderful job. here in ethiopia people make enjera from tefe, but no body can make enjera from whet flower so, well done. thanks for trying to make our popular traditional flat bread(enjera).

    Salut, I made this yesterday using all Teff flour and it came out well. I like my bread sour; so I left it ferment for 2 days. I also did an experiment and did a few where I didn't mix it in the blender with a tiny bit of water and even though they both taste equally good; the one run in the blender has a different texture and slightly different color (I guess that's due to the aeration).     HI, and thank you for the lovely recipe. For all those who say this is not authentic. They are really just being rude. My best friend is from Ethiopia and her aunt uses white flour to make it because she is allergic to teff. So for all those people who say this is not authentic, just consider how many kinds of bread there are and that even in their own country of Ethiopia, people make it with flours other than teff at times. I made this mistake years ago when I saw fried chicken being made in a way other than how I learned in the south from my parents. I then realized that just because it was made differently, didn't change the fact that it was still a form of fried chicken. I thank you so much for the recipe and hope to try to make it myself as I have always wanted to and love the flavor.

    I LOVE injera! Thanks for posting this. It isn't easy to get teff flour where I live unless I want to go to San Diego to shop, or mail order it- no thanks. I have got to try your recipe; it looks the same as that made with teff flour.
    I miss my Ethiopian friend who used to make it in a traditional pan and spread the batter with a coconut shell . . . good times.

    Thank you, great instructions! I am obsessed with Ethiopian food, it is simply amazing. Fortunately, there are Ethiopian restaurants where I live, but it would be much cheaper to make this myself :)

    Hi! Thank you for sharing this! I am from Ethiopia and looking right injera recipes,I am looking forward to try it. However,I was wondering,if blending or not blending in the blender would make difference in how it tastes? Do you blend it for smoothiness of the batter?

    Your video was very instructive. Thank you so much. I'm going to start my enjera right now! I'm using einkorn wheat, sprouted spelt flour and cornmeal - all organic, of course. My old cast iron skillet (with a touch of olive oil) should work just fine. You know, this recipe reminds me of what we call "yeasted pancakes", which are very similar, except for the fermentation period that you describe. My husband and I love fermented foods. We make our own sauerkraut and yogurt every week.

    Thank you! Teff is one of the seed/grain treats I give my chickens over and above their organic pellets and scratch, and they are such tiny seeds I bet you could add some whole to either recipe. I'm happy to learn of your alternative recipe and will try both :)

    I am not ethiopian but I love eating ethiopian food, since the corona epedemic no one making ethiopian food in lebanon is open, I am gonna make it all myself with the lentil curry and the cabnage and the carrot side dish, I don't know the names of the meal but t hey are my favorite.

    I found an American company that sells Tef (ጤፍ), the traditional grain for making injera, in flour form. It's called Bob's Red Mill.

      Bob does not have the flour but only the grain ,I have search all this time ,my next thing find and Ethiopian food store ,we African have most of our stuf2f BROUGHT here ,yet I'm west African I never but millet from Bob, no I get it from home we have it in every form .

    This short one looks like to the Somali-Djiboutian "LAHOOH" but the INJEERA IS BIGGER ,this is a nice shortened INJERA !Maa SHAA ALLAH!

    Your injera looks great. I use teff when I make mine, but I never ferment it because when I do it ALWAYS sticks to the pan and never forms any ain or bubbles. I need to give fermentation another try. I will try adding active yeast and see what happens. Thanks for the post. :)

    Do you really need the butter? I wanted to try making this but I'm vegan.

    Hi Kadi & Roxanna, I would be interested to know if injera made without teff tastes the same as injera made with 100% teff. Also, whether Ethiopians abroad now prefer injera without teff because they have not had it with teff for a long time. Any thoughts would be appreciated.
    One last question... how long can you keep injera in the fridge before it starts tasting old.

    I'm looking ofrward to doing a taste test between the two. Have you tried the packaged injera being sold out of washinton somewhere ? It looks a bit iffy to me but it might be worth a try , i think its called zalalam.

    selfrising flour is flour mixed which is already mixed with backingpowder and to buy so.
    But injera is made with only yeast,I did so.

    Note on Measuring; that using a rice cup measure; for making rice is correct for a rice machine, but not for comparison to a regular measuring cup in volume, so do not expect a regular measure cup to be the same. So if you do it this way as in the video, then do exactly as Kadi is doing her Injera recipe. I've noticed a lot of people who do this, and I suggest following the video how that person is measuring to ensure success.
