Ya know like most of you, I watch these videos and always thinks, ye, ne, try it. (Not many ‘ne’s I assure ya). When he puts seafood to wine and that damn good house marinara that he keeps hidden back there ( cause we know that’s a signature sauce Jack, some say the house sauce either makes or breaks the establishment) so we know the sauce is it. Combine all this into a Diablo and what do you get, perfection. Who the hell wouldn’t love it, well unless one is allergic to shellfish I guess. Sorry to them folks. Cook away Cap, you’re making us want to get to New London all the quicker!
I did a few years waitering at a working folks' diner in Jersey City. Guys like Daddy Jack run eating places that local people can afford and they serve as a solid centre of the community. In my place I saw local folk come together for affordable meals when they might have been isolated in their homes. Daddy Jack and his like are total rocks of the community. More power to you, Big Guy!
I plan to visit one day on my way back from Rhode Island. Every time I pass the sign for New London I say we are going to visit Daddy Jack's the next time and it never happens...some day!

Ate at the Daily Catch about 10 years ago or so and it was amazing! We ate there because there was a line outside - small about of seating and amazing food!

Very first job was Red Lobster , worked there for many years back when they actually had line cooks. I can't begin to guess the amount of live Maine lobsters I prepared? That dish looked fantastic Jack, keep on rockin them out my man.
If you don't absolutely love this man, and his cooking, then you are dead inside. You're probably an exhausting, know-it-all miserable person, and I truly feel bad for your spouse and family. This is as good as real life, everyday, delicious cooking you will find on this "toilet" we all call social media and the internet. Jack has forgotten all the bullshit we are all trying to learn in any type of fancy cuisine. He knows it all, and he has realized how much bullshit goes in to being a michelin star whatever. @@CookingWithTheBlues Usually grilled cheese, mac, and beans and rice are her favorites, but if you ask her for something special she's been fixed on octopus. I once made it for myself, but she was brave and tried it and then kept asking for more.
We live in Houston. There's a large Asian population, and we get the octopus in a Korean market down the road. It comes frozen and I have to clean it. They even have fresh cuttlefish. I've been meaning to get that. I didn't like octopus before, but when I braised it in white wine with slightly caramelized onions and paprika for an hour, it came out with a good texture. Another thing that she mentioned was a soup with carrots in it, but I don't remember which soup of mine she was remembering. I think it was chicken noodle soup. I roasted a chicken on a bundt pan and put onion, celery, and carrot in the dish. The drippings caught there with the juices and that was the base of my soup.
The hole spout fits in the cavity of the bird. It may be unique to my pan, it’s clay and handmade. The center spout is skinny. The only disadvantage is that the bottom of the bird gets steamed. If I’m just roasting a chicken, it won’t look good. But if I want roasted breast and legs with soup, that’s what I do.

Just found your channel, that looks amazing, I love seafood but I was raised in the West Texas panhandle southern New Mexico and. Oklahoma, you say Diablo sauce in these parts you’ll be able to light cigars off your farts for a week! But that looks super flavorful and survivable lol, becoming a huge fan and if I make it that far north I’ll be in for some good food!
