  • The rolling motion of an ocean wave is akin to flipping an egg.
    Additional Recommendations:
"Egg Whites should always be fully set, never runny,"
"Always, take into consideration residual heat and carry over cooking. The egg will continue to cook long after you've turned off the stove and plated the dish."
    On Fried Egg Doneness:
Over easy eggs (aka, over light): no browning on egg whites / runny yolk
Over medium eggs: browning egg whites / runny yolk
Over medium/well eggs: browning egg whites / jelly consistency yolk
Over hard: eggs should have browning egg whites / fully set egg yolk

I don't bother flipping eggs anymore. My hubby likes his yolks soft so he can dip his toast but wants the whites solid. I never knew this method of cooking eggs existed until I got a job working in a cafe. The cook showed me how to make what's called a BASTED egg. She put the eggs on the greased grill and then shot a little water on the grill next to them to create steam and put a lid over the eggs. I do this at home with my non-stick pan. I put a little bit of butter in a small pan, add 4 eggs, and then a little water (1 TBS. or so) and then put a lid on the pan. As the eggs cook the water creates steam and that will cook the tops of the eggs whites. It's so much easier to do than trying to flip an egg.

Cute video. A couple of observations from someone who’s been doing this for decades. Use a round bottom pan without an edge. Nonstick or stainless steel won’t really matter. Use plenty of butter, the eggs should be swimming in it. you want a little bit of air when you flip it if you just roll it at the edge of the pan your risk curling it. Correct if you go too High it splats but too low you get a folded egg. You shouldn’t need a spatula and you should never clean the pan with anything but a paper towel.

It helps to have a properly shaped pan. The one shown has a corner between the side and the bottom. A gentle curve works better. A smaller pan is better as well, because you have better control. If you use a 7” pan, the whites of two eggs will merge, and when they set they can be flipped as one.

Thanks, Gastromonk. On the subject of omelettes... personally, I prefer light and fluffy. I don't want to sound like a broken record, but I like the WH method of aerating your eggs in a mixer before going to the pan. The biggest mistake most people make at that point is adding ingredients like onions or mushrooms or whatever to the eggs in the pan and then flipping the omelette. This is more often than not a disaster. I always liked to flip the omelette then add the ingredients between the folded omelette. You end up with an omelette that looks like the picture on the menu. Of course, by definition you can't do this with a flat grill omelette. To my way of thinking, a flat omelette is just an "unscrambled" scrambled egg.

HI Skein, like my buddy would always say - "there's no wrong way to eat a Reese's peanut butter cup" meaning that in the end, you eat them the way YOU like them and that is THE best way. The flip is simply a technique designed for speed and efficiency in the kitchen. It is a repetitive motion that we chefs will do literally hundreds of times a day. Flipping an egg (i.e., vs. sautéed vegetables) demands a higher level of finess from a cook and is often used as a test. It is not bad to opt out of this technique. However, you have to be mindful of a few things 1) no brown anywhere on over easy 2) no broken yolk 3) fully set whites and raw yolk. Have a great day Skein and keep on cooking!

In over easy or soft boiled eggs the white is still a bit runny, not completely cooked. Over medium is whites cooked yellow still runny. And over hard is both white and yellow cooked completely.

my secret is to use my full size garden shovel and I always get a perfect flip because the soil on the edge of the shovel grips the egg and helps flip it
