How To Make Vegetarian Ramen (Recipe) {Vegan Adaptable} ベジタリアンラーメンの作り方(レシピ)

  • {Vegan Adaptable} Spicy and rich Vegetarian Ramen recipe made with soy milk and vegetarian dashi. This ramen broth is super rich and milky, and it just might trick you thinking it's Tonkotsu broth!

    Yield: Serve 1 (If you want to make more than one serving, simply multiply the quantities of ingredients by the number of servings you wish to make.)
    Ingredients:
    For Vegetarian Dashi
    ¾ cup water
    1 1”x2” (2.5 x 5 cm) kombu
    1 dried shiitake mushroom
    For Soup
    1 Tbsp. sesame seeds
    2 cloves garlic
    ½" ginger
    Scallion (white part)
    2 tsp. sesame oil
    2 tsp. chili bean paste
    2 tsp. miso
    1 Tbsp. sake
    2 tsp. soy sauce
    1 cup unsweetened soy milk
    ½ cup dashi
    ½ tsp. Kosher salt
    Dash of white pepper
    For Ramen
    1 serving ramen noodles
    For Ramen Toppings
    ½ Ramen egg (RECIPE: check my video) (omit for Vegan)
    Spicy Bean Sprout Salad (RECIPE: check my video)
    Homemade vegetarian kimchi

    I made this. My dad ate 2 bowls. My Dad. A meat-eater through and through with the slogan of "come mas carne de cerdo" (eat more pork meat). Damn, thank you. I enjoyed this very much!!!

      Why did you use soy milk? Regular milk is allowed for vegetarians. It`s only vegans who doesn`t use milk or dairy products. I am a vegetarian who gets quite frustrated by all these youtube vegetarian cooking videos who aren`t making vegetarian meals, but vegan meals. I am not a vegan, and i would love to see videos where dairy products like milk and cheese where being used. It`s nice that you added an egg, cause that`s more vegetarian than vegan. Vegan`s doesn`t eat eggs.

      ***** I am frustrated because i love milk and milk products, and i`d like to see vegetarian dishes where dairy products are included. I for myself could not live without a glass of cow milk and a boiled egg for breakfast. And i love ice cream and scrambled eggs. I just don`t eat meat, or fish because i feel for the animals. but you don`t have to kill a chicken to get an egg or a cow to get some milk.

      If you really think a cow and a chicken aren't hurt in the process of getting eggs and dairy, you must be very naive! Watch a documentary before you say something stupid like that. And also, she used eggs so it's not even a vegan recipe. Can't get over how narrow-minded some vegetarians, for that matter, are.

    Tried this recipe. It was amazing! I've been looking for vegetarian ramen recipes and they all suck except this one. I used different toppings but the broth turned out soooo good that I wouldn't have been able to tell that it wasn't even real tonkotsu broth. Thanks for this!

    This turned out amazing, better than the stuff I got from a restaurant. I was a bit worred b/c i made a ton of subsitutes for things I didn't have on hand (subbed dashi for Vietnamese mushroom broth, the sake for chinese cooking wine, and the ground up seasome seeds for tahini) and it still came out well. such a great vegan recipe! thank you so much.

      How was it when you replaced it for tahini? I don't want to ground up my own sesame sauce, and have a lot of tahini at home. Did it taste good?

      Andraws Putros it did~! I would start with small amount, as you cannot undue the peanutty flavor if you add too much and have a limited liquid measurements. Mine came out great, thank you Nala D~!

    I made this just a little modified, I used aka (Red) miso which I HIGHLY reccomend and added a little white onion, rawits, mirin and sesame seeds to the miso paste, I also used way more than in the Video, but I also made more in general. I let the kombu dashi soak for about 2 hours so it's more intense and added more dashi to it than in the Video. I did everything else about the same. I made it nice and spicy and me and my bro loved it!

      Ramen is food but chopsticks are its emotion. together, they are perfect. I always wanted to eat with chopsticks from childhood. I even told mom I'll travel to China (neighbouring country) to eat with chopsticks lol

    Just made this! I’m 11 years old, my family and I aren’t vegan but I really wanted a rich ramen but I didn’t want to boil pork bones since we didn’t have time it was already dinner time, I’ve tried the boiling bone method, it was really good ( I used chicken) but this was the best like it was wayyyy better than the one I made with the actual bones.     Just made this for my dinner and it is so delicious. Creamy with a little kick. I topped mine with your spicy bean sprouts, some braised daikon and the shitake from the dashi stock. So filling and satisfying. Thanks so much for this recipe. I'll be making it again and again.

    People who are saying this is a bit much to prepare: Replacing dashi with ready made powdered/granulated/liquid concentrate kombu dashi saves a lot of time :) I also use shiitake mushroom sauce to replace the shiitake broth when I'm lazy, which is often sold as vegetarian oyster sauce at asian food sections. The thing about this though is that your soup gets quite salty before it gets plenty of umami flavour so it is always worth doing the extra work to brew your own dashi broth ^_^

    Hey, JOC! I've been craving for some good ramen and made this today. Was a little skeptical on how good it would be, but it is absolutely delicious. Even without the dashi, it's lovely, and the dashi gave it more depth. I left out the kombu as my partner doesn't like seaweed-tasting stuff (used way more mushrooms instead), and used Chinese wine (hua tiao) in place of sake. This will now be my go-to recipe for ramen. I have vegetarian friends who I can't wait to tell them about this. Thanks so much.

    I (involuntarily) went vegetarian before I had a chance to sample some real ramen. Been looking for a vegetarian substitute that falls within range of "good enough" and this looks to be it! Awesome, thank you! Would there be any way to use fresh shiitake, or would I have to dry them myself? I can only find fresh in my local supermarkets.

      I am so sorry for my late response. Dried shiitake (usually you can find in Asian grocery stores, like Chinese and Korean, besides Japanese supermarkets) has MUCH MORE flavor than raw shiitake. So, for the sake of good broth, I recommend dried shiitake in this recipe. Raw is okay but it doesn't contain much flavor.

      Sagarika Choudhary It's a paste made from broadbeans and chilies that are fermented together for a long time and creates a spicy and umami-laden base for many dishes. It is called doubanjiang and is an ingredient originally from China that has become really popular in Japanese cuisine.

      Just skip it. 1 table spoon of sake isn't gonna be a huge difference anyway. Also it doesn't specify what kind of sake is used so there's really no room for suggestions.

      Bean sprouts and green onions are some of my favorites. Kimchi is not vegetarian because it uses fish sauce! Beware!

      Some other suggestions: cucumber, broccoli, bok choy, cabbage, lettuce, tomato, cauliflower, carrot, pepper.

      Rahul Singhal Divine raw sauerkraut though not traditional is a tasty vegan substitute for kimchi if you get the spicy kind! Also fried garlic or onion, bean sprouts, and sliced pequillo peppers are all good on ramen

      Rahul Singhal I would get organic tofu and slice it length wise about half inch thick then roast it with soy sauce, ginger sweeter and rice vinegar until nicely brown and chewy. That would be a very yummy toping.

      If you can, you can also find some vegetarian and vegan kimchi! Personally I don't like fish sauce because of the smell, so I learnt to make my own kimchi. And since it lasts pretty much forever, you can call it "readily available" once it's done.

      Hi Kash! In the U.S., when we say "vegetarian", eggs are included. Most vegetarians here eat eggs, but vegans don't eat eggs. en.wikipedia.org/wiki/Vegetarianism So FYI, if you look up for recipes shared on American websites, eggs are considered vegetarian. :)

    Reminds me of the ramen from the anime Food wars. The difference was he added grated taro root to the soup base to add body to it. I also might have strained the soup before adding it to the bowl so there is not pieces of chilies floating around. But looks really good.

    We did this recipe tonight (with real dashi so not vegetarian) and it is really good!! It is quick and easy to make and has much more complex flavors than I expected. We threw some kimchi and a couple of soft boiled eggs on top for the hell of it.

    This is my DREAM ramen. It's almost identical to the one I get in Seattle at Kizuki Ramen. I live in Texas currently and the Asian food is not authentic. I made this recipe and now I feel like I'm back in Seattle with the most amazing food.
