I have become a big fan of the combination of ginger and garlic that comes in a jar. So easy and I find that I use more ginger and garlic because it is so easy to just spoon it out. Talk about lazy......but I love it. I use it in stirfrys, salad dressings, soups, noodle dishes - you name it. Nothing wrong with fresh but easy is good. thanks!

I'd love more "Meatless" recipes like Pea Soup, Chinese Hot and Sour Soup and would love to make Chinese style Bourbon Tofu. The sauce is delicious but, I'd love to make from scratch. I bet from your Mexican traditional cooking you'd be great at making Indian Potato and Pea Samosas. One of my favorite treats! Love your soothing, calm professional delivery.
It's funny how potato tacos are made differently. My mom would make these for us during lent. She would fry the tortillas first then add the potato and put cheese and put them in the oven. I fry my tortillas first then add the potatoes and lettuce, tomato, and cheese and I add parmesan on the outside of the tacos. Believe me, you will love the taste of parmesan. I've never had entomatada tacos. I'll have to give that a try. I made potato tacos on Friday plus stuffed Anaheim chiles. The thing with these chilies, some will be mild and some will be spicy. It's like a surprise in each chile. My mom used to make camarones empanizado (stuffed shrimp). Not big shrimps but in powder form. Thank you for these tasty recipes. Also, I've heard people say that you can eat chicken during lent, but my past priest did say "anything that walks on the face of this earth, is meat" so no, we cannot eat chicken during lent.
My mom taught me to make the sauce a different way. When your sauce starts to boil add two bay leaves and a can of drained and rinsed peas. SOOOOOOOO GOOOOD.
Oh forgot to tell you that she would fry thin slices of onions first then add your tomato sauce to get a taste of onion boil then add the bay leaves and peas and season with salt and pepper.
Watched a hack clip yesterday by a English guy, Barry Lewis. He showed how to separate eggs using one of those hinged tea strainers. You just scoop up the yolks and excess white drains through the holes.

Wow you took me way back to my childhood with the tacos de papa except my mom used to mash the papas with comino, salt, pepper, onion & garlic powder with pickled serrano juice and the serrano peppers mashed as well with queso fresco. Topped with more queso fresco , pickled cartots, raw and pickled onions, raw red or green cabbage, roma tomatoes, . My fave tacos ever!! 🎉fiesta explosion in your mouth. Mmmm! 😉

People and "authentic" need to chill. My Gramma was first generation Mexican American and her sauce is the best and I don't care what anyone thinks. It's similar to your sauce oil, chili powder, bouillon powder, canned tomato sauce, and flour and water to thicken. It's delicious!!! I add cumin, onion and garlic powders to it too. It's authentic to our family. And we love it. And miss my beautiful Gramma.

Hi Angelica, I definitely understand about having issues separating eggs. I have severe arthritis, and what I have found works best for me is to crack each egg into a small bowl, fish out the yolk with my fingers into one bowl, and then pour the egg white into another bowl and then repeat. Hope this helps!

Sometimes some queso frescoes cheese can be very salty depending on the brand. If you don't like the saltiness you can buy peneer Indian cheese or make your own at home.

Hello Simply Mama I think your recipes look delicious - with very clear instructions. I Also think you should never have to say "Sorry" for using or not using fresh ingredients. Giving options to those that have or not have access to them. Using the ingredients that you have in your pantry shelves is always an awesome feeling where you do not need to go to the store every time to shop for ingredients needed. We sometime also add refried beans to the entomatadas -top them with green onion, lettuce and couple slices of avocado.- Thank you for you patients and for sharing your knowledge. I’m working on getting my nerve up to make chili Relleno b/c I love it. I think for the tomato sauce I am going to use some V8 like you did when you fixed you grandma’s lunch. I made that basic but very delicious picadillo recipe a couple of times and can tell V8 really adds to the flavor.

So how do you dispose of your used cooking oil? I know some people reuse their oil after filtering it. I use empty cans and fill them and put in the freezer. I build the biscuit, chocolate and marshmallow and microwave for a few seconds. You don't get that toasted flavour but it's a quick and easy one for the kids... Have a great week...👍
