Great recipe! I am a type 2 diabetic so, when I make my own sauce, I substitute Carbquik for the flour. I also use low carb flour tortillas . The resulting enchiladas taste great and they don't cause a large spike in my blood sugar. A few weeks ago, I was given two pounds of ground lamb at the food bank and I used it to make enchiladas. They turned out great. Thanks for the recipe and for all of the enjoyable videos.

That way, the food police are extremely unlikely to catch me committing this cardinal sin. What can I say? I am a food criminal. I cook what I want in the way that I want with total disregard for any and all food statutes. I live a life on the edge and I love it. I'm an adrenaline junkie.
I love making enchilada sauce this way! It comes together really quick. My great grandma would make her quick red chile this way; she'd fry the pork, making the roux with the rendered fat, and then season it up similarly to how this was! We ate it with beans, tortillas, and/or rice.

I also learned an easy way to prep tortillas for enchiladas from ATC, you just brush each one with oil, stack them up then wrap them in a clean kitchen towel and microwave for a minute. Works really well if I'm rushed for time :)

These turned out great. I actually started out by making your recipe for "Creamy Chipotle Enchiladas" but I accidentally made too many enchiladas with too little sauce. I figured I might as well try out this sauce recipe as well, and I'm glad I did. Easy and delicious. I screwed up and forgot to halve my spices, but I think things worked out for the best as the flavor was excellent.

I made enchiladas tonight as well ground beef cheese and onion and a separate dish with cheese and onion I use a big can of chili con carne Tex Mex style the very first time I made these I was 15 and my dad my God rest his soul he fell in love with them he even said these were better than my mom's. 😳 Well ever since that was said I was the cook when it came down to enchiladas lol. He has been gone since 1997 and I miss him so much. I just wished he would have been here when I learned to make menudo he would be in love with that too. Good bless you and your family.

I love this recipe. I never have enchilada sauce in my pantry, but I do have pretty much all of the spices that you used for this recipe. It looks so delicious. I cannot wait to dry it.
I made red sauce, some spicy. I canned it right out of the blender. In pint jars. But when I open a jar. I sauté garlic and onion, in lard, oil, whatever I have. Then pour in the canned red sauce. I fry the red sauce to a nice thickness, I season it according to my taste and make my enchiladas. This way the red sauce base is all made. I used my own peppers to make the sauce since I didn’t have chili powder. I roasted them, after seeding them, soaked in boiling water, put in blender with onion, garlic some salt . Blended. Pretty much how you showed us before. This turned out so well, I’ll make this up again. I also made up Cajun spice sauce. Ty for your great recipes

This casserole style with ground beef is how we make enchiladas in my family. And then later i worked in chicken and ground turkey from time to time but beef is always my fav. My dad came from New Mexico so the dishes on your channel esp enchiladas!!! are part of my heritage. Crazy because im so white i need sunscreen to go to the mailbox. I have also made my sauce with half broth and half milk which comes out like a spiced country gravy. I cook a jalapeno in the pan with the meat and pull it out before filling the tortillas. Or the one you figured out and perfected over time. Are you familiar with el monterrey company near portales new mexico? It is a small family company and they have powdered enchilada sauce. I grew up in iowa and my grandma from portales would send us a case of it every year. When i didnt have access to it i came pretty close to the end result without it. My brother still orders it online for his recipe.

As a new subscriber, I have been sort of binge watching your videos and I have found some variations in the ways you prepare some of your recipes. The variations are very well received because they give the impression that there are many ways to arrive at the same end result. I like that ! 😃 For example, in this recipe, you suggest heating the enchiladas for 30 minutes at 400 degrees covered with foil, and you explain why. In another enchilada recipe, you suggest heating for 20 minutes at 350 degrees while covered and then for 10 minutes uncovered, and you explain why ! It's all good !! Your Carne Guisada recipe will be a game changer for me. In a perfect world, I will become more adept at Burrittos, Huevos Rancheros, etc., and even Fajitas and Nachos ! Thank You !

Thanks I needed a refresher it’s been so long since I made enchiladas but hubby asked me to make some beef enchiladas so that’s what I am doing today, I like to add green onions and drained diced tomatos with green chili along with cheese on top, it gives it a beautiful look and added taste thanks for your time in making this vid

Yes yes yes I have been looking for this enchilada sauce forever. I never made enchiladas before. I can't wait to try it. I'm going to get back on low carb/ keto so I'm going to try to use xantham gum or Carb quick because I will put this enchilada sauce on everything , thank you
