I made a version of ramen based on this recipe and after a couple of attempts based on recipes by other cooks, this recipe made me finally happy with my vegetarian ramen! Will continue fine-tuning based on this.

Is there an alternative for kombu I could use? In germany the selling of Kombu as an edible is prohibited, therefor its quite hard to get :( Can I use Nori leaves as an exchange or does the taste vary too much?
There's no problem to buy Kombu in Germany. You will find it in every well sorted Asia food Store (watch out for "Wel-Pac Dashi Kombu") or just order it online.
Egg is non-veg 😊 and kimchi also contains shrimp paste and fish sauce…. So skip that if you’re vegetarian like me….. But the recipe is so good It looks delicious through screen ❤❤❤

This looks really good. My store doesn't seel bok choy unfortunately so I'll have to omit that, but when I was vegan I was upset that most packet ramen (even the soy sauce kind) always has chicken broth in it. I'm not vegan anymore, but this certainly looks like something I would eat.
If you can't find it at the grocery store, you can always try an asian market if they have one near you. I love bok choy! But if I don't have any I just toss in some spinach👍
I’m with you! You don’t have to be vegetarian to enjoy this ramen, actually! I eat meat too, but there are so many (naturally or creative) vegetarian dishes that are delicious without meat or seafood in it. 🤗 I’m happy that I can share this recipe with vegetarian people. 💗

Nori is not the same as Kombu, so use more dried shiitake mushrooms instead. I hope this works for you!
