Ingredients
- 2 servings of ramen noodles of choice
- 6 stalks green onions, chopped white and green part separated
- 1½ tablespoons grated ginger
- 1 tablespoon finely minced garlic
- 2 tablespoons toasted sesame seeds
- 2 tablespoons white miso paste
- 1 tablespoon hot bean sauce/paste
- 4½ cups Kombu Dashi
- 1 cup of unsweetened plant-based milk used oat milk
- a drizzle of toasted sesame oil
- oil for cooking
Kombu (Dried Kelp) Dashi
- 1 oz Kombu dried kelp
- 10 dried shiitake mushrooms
- 4-5 cups of water
Toppings
- 7 oz [200g] firm tofu pressed
- 1 tablespoon cornstarch
- mushrooms from Kombu Dashi sliced
- ½ tablespoon soy sauce
- salt to taste
Garnishes
- Japanese 7 spice blend Shichimi Togarashi
- Toasted sesame seeds
- Green parts of green onions

One question though: I see a lot of recipes where they say NOT to boil the dashi, because it would loose a lot of umami. But then a lot of them actually DO simmer/boil the dashi afterwards for a while once the soy mild was added. I wonder why it's okay later. Do you have any idea?
Yay, thanks so much and I'm really happy you liked it. I am not so sure about that reason but for me, it's because the kelp will turn slimy if I leave it in the stock and keep boiling. Let me know if you need anything else. Thanks again!

I have a weird question - how mushroomy did your dashi taste? I really don't like the taste of mushrooms but my friend tells me that kombu-shiitake dashi is basically just an umami bomb without much of the mushroom flavor.
it has mushrooms flavor for sure but once you put everything together you can't even taste the mushroom by itself. More like a combination of flavors. :-)
Can I use korean soybean paste instead? I couldn't find miso anywhere
Hi there, that's a great question. I tried it once too and it worked and since my Korean soybean paste has larger chunks, so try to mash it up before adding in. If you want a smoother broth, you can strain out the broth once it's done. Hope that helps. :-)

Hiii how long do you leave the mushrooms and kombu in the water?
Does tofu even taste good like that? Without any seasoning?
You can definitely season it with salt or soy sauce before and after frying if you prefer. Let me know if you have any other questions. :-)

Was too spicy for me and needed a lil bit more flavor. I mixed some sugar, rise vinegar and sesame oil on my bowl before pouring the broth and it was way better. Loved it, only too spicy 🔥🥵

While frying, I like to season my tofu with a drizzle of soysauce, garlic and onion powder, paprika, and extra virgin olive oil.

@robc Plant milk means any non dairy milk, such as oat milk or soy milk. Use non sweetened plant milk for this recipe.

I'm not vegan but I'm Pescatarians so eat a lot of vegan dishes and I just was curious and looked this up since I have some extra miso I want to make ramen with but the amount of miso ramen recipes with meat in it has me perplexed the whole point of miso is the clear broth it's not a meaty soup I think tofu not pork on top

It's really difficult to find kombu from where I live. Is it okay to just use shiitake dashi? I have another question on the miso paste. I have always added the miso paste in the end after turning off the heat. Will adding the miso paste early kill off the probiotics from the miso paste?

Could I use regular seaweed to make kombu dashi?
Hey there, good question. I have actually used regular seaweed before when I'm in a hurry. If you are using regular seaweed, you don't need to sieve it as regular seaweed is edible right after it's cook. Simply tear a few pieces off but just a note that the broth may look a bit more messy from the seaweed bits. :-) Hope that helps and happy cooking!

I went on a big shopping trip to my local Asian grocery so I could make this last night and all I can say is oh my GOD. When I tasted the soup while it was simmering I gasped so loud I shocked my partner in the other room. It was beyond delicious! I ate over a portion myself and fell asleep immediately afterwards.
