I used 11x17 sheet pan
GREEN CHICKEN ENCHILADAS
1 1/2 lbs cooked shredded chicken (seasoned to your taste)
16 corn tortillas
2 Tbsp cooking oil (for softening corn tortillas)
16 oz green salsa
15 oz Mexican table cream
8 to 12 oz low moisture mozzarella
Tex-Mex Ground Beef ENCHILADAS
1 1/2 lbs lean ground beef
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
pepper to taste
16 corn tortillas
2 Tbsp cooking oil (for softening corn tortillas)
12 oz Colby Jack or cheddar cheese
ENCHILADA RED SAUCE INGREDIENTS
3 to 4 Tbsp oil
1/4 cup all-purpose flour
2 to 3 Tbsp light chili powder
1 Tbsp beef or chicken bouillon
1/2 tsp onion powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
2 cups water

When my kids were younger I used to make on a sheet pan,tortilla chips seasoned cooked ground beef,beans,cheese,lettuce ,tomatoes,sour cream,black olives,avocado,salsa so good-so easy and fun to eat too-I love sheet pan dinners and would love to see more of your favorite recipes

This is such a low maintenance meal. I cook a bunch of chicken and shred it, then vacuum seal 2 cup portions and freeze it. This is going on my rotation.
