I recently discovered a method for making the pancakes more fluffy! It's by making some form of buttermilk that reacts with baking soda. Just simply take your plant milk and add a tablespoon of some kind of acid (for me it's mostly lemon juice) and wait 10 mins before assembling with other ingredients :) Bon appetit!

For your pancakes, try seperating the eggs from the batter you put in the blender. Whisk the eggs whites until stiff and fold into the batter. Quite like those souffle pancakes. I had an egg white and cottage cheese scramble the other week for the first time. I added chicken salt to it and it was actually really good!! I even had the leftovers cold the next day and they were good too ❤
For the pancakes: add some sparkling water and/ or separate the egg yolk from the egg white an whisk that white until it gets like foam. Combine it than back in slowly. Thats what my grandma always did. Greetings from germany

Alia! Add some Greek yogurt and Xantham gum to the protein pancakes this helps mine come out fluffy and I don't add oats to it because the Greek yogurt has a tons of protein. For a sweet taste & tooth add semi sweet chocolate chips. This pairs deliciously. I make these when I'm too lazy to make myself dinner and with 3 I'm really full.
Try add "shiro dashi" in your cold soba or poke! It's basically a dashi stock with some flavor (shoyu, soma sweetness etc) and it just gives SO much umami and flavor feels so much more complete :) (Add that with some water since normally it's concentrated, read the instruction on the bottle✌)

the secret ingredient my dad uses to make his pancaked fluffier is sparkling water, but just a little and a good mix is really important

For the pancakes - try adding a teaspoon of baking powder for fluffiness! And not blending them for too long. It helps a ton!
