My 5 Star ENCHILADA SAUCE // You’ll Never Want Another One ❤️

  • This is my 5 STAR ENCHILADA SAUCE, I gave it that name because it’s that good. I came up with this recipe years ago by just adding and subtracting ingredients until it was just perfect. You can use it to make Chicken, Beef, or plain cheese enchiladas and it’s also perfect on Burrito’s, Chimichangas, Tacos , Quesadillas, eggs etc… it is so good that’s you’ll never need another recipe and you will never want store bought again. This is an easy recipe that can be made ahead and it can be be doubled too. I hope you give it a try. ❤️

    INGREDIENTS _______________
    2 Tbsp melted butter
    1 Tbsp vegetable oil ( you can add up to 1 more Tbsp if needed)
    3 Tbsp All purpose flour
    1 1/2 Tbsp CHILi powder
    2 tsp Paprika
    1 tsp Onion powder
    2 tsp garlic powder
    1 tsp ground Cumin
    1/2 tsp Sugar (I accidentally deleted this part)
    1/2 tsp Mexican oregano
    1 1/2 tsp Chicken Bouillon ( i used KNORR)
    2 tsp tomato 🍅 paste (I accidentally deleted this part)
    Salt if needed
    3 C. Chicken broth

    Hi everybody, I want to apologize for not showing me add the tomato paste or the sugar, I accidentally deleted it when I was editing and i couldn't fix it. You can add them after you start adding the broth. I did include them in the recipe though, thank you. ❤️

    I absolutely love how you go through every step and add details like "stir it so you don't get the skin on the sauce "... etc etc.. the little things like that are important to first time cooks

      Hi. I am always looking for gravy made from scratch. Do you add the chicken broth to the butter/oil/flour mixture and then let it thicken on the stove? Do you add salt & pepper or other seasonings?

    Hi Rachel,
    I have made this enchilada sauce several times now. It is the best! I have kept it in the refrigerator overnight to let the flavors marry. Then I freeze it. It works just beautifully and I must say, it is nice having it already made up when you want to make a huge Mexican dinner. I thaw it overnight in the refrigerator and just heat it up to dip my enchiladas. It is just a fabulous sauce. There is nothing better. Thank you so much for this recipe. ❤

      Freezing in itself will marry the flavors..not necessary to wait if you’re freezing.

    One of the easiest and my go to recipe for enchilada sauce. My friend, I give this sauce 10 stars! Now I'm inspired to make enchiladas for Sunday dinner. I truly think it's time for you and your Ron to look at putting all your delicious recipes into a book. I know you'd have a best seller. Again, another recipe that hopefully all your viewers already have in their recipe boxes. May y'all just have the smoothest of rides toward the weekend.     My husband doesn’t care for this type of food. I made both the enchiladas and the casserole for him. He LOVED them both. I even made them once with no meat. A big no no. I used black beans, onions and cheese. He liked those as well. Thank you Rachel. I now get to eat food I love!

    I have made Rachel's Beef Enchilada's and her Enchilada casserole using her enchilada sauce and it is more than a 5 star in my household. I love it and as I am sitting here I will be making me som Enchilada's tonight for dinner. I also made her Apple Fritter's for a sweet dessert.       @@pattwhitmore8365 Needs to be cooked longer. Add a cup of water and let it simmer for at least thirty minutes on low until it thickens. Don’t over use the bullion, could sour the sauce.

    I make this enchilada sauce but never use knorr chicken powdered because of all the chemicals in it. I use fresh minced union, garlic, fresh ground cumin & pepper and chili powder. I was born in Weslaco Texas in the Rio grande Valley and moved to California in 1967. I been told I cook food the old fashion way, spices, chiles, herbs, fresh garlic , onions , fresh broths, vegetables fresh quality meats. Lots of flavor from my fresh ingredients and good quality ingredients that I also grow. Avocados, vegetables from my garden, tomatoes, peppers, artichokes, herbs, peaches, apricots, nectarines, limes and Meyer lemons all from my yard.

    I have made enchiladas twice now and they were both amazing. One with chicken broth, chicken bullion, and shredded chicken enchiladas. The other with beef broth, beef bullion, and ground beef enchiladas. The sauce is even amazing on a tortilla chip

    There is nothing like the flavor of homemade enchilada sauce. My favorite way to eat it is in a bowl with refied beans and plenty of cheese over the top. Sometimes I add taco meat on the top of my beans! Delicious! Gosh I’m hungry for it right now! Thanks Rachel! I’m trying your recipe next time I make enchilada sauce.

    I made this again, substituting white onions, garlic and unsalted chicken stock. Doubled the recipe because it went over so good. This is hands down the best red enchilada sauce I've ever had and I've traveled a lot. Anyone thinking about trying this just do it. Your favorite Mexican restaurant will miss you.

    I lived in Albuquerque New Mexico for 40 years and I'm now in Ohio for the past 20 years. As you know there are no Mexican restaurants in Ohio that make New Mexican 6:26 , or Tex-Mex Chile... I am so glad to have come across you are amazing recipes and tutorial videos! I can tell you I will be very busy in the kitchen this coming week.     I made Rachel’s Enchilada casserole last year with this sauce. It’s worth the effort!!! My family flipped over it. We live in Texas and until Rachel, I couldn’t compete with our favorite Mexican restaurants. She should have her own restaurant. LOVE Rachel❤️

    Hello Rachel! Thank you for this 5 star recipe! I made this sauce for tamales and it was a big hit. Hubby is from Albuquerque and although we live in Houston TX (tex Mex country) we prefer New Mexican style cuisine. I have never made a good chile gravy /sauce until now thanks to you. Will be making more today with extra hot new mexican hatch chile powder per a big request from hubby. He even asked if I sent you a thank you.     This Enchilada sauce is the best I ever tasted, so so much better then the canned sauce from the store and so easy to make with ingredients I already had in my cupboards. I agree you should have your own restaurant as you are a great cook!

    I'm a new subscriber so happy to have found you!! I am in Wisconsin toward Superior what caught my eye was when you said that cooking in the kitchen is your happy place, me too. I was married to a woman who lived in Brownsville and Corpus Christi during her first marriage and after she moved back here she cooked some of the same dishes you do, she always had tortilla dough in a glass peanut butter jar in the fridge, when the kids came home from school she made fresh tortillas with jelly for a snack, I will be making some of your recipes soon!

    Using your recipes our homemade food is so good. Really economical too. I will never ever buy canned enchilada sauce again. Its so easy to put together and always have the ingredients on hand. I find myself using up my spice cabinet.

    I made this and pressure canned it. I had to omit the flour for safe canning but when I open a jar I make a roux to thicken. Delicious. I used beef broth as it's what I had.

    I made this tonight and it was SO good. I'd like to suggest a tip. I used a rotisserie chicken from Costco for my enchiladas. I took all the bones and scraps and put my water in there for added flavor cooked for the time it took to need the water and strained it to use in the sauce. Divine!

    You are so sweet!!! Your recipes are amazing; tried many. Always excited to see what is coming next. You never disappoint! What kind of sweet pepper or Chile do you like to use for paprika in Mexican cuisine?? There are so many types of paprika and a video on this would be great to help bring dishes to a new level by knowing what type/variety ( sweet, smoky, sweet smokey, hot smokey, Hungarian, Spanish etc) of pepper to grind own paprika and to use for what type dishes. I have some aji and haven't used yet. Thanks again Rachel; you're the best!!!
