Lisa, I'm crying! This vegan lemongrass beef looks so incredible. I love how you explain all the things and that you have your own unique style. Gonna get some proper Vietnamese rolls ASAP and make this! And thank you for making my stuff look so good too
Mary's Test Kitchen // Vegan Cooking Those clips of your food at the beginning make me want to check out your channel now. My terrible excuse for not having checked it out yet is cause I'm already subscribed to so many vegan channels. Lol...
This is by far the most helpful seitan video I've ever seen, I've had a bag of vital wheat gluten sitting in my pantry for ages that I'm now inspired to use!
I followed the recipe for the seitan and added some Chinese five spice to the ziploc bag when I put it into the fridge overnight, then used it to make Chow Mein. My whole family loved it, my husband who is an omnivore said it was as good as when I used to make it with pork. Thank you so much for this recipe.
I have been waiting for a recipe like this! I spent a month in Vietnam a few years ago and stuffed my face with everything in sight, but have been missing so much since I went vegan. Love both you and Mary!
Gurl i dunno how you have 30k! I mean, that's already impressive but with the quality of your videos, your awesome recipes and you being so nice and entertaining you should have like a million! So glad I discovered your channel through Rose's channel 💕
This seitan is the best I have ever had. It's so easy to make and delicious. And buying the mushroom broth powder changed my life, it is such a great item to have in the pantry.
Honestly, I found your RUclips channel when I was looking for vegan "chicken" noodle soup recipe. I just recently turned vegan and I am glad I found you.
Just subscribed to your channel. Came over here from Mary's Test Kitchen (which I absolutely love!!). Enjoyed your video and I am now watching others. Thanks
These were phenomenal! I followed your recipe with only minor substitutions, including the pickles (I added a splash of black vinegar to the brine). I made a cashew spread to go with it. I can't get banh mi bread where I live, so I made that too. Thanks for the excellent post. Next on my list is Mary's char siu bao :)
This recipe did not disappoint! I have never made my seitan that way before, and it ended up so good! Plus, I was able to make a whole tray of broth from left over, so I can use it again :D Thanks so much for sharing this!!! Super tasty!
I am utterly fascinated with wheat gluten. Unfortunately, I am also gluten intolerant LOL so I live vicariously through these recipe videos lol. Sometimes people make "wheat meat" and it just looks like bread bits, but this looks legit.
Rebelwheels NYC you either have celiac disease or you don't. There's no such thing as an intolerance a sensitivity or an allergy when it comes to gluten. If you don't have celiac disease and it really does do something to your body to eat gluten then please seek out a gastroenterologist. :-) Elizabeth MD PhD nutrition science
My husband has celiac's, so I've really struggled with ways to make gluten free "fake meat", so he can enjoy these delicious recipes, too, and one of the best things I've found is a recipe Happy Herbivore has on her blog for gluten free seitan chicken. I've made it several times, now, with different seasonings, and it turns out beautifully! Here's a link to the recipe, which is delicious, in and of itself, too! happyherbivore.com/2014/03/gluten-free-seitan-recipe/ I'm sure, with Lisa's seasonings, it'll be just as yummy as the wheat meat version ;)
Thank you! I made a very inexact version of this today. It made a delicious sandwich! Replaced the lemongrass with lime leaf. 🤷♀️I have what I have in my pantry.
😍 love itttt. I live in Hawaii & there are no yummy Viet vegan restaurants here like there are in SoCal. Thank you for teaching us how to make Vietnamese food vegan!!
This recipe is really unique! Thank you for de-mystifying prepping fresh lemongrass -- I never bought it because I didn't know what to do except use chunks to flavor broth. I'm so happy! (I'm gonna pop some fresh cilantro and basil in those sammies!) Cheers!
Gaz from Avant Garde Vegan has like this same exact beef seitan recipe. If both of you are telling me the same thing, it must be the best recipe. Thank You!!!
+Stevie Sosa really?! I love his videos but TBH I can never navigate his website to find recipes easily lol. He knows his shit so I’m hoping my seitan would be as good as his!
I made Seitan for the first time on Friday. I wasn't really impressed by the recipe I used, but I was a little surprised that it was fairly easy. I will have to give this recipe a try. It looks amazing!
I tried the Ban Mi sandwiches a couple time at Loving Hut Tempe Arizona, they tasted delicious! Plus I bought some the vegan jerky there and taste excellent too.😋👌
The best video I've seen on making Seitan....woot! I can only buy lemongrass in tiny packages that are not Top Quality (sometimes the tiny stalks are mushy or moldy on the underside)...I have powdered lemongrass and can usually figure the proportions for recipes. I really love this video, and learned a hella lot!
+Judith Loue glad its helpful!!! Yeah I’ve seen those herb packages and avoid them if I can haha. Check the frozen section of your closest Asian/indian grocer because you’ll probably be able to find the frozen chopped/shredded lemongrass easier than the fresh stuff
Omg this recipe looks amazing and reminded me of a classic reuben sandwich. Have you ever done a video on a home made vegan Reuben? I would loooooooove to see that!
I'm glad I found your chanel! I'm half Cambodian... And was dreaming of eating again my dad's cooking.. but m vegetarian... Difficult to make Asian food without meat! Is there not in the Banh mi grated pickled carrots?
If you do the seitan right, this is one of the best beefy seitan recipes ever! Love it so much Lisa, my family and Vietnamese boyfriend fully approve 👍 thank you for all these Vietnamese recipes that I can use to replace my boyfriends favourite non vegan Vietnamese staples with 💚💚💚
This video was super informative! I didn’t realize the baguette used for banh mi was different from a French baguette. I’m gonna have to go look for some! 🤔
Omg this is such a game changer! I'm not vegan, but I don't eat pork anymore and most other meats gross me out! The last time I had banh mi was 1.5 years ago, and I know this because my favorite banh mi shop is right across my work and I stare longingly at it all the time. Will definitely be giving this recipe a try!
"The Ordeal of Seitan" sounds like a book title, speaking of ; ) This recipe is so tantalizing and you explain what you're attempting to achieve so thoroughly, that it's a must try; luckily, we are going back to daytime temps like July next week hereabouts, so these sammies will go down perfectly. TFP!
I love you and Mary! :-) I have seen many many people make seitan and cook it the moment they are done mixing it! It needs some time for the flavor to get into every granule. I bought mushroom broth powder!! I am sick today and this past week with a sinus infection so my caregiver and I made a great big pot of soup and used the mushroom powder broth and it is Umami Central! Love love love it. :-)
I think marmite tastes a little funky but also beefy. It is wonderful on a toasted English muffin with a little bit of vegan butter and a very very thin small amount of marmite.
pro tip: make yo own mushroom powder by blending/grinding dried shiitake mushrooms! and for those who are gluten intolerant, check out Korenn Rachelle's gluten-free mock meat section in her mock meat video.
I don't have like a plain, fish sauce recipe, but I have a veganized nuoc mam here: thevietvegan.com/nuoc-cham-chay-vietnamese-vegetarian-dipping-sauce/
what, no cilantro or chili peppers? kidding, i tried this recipe, but put cilantro and sliced jalapeno's in the sandwiches it was a perfect replacement for the meaty bahn mi's i miss so much since going vegan!
I've been wanting to make seitan again for a long long time but the last recipe I used wasn't that good? So I just did the dough and set up my broth!! I'm excited how it will turn out!
So!! I used the seitan (not for banh mi bc it's difficult to get lemongrass in germany) and it was probably the best seitan i've ever made!! this will definitely be my go to recipe from now on!!
OH MY! I LOVE this recipe! Can the seitan be frozen? Would love to make multiple batches since the broth is ready and freeze the seitan for later. Also, I did freeze my leftover broth and used it in a variety of recipes that called for broth. It is the BEST BROTH I've had to date!!! Thank you!
I'm really looking forward to trying this on a day off. After 10 trips to Vietnam... next time I want to see some vegan Bahn Mi in Vietnam. Maybe I'll buy a food cart and try selling these in Saigon. lol But yeah they would definitely sell in NYC where I live right now.
Whenever I make seitan I always wrap it tightly in foil so that it doesn't become misshapen in the liquid. Just make sure that you don't boil it that it's a gentle simmer. Now you just said that so people are going to slap me because I told you to do something you already said you were going to do! Talk shit huh? LOL Lisa I have been making seitan for about close to 20 years and that seitan looks absolutely gorgeous! I must make it comma, comma, soon. Have a great day! :-)
thank you for your reply. always looking for recipes to have the meaty taste and texture...still love meat, but I am trying to find reasonable replacements. thanks again. I've been trying to get a really good beef taste and chicken taste without that strange gluten undertaste, if you know what I mean.
I've gotten really great reviews on this recipe and I did my best to make it taste beefy, so I hope you give it a try :) Still working on a "chicken" flavoured seitan
I'm so missing gluten. :( "We're about to eat, okay?" I just love watching you, darlin'. Hmmm, wondering if this would taste good using king mushrooms....
I love lemongrass, question. You said that pulverized lemongrass is good for a year. Can you store it in your pantry or does it need to be refrigerated? If you can store it in the pantry, can you do so as is, or do you have to dry it out first? Like in a dehydrator... .......................................................... Another question, you mentioned lemongrass tofu. It's one of my favorite dishes at Saigon Bay. Viet restaurant where I live. Do you know if that dish is like accidentally vegan? I never really looked into it.
Sorry I must have forgotten to mention it, I store it in the freezer and I usually use it up within the year. The only thing that would make it not vegan is fish sauce, so double check with the restaurant to see if they use it, if not you're probably in the clear!
The Viet Vegan Awesome, freezer is easy enough. And I figured fish sauce might be an ingredient. I doubt I could ask for no fish sauce... Anyway, thanks for responding.
The Viet Vegan Soy Sauce, good point. I meant I doubt I could ask, meaning the dish is premade. But thinking about it, it's made fresh to order. Pho is probably what would be premade in the restaurant. At least the broth. Besides soy sauce what's a good vegan replacement for fish sauce. Considering the funky, pungent flavor? Soy sauce just isn't the same. Closest thing I found was the brine from fermented tofu...
A lot of soy sauces tend to vary in flavour because the ratio/fermenting process of wheat to soy can vary, so I like using tamari in because 1. I can buy it in bulk in glass bottles, and 2. The flavour is more consistent.
Hey Sister-Girlfriend! If you ever get to PHX, AZ my local Loving Hut is owned by a Vietfam. Let me know if you are here and we will do a Mukbang, they make great Vietnamese food. Their Pate Chaud, omfg!
I don't personally know any Asians who are vegan, so having both you and Mary as my vegan role models has been super inspiring to me. Thanks so much!
+avocadoalice that’s so nice of you to say! So glad we have fellow Asian vegans to relate to :)
Lisa, I'm crying! This vegan lemongrass beef looks so incredible. I love how you explain all the things and that you have your own unique style. Gonna get some proper Vietnamese rolls ASAP and make this!

Just a few months ago she was barely at 10K. I get so happy when my fave Tubers finally get the recognition they deserve! :)
Super easy seitan recipe! Its the first time I've been inspired enough/ brave to test a recipe! Thanks
This seitan is the best I have ever had. It's so easy to make and delicious. And buying the mushroom broth powder changed my life, it is such a great item to have in the pantry.

Thank you! It's an old nars one I had from a sephora bday thing like years ago, trying to use it up since Nars is no longer CF =(
The Viet Vegan oh really thanks for the update
I am utterly fascinated with wheat gluten. Unfortunately, I am also gluten intolerant LOL so I live vicariously through these recipe videos lol. Sometimes people make "wheat meat" and it just looks like bread bits, but this looks legit.
+Rebelwheels NYC noooo! You can use tofu instead so you can still experience the lemongrass goodness 🙏🏼
+Rebelwheels NYC and I will always chuckle at Hail Seitan 😈😂
Someone should print Heil Seitan on a shirt! Or could someone point me the way to buy one if it's already a thing xD

Thanks for the lemongrass tutorial!! I've tried using fresh before and it did not go well
Yum!!! I have to try to find some lemongrass, I love it but have never cooked with it. Now I know what to try 1st!!

RIP. You might be able to find dehydrated lemongrass, or lemongrass powder?
I have lemongrass powder on hand...it takes a while to figure proportions from "fresh to powder" but it works just fine, for me...thanks for the reply
Omg this recipe looks amazing and reminded me of a classic reuben sandwich. Have you ever done a video on a home made vegan Reuben? I would loooooooove to see that!

A fun video. It looks really delicious. Conroy (The Gentle Chef) is a genius. I have three of his cookbooks.
Me too! I've only used the Seitan one but I have the other ones somewhere in a box XD
Well, that's it! Now I have to learn to make good seitan!
+lilly bunny do itttt its so much cheaper its absurd

YAAAY!! I'm so so glad :D
Great video Lisa! I need to try this, you're the best!
+fountainhead 🤗🤗🤗
Rewatching this and man is it making me hungry. 🤤
Hahaha sorry not sorry!
The Viet Vegan me either! Lol
I can't wait to try this! That seitan looks amazing. I also have a banh mi recipe on my channel. Maybe I'll use your seitan next time I make mine.

Definitely freezeable!
I want to see Lisa and Mary have a Mukbang and Food Chat series! There, your playlist title. :)
4:16 that zoom. This is why you're my fav 😂😂 This recipe looks like the best seitan everrrr omg drooling. And your makeup looks amazing, btw! 💜😍
Thank you! Yeah I don't know what I was thinking when I was like flinging it around and it looked so goofy so I zoomed in on it XD
Awesome video thanks
Add some vegan pate and fresh coriander also. Maybe a little bit of hot sauce and/or more ground black pepper on top. :)
OMG I WANT THIS SO BAD. Right now!! I see you have an extra sandwich there...
+Kate Emma hahah whenever you’re here you know I’ll always whip up something delicious for you 🤗
The Viet Vegan 🙏🙌 I'm in the process of renewing my passport, can't WAIT!!
This looks incredible!!
Oooh these look divine
btw, I really like your what I eat in a week. please do it more often ☺️
+Patricia Masilang haha i’ll try to do another one this week so I can include Canadian thanksgiving :)
I love your vids, you act so silly in your vids! That thing about far and vegan cooking was REALLY important, thanks!
Yeah! Baking it does sort of set that shape without having to use foil or parchment paper, so i kind of like it this way for that reason.
I know what I'm eating tonight!
OMG I LOVE lemongrass
my mouth is watering
thank you for your reply. always looking for recipes to have the meaty taste and texture...still love meat, but I am trying to find reasonable replacements. thanks again. I've been trying to get a really good beef taste and chicken taste without that strange gluten undertaste, if you know what I mean.
I've gotten really great reviews on this recipe and I did my best to make it taste beefy, so I hope you give it a try :) Still working on a "chicken" flavoured seitan
thank you sweet lady, will do....i'll let you know how it turns out, looks great....
This looks like a really delicious indulgent cheat meal. If only seitan was good for you... I miss banh mi so much
oh heck i think i just found a new fave channel
HOLLAAAAA
interesting dish
I'm so missing gluten. :( "We're about to eat, okay?" I just love watching you, darlin'. Hmmm, wondering if this would taste good using king mushrooms....
Yes! They might be a little difficult to eat, but if you can eat soy, lemongrass tofu in this banh mi is BOMB. :)
Looks great! I'm subscribing ;)
Do you have to bake it? Or can you fry it also
Hi Lisa. How do you prepare your garlic cubes? Do you add water to the ice tray and add the minced cloves?
No water! Just minced garlic :)
When you pulled out that frozen minced garlic I was like...I need my meal prep game to be that strong.
+GlowySweetFabulous hahah i bought a giant bag of peeled garlic and then just processed them one day. Saves so much time!!
Would you please list the measurements for ingredients? I couldn’t be mistaken for not finding them anywhere in the video.
Thanks.
My recipe is linked in the description
I wish there was a vegan pate! I love banh mi 😝☺️
I need to make this 😍😋
Damn, that looks so good! I really love the Vietnamese style baguette, so much better than the French ones!
+Sarah Watson i have a special place in my stomach for both haha, but the banh mi baguettes are yummier for sandwiches 🙏🏼
Oh my, it's like totally
?
A happy simmer? I'm using that whenever describing boiling water to people.
It's not boiling! Just a gentle, happy simmer :)
my childhood veganized!!
Oh my god! That's lip looks STUNNING on you!!
When will you be visiting Vietnam?
Hopefully in the next couple of years! The last time I went was 2009 :(
I love lemongrass, question.
The Viet Vegan
Awesome, freezer is easy enough.
And I figured fish sauce might be an ingredient. I doubt I could ask for no fish sauce...
Anyway, thanks for responding.
You could ask! Tell them to substitute soy sauce :D
The Viet Vegan
Soy Sauce, good point.
The Viet Vegan
Chao Cheese?
I like kimchi, I could use that if kimchi becomes a staple for me. I'm assuming white kimchi is mild? :D
Currently trying this recipie but there is one question: what can i do with the remaining broth? I don't want to just thow it away.
+ViRuSTriNiTy i strain it and save it for later to make gravy :) it freezes well
Awesome, thanks.
Slowly getting sold on making seitan .
Lemongrass 💗💗💗
Yummmmm
I see it in so many vegan videos. What's with all the tamari? For gf it makes sense but in a seitan recipe? I don't understand
A lot of soy sauces tend to vary in flavour because the ratio/fermenting process of wheat to soy can vary, so I like using tamari in because 1. I can buy it in bulk in glass bottles, and 2. The flavour is more consistent.
Can I use super firm tofu? I do not like seitan
Yep!
Can I make this gluten free. I have a place that sells bulk gluten free baking flour.
Unfortunately the key ingredient in seitan is gluten. You could use lemongrass tofu instead :)
WHAT WAS IT THAT YOU ADDED WHILST TALKING ABOUT THE MUSHROOM GRANULES?
If you give me a time stamp I can be more precise, but all of my ingredients are listed in my recipe blog post linked in the description :)
I have made seitan 3 or 4 times and it always seems to end up just short of something worth eating.
Hey Sister-Girlfriend! If you ever get to PHX, AZ my local Loving Hut is owned by a Vietfam. Let me know if you are here and we will do a Mukbang, they make great Vietnamese food. Their Pate Chaud, omfg!
This looks amazing AND your lipstick is killer.
now we just need a vegan pate spread to do other bahn mi's? maybe using walnuts and dried mushrooms
+fUP420babe ya Kale Sandwich Show has a recipe for pate! Im allergic to walnuts now so i gotta find an alternative lol
