I won a baking contest at my office using this recipe. My recipe called for vanilla extract; however, I grabbed the lemon extract by mistake. I thought it would taste awful, but I did not have time to make it again. One of the judges, a chef, awarded the first prize in the cake category to me because he loved the lemon flavor! I've used lemon extract ever since.

I tried this recipe and it was fantastic. Then, me being me, I tried all sorts of variations, and they were all successful - lots of happy neighbours have attested to this (I love baking but can't eat it all so I hand the results around my street). I do use a little less sugar, 1.5 or 1.75 cups instead of two. I also make these in a bundt pan, and yes, I do grease the pan. I sift the flour, sugar and baking soda into a bowl and mix it well. I reserve three tbsp of the pineapple juice, then chuck the fruit, the rest of the juice and the eggs in a small food processor, along with some toasted coconut flakes and blitz to a rough puree. Add this to the flour mixture, mix well and pour into the bundt tin. Bake at 350°F/180°C (320°/160° fan-forced) for 30 -45 minutes until done. Cool in tin, then turn out on to a serving plate. Note: I don't frost this cake, but something much simpler (and yummy). Put the reserved pineapple juice, 1/4 cup icing sugar mixture and 1/4 cup water in a small pan and bring to the boil, stirring occasionally, until reduced and syrupy. Let cool, then pour syrup over cake and scatter over extra toasted coconut flakes. Variations to this that I've made successfully are Mango and Macadamia, Peach and Pistachio, Lychee, Lime (juice and zest x 1)and Elderflower (cordial - dash in the mix and in the syrup), as well as Spiced Apple (stew the apples and add 'Christmas' spices like cinnamon, nutmeg, cloves, etc). Use baking POWDER in all of these, as they don't have the acidity of the pineapple to activate the baking soda. Also, with the nuts, it pays to blitz them to rubble first, then add the fruit, juice and eggs. Another variation closer to the original recipe is to use canned pineapple slices and char-grill them first, maybe scattering with a little brown sugar to kick up the caramelisation. One of the things I love about this recipe is that it is so simple and so versatile! Thank you!

Well, it’s about as easy as it can be to make and IT DOESN’T STICK! Very little to clean up after too. I LOVE THAT PART TOO! I’m granny and I love to spoil my family! I have made a cake similar to this. I like to add a little coconut to the batter and the icing. Pecans are also good on this cake. I think it is one of the best cakes I have made. Yum.

I did a smaller version of this by cutting the recipe in half. I think the secret of it is, the acidity that is in the pineapple. When you mix that with baking soda it has the tendency to make it a little bit more jelly and similar putting baking soda with a little vinegar. It bubbles up but this takes the sugar, the fruit juice from the pineapple and causes it to jell and as it bakes become caramelize. It was really good. I enjoyed it and I'm certainly will bake it again for a very quick dessert.
This cake recipe looks interesting and very colorful for sure. I would love to see Paula Dean do a easy homade dark chocolate cake with a easy dark chocolate frosting or the same easy recipe for a german chocolate cake with frosting.

I just made this recipe. I cooked it about 42 minutes, because the middle was not as done as around the edges. It tastes just fine though. And I am not a cook whatsoever. If it had been any more difficult, I would have been in trouble.
After the cake is cooked the last time, do you keep it out, and covered, til it is eaten up? Or do you keep it in the refrigerator til it is totally consumed?
My family has also been making this for years. The only differences, we bake in an 13x17 sheet pan and add a cup of toasted and chopped pecans to the frosting.
I'll make this mostly as the recipe states, just with one cup of sugar instead of two because equal parts sugar to flour in recipes are always too sweet for us, especially since there's icing as well! And I usually don't care for icing on cakes but I'll give it a try since Paula says to make the recipe the same the first time:)

If you want a really fast Pineapple cake, get an Angel Food cake mix, add a can of crushed pineapple. Mix and bake for 35 minutes in a 9X13 dish and thats it!! make frosting if you like or use whipping cream for the topping!!! Its also amazing!!! Love you Paula!!!!
My mom would make the best Texas Sheet Cake I've ever had.! The recipies I've seen are generally the same. But that's the best dessert ever. This pineapple cake will probably become much requested at our house.
I've been making this for years, I add cinnamon and while your cake is still hot I make cream cheese frosting pour it on, and add walnuts!! It is delicious! Love your shows, recipes! God bless!!
This has always been called "Preachers Cake" as long as I have been making it. I have a very old cookbook from the early 1900's that I inherited from my Mom and it's always referred to as a "Preachers Cake". I am 73!

I love the show too! I am so grateful that you decided to do this show. Its definitely like being in the kitchen with a favorite aunt or something. (My grandma was a wonderful cook, but she never used anything but salt and pepper! She did grow all of her own veggies though!) Junket (rennet) ice cream was a special treat that we had on father's day and 4th of July. When we were last all together at Grandma's, there were 36 of us. I miss those get togethers!
I remember watching you in food network, then I worked all the time. and with the covid a lot has changed, and you make my day. I've done some of the recipes already and there delish !! Like you said at time you get ahead of yourself....I did when making the cake, pig cake I think put the mandarin orange in the mix and stirring it and crushed the oranges darn it got me upset and the good thing is I can always watch it again. I'll admit I was wondering myself if you should add a little butter to the pan to keep it from sticking. Looks great easy and fast. Can't wait to give this one a try.
I’ve seen this recipe twice in as many days. Our family has made this cake for many many years but our family recipe added a tsp of vanilla to the cake and 1 tsp of vanilla in the juice that we put on top after baking the cake poke holes all over the cake and add to a sauce pan one regular can of evaporated milk one stick of butter and 1 cup of sugar. Heat to a boil and melt the sugar and butter. Remove from the heat and add 1 tsp of vanilla and stir then pour over the cake evenly. Store in fridge and heat the cake in the microwave after the initial servings. The longer the cake sits the better it gets…❤
I made it. It is soooo easy and very delicious!!! Moist but substantially heavy. The icing is so good. I mixed the icing by hand 'cos too lazy to bring out the mixer. And only used 1 bowl - rinsed it after mixing the cake then used it for making the icing. Thank you Paula and Elizabeth.
An even quicker pineapple cake is a box of angel food cake mix (1 step) and a can of crushed pineapple. Just mix together and pour into a 9 x 13 pan and bake at 350 for about 45 minutes. Simple and delicious (and fat free).
@@susanaramirezc.9988 I'd use 20 oz can, maybe a little less if you are using the cake mix from the box. Not sure that a box cake mix is equal to the recipe of 2 cups flour and 2 cups sugar that Paula demonstrated.

Love yu I am gonna try this except put the usual pineapple rings in the bottom of the glass square pan along with brown sugar and butter like my Momma made. I didn’t have pineapple on hand so I used canned peaches diced up and added some crushed walnuts on the bottom and added some orange liquor to the frosting and shared it with my landscapers. I wished I had made 2 because they destroyed it within seconds. I was able to save a piece for my UPS guy that stops for treats when he’s in my community. Wonderful recipe ❤️

Paula this was delicious! The moistest cake ever, I sprinkled chopped walnuts on top..I also had to bake 5 minutes longer, because the center was still a little shaky! And you were right, do not grease or butter your baking dish..it will come out clean..thank you Paula...

Here's how I made it: 2 c flour 1-1/2 c sugar 1 tsp baking soda 1/2 tsp salt 2 eggs 20 oz can crushed pineapple 1 cup chopped pecans I buttered and lightly floured my 13.2 baking dish. Bake 25 minutes at 350F in glass 13x9. - Remove from oven and poke holes before frosting like you would to a "poke cake" recipe. Frosting: 1/2 c (1 stick) softened butter, 8 oz cream cheese, 2 tsp vanilla, 1-1/2 c powdered sugar. Frost and sprinkle one cup coconut on the top.
This is one of my favorite cakes. Some recipes call for the addition of walnuts either in the batter or sprinkled on top. My recipe has the icing go on when the cake is still warm, not cold, so it kind of sinks in . . .

I made this a few days ago without icing. We had vanilla ice cream instead on the side. This has a muffin or bread pudding texture (not cake). Spongy and moist. It was not bad at all but in terms of taste, it seems to be missing something. Maybe butter , cream, some kind of extract? Any ideas? I think I'm going to use this as a base for muffins in the future. Thank for posting the recipe/video.
I would call this a poor-man's pineapple cake. There have been times I wanted to bake a cake, but didn't have any butter (I rarely use oil in a cake). And I can get pineapple cheap at the dollar store. Now I know I can still have cake even if I ran out of butter.

Would this work with half the sugar? I'm not sure how much the sugar content would affect the outcome in cakes.

Cut down the sugar put one cup
You only live once, a little sugar won't hurt you just don't eat the whole cake at one sitting.
I made mine with one and a half cups sugar because I was too afraid to use less. But next time I'll just use a cup like you did
You're right much too much sugar and to much butter in frosting yuck!
If you want a really fast Pineapple cake, get an Angel Food cake mix, add a can of crushed pineapple. Mix and bake for 35 minutes in a 9X13 dish and thats it!! make frosting if you like or use whipping cream for the topping!!! Its also amazing!!! Love you Paula!!!!

My mom would make the best Texas Sheet Cake I've ever had.! The recipies I've seen are generally the same. But that's the best dessert ever. This pineapple cake will probably become much requested at our house.

I've been making this for years, I add cinnamon and while your cake is still hot I make cream cheese frosting pour it on, and add walnuts!! It is delicious! Love your shows, recipes! God bless!!

This has always been called "Preachers Cake" as long as I have been making it. I have a very old cookbook from the early 1900's that I inherited from my Mom and it's always referred to as a "Preachers Cake". I am 73!
Made this a few times already. 10x10 square glass dish 45 mins @325. Even better made with brown sugar. Some lemon zest really wakes up the flavor.

I love the show too! I am so grateful that you decided to do this show. Its definitely like being in the kitchen with a favorite aunt or something. (My grandma was a wonderful cook, but she never used anything but salt and pepper! She did grow all of her own veggies though!)
Junket (rennet) ice cream was a special treat that we had on father's day and 4th of July. When we were last all together at Grandma's, there were 36 of us. I miss those get togethers!

Like you said at time you get ahead of yourself....I did when making the cake, pig cake I think put the mandarin orange in the mix and stirring it and crushed the oranges darn it got me upset and the good thing is I can always watch it again. I will do this one as well good thing it didn't stick I was gonna put a stick of melted butter . lol good day

I am making this today, my great grandchildren are here today, so we will be baking this. Love your videos & recipes.
I’ve seen this recipe twice in as many days. Our family has made this cake for many many years but our family recipe added a tsp of vanilla to the cake and 1 tsp of vanilla in the juice that we put on top after baking the cake poke holes all over the cake and add to a sauce pan one regular can of evaporated milk one stick of butter and 1 cup of sugar. Heat to a boil and melt the sugar and butter. Remove from the heat and add 1 tsp of vanilla and stir then pour over the cake evenly. Store in fridge and heat the cake in the microwave after the initial servings. The longer the cake sits the better it gets…❤

I made it. It is soooo easy and very delicious!!! Moist but substantially heavy. The icing is so good. I mixed the icing by hand 'cos too lazy to bring out the mixer. And only used 1 bowl - rinsed it after mixing the cake then used it for making the icing. Thank you Paula and Elizabeth.

An even quicker pineapple cake is a box of angel food cake mix (1 step) and a can of crushed pineapple. Just mix together and pour into a 9 x 13 pan and bake at 350 for about 45 minutes. Simple and delicious (and fat free).

@@susanaramirezc.9988 I'd use 20 oz can, maybe a little less if you are using the cake mix from the box. Not sure that a box cake mix is equal to the recipe of 2 cups flour and 2 cups sugar that Paula demonstrated.
Paula I bought your red skillet a few years ago. I really like it so I bought your medium size red pan. It is non-stick. I needed one. Love it !!! So I bought your red teakettle. It hasn't arrive yet. Can't wait! I love to watch your shows!

I didn’t have pineapple on hand so I used canned peaches diced up and added some crushed walnuts on the bottom and added some orange liquor to the frosting and shared it with my landscapers. I wished I had made 2 because they destroyed it within seconds. I was able to save a piece for my UPS guy that stops for treats when he’s in my community. Wonderful recipe ❤️

Paula this was delicious! The moistest cake ever, I sprinkled chopped walnuts on top..I also had to bake 5 minutes longer, because the center was still a little shaky! And you were right, do not grease or butter your baking dish..it will come out clean..thank you Paula...

"this is freakin out of this world!!!"... true that - you're a doll. Here's how I made it:
2 c flour
1-1/2 c sugar
1 tsp baking soda
1/2 tsp salt
2 eggs
20 oz can crushed pineapple
1 cup chopped pecans
I buttered and lightly floured my 13.2 baking dish.
Bake 25 minutes at 350F in glass 13x9.
- Remove from oven and poke holes before frosting like you would to a "poke cake" recipe.
Frosting: 1/2 c (1 stick) softened butter, 8 oz cream cheese, 2 tsp vanilla, 1-1/2 c powdered sugar.
Frost and sprinkle one cup coconut on the top.
This is one of my favorite cakes. Some recipes call for the addition of walnuts either in the batter or sprinkled on top. My recipe has the icing go on when the cake is still warm, not cold, so it kind of sinks in . . .

I made this a few days ago without icing. We had vanilla ice cream instead on the side. This has a muffin or bread pudding texture (not cake). Spongy and moist. It was not bad at all but in terms of taste, it seems to be missing something. Maybe butter , cream, some kind of extract? Any ideas? I think I'm going to use this as a base for muffins in the future. Thank for posting the recipe/video.
I would call this a poor-man's pineapple cake. There have been times I wanted to bake a cake, but didn't have any butter (I rarely use oil in a cake). And I can get pineapple cheap at the dollar store. Now I know I can still have cake even if I ran out of butter.

I make this cake all the time, we call it Mexican Wedding Cake. We also add a tsp van and a cup of chopped pecans to the icing. Love, love, love the cake!
