I'm a Vietnamese currently living away from home. We love making this for the homey nostalgia. despite finding ingredients can sometimes be a bit tricky. There are a few ways to make (vegan) pho broth. This way is good. The way we commonly do in Vietnam is to roast the whole onion and whole ginger (and shallots though not necessary) on the fire. Doing so in the pan is also ok though not very common. Having pho with a tad of sriracha and a tad of black hoisin sauce (a kind specifically made for Pho) and a squeeze of lime will bring out the sensational Southern (Vietnamese) soul of the dish. And Thai basils are among the main herbs going along with this (can be substituted with mints). Thanks for featuring this amazing dish :).
I'm curious. You don't need to use coriander seeds in a vegan pho? I remember someone telling me you need to add me to the "regular" [Beef] pho.

what other kinds of herbs can you use besides mint and Thai basil?? Does parsley work too??
Hi Mila! In Vietnam, we really don't eat Pho with parsley. In the North they simply just add spring onion. In the South, we add many types of herbs: Thai basil, culantro (this one is very popular for South VN Pho), thin slices of onion, bean sprouts (we quickly rinse them through boiled water/broth) and a squeeze of lime :). Hope this help! :)

I went to Vancouver (vegan heaven ❤️ ) last summer and had the most AMAZING vegan pho at Anh + Chi. It's still one of the best pho dishes I've tasted!

My dad make a really good homemade pho, he gets these spice bags from the asian grocery store to season the broth. They are a lot like a tea bag and they add that spicy sweet flavor that is unique to pho. I would defiantly recommend them to anyone making homemade pho! The make the process simpler and add a lot of flavor to the soup ;)

I have recently been diagnosed with different stomach issues that I have had for around 12 years which, amongst other things, give me the feeling of always being hungry/never feeling full unless I really overeat, which of course has caused a very bad eating habit. Despite my love for creative healthy food (and healthy lifestyle in general) I have never been able to break this habit. Seriously, I can’t keep enough of this in my house. I made 5-6 batches of it this week (I make a double just broth). Please please consider making a cook book. I will be the first to buy it. I have a note in my phone with a bunch of your recipes I use constantly. This is the one I use most often. If I’m sick, I double the ginger

a few weeks after you posted this video I actually stumbled upon a tiny asian restaurant just across the bus station that served pho and it was pretty good. Years later, I found another restaurant that served huge amounts with incredible toppings and now I am convinced. I need to try this recipe

I think it rises without saying the work you put into your videos and website is absolutely paying off, and the positive (wise even) outlook you bring is much needed in my opinion. Nice recipes. I've got a tip for you. You can soak dried shiitake mushroom in some water and soy sauce and a tiny bit of sugar and salt. Then you strain the broth and use it to soak your fried firm tofu slices.

In Northern Vietnam where Pho is created, we don't serve Pho with basil, beansprout, or hoisin sauce. And we usually roast the whole ginger (with peel) and onion on fire. However, this recipe of yours is really great and I love the way you pronounce Phở ^^

I’m pregnant and the only thing I’ve been craving is Pho but I haven’t found a really good place that does a vegan version in my city. When I saw some of your ingredients I thought they sounded kooky for pho (Cinnamon/hoisin/clove/star anise) but this turned out exactly like the versions that I crave. It was so easy to make and so delicious. I will definitely be making this all the time. The only thing I would personally change is that I would use vermicelli noodles. Thanks so much for the recipe.

JUST: you don't use basil in pho, you use thai basil..and sorry, but meat boullion and fish sauce cannot be replaced :(
