Vegan Pho Chay (Vietnamese Noodle Soup) ft Cheap Lazy Vegan!

  • After months and months of you guys asking for a vegan pho recipe, I finally did it thanks to Rose from Cheap Lazy Vegan! I'm a lazy girl and Rose came and made me not be lazy (ironically) and make two epic Vietnamese recipes for you.
    Pho chay can be hard to master because traditional, authentic pho is very full bodied with flavour because people would often cook it for 8 hours with a myriad of different spices, animal bones, etc. But I like to think that we really achieved the depth of flavour in this vegan pho recipe thanks to mushroom broth powder!

    Also, the regular hoisin from that brand is vegan too. The 'vegetarian' version just omits garlic and onion, I think.

      AH! Okay I used to just get the regular one because the ingredients looked vegan, but then I was like WHY is there a vegetarian one and a regular one?! So I got too paranoid.

    as a clarification: try not to get the green cardamom guys, the one Lisa's using is BLACK cardamom, which has a completely different taste profile (but hey, use what ya got if all you have is green)

    I have made Pho before. I did it the traditional way and it did take a long time to make the broth. This kills the time and so happy i found this bcuz I love Pho and im embracing vegan cuisine more. Thank you so much

    We went to Vietnam and went to a small but beautiful restaurant which served only vegetarian pho. They called it "rao pho" and guys it was amazing !
    Also got so much love and respect from Vietnamese brothers and sisters! You guys are awesome ! Love from India.

    A great way to add even more aroma from the spices is to dry roast them and then add them to the broth. I'm thinking if you can do like a dau phu ran la lot or sth like that, I'm sure it would be awesome! As a fellow Viet I'm glad I found your channel ❤️

      Yeah, I meant the cassia bark and the black cardamom are the ones that I haven't tried before, in Pho i.e. I've used cinnamon, star anise and cloves...Teenuja
