I make it pretty much every family gathering. Love it ,so yummy. I use a can of chocolate frosting that I mel in the microwave oven. So much easier but I might try this way next time. Love you Paula.

Love this vintage cake recipe. It's as good as a Jell-O poke cake. Remember that one? I was a teacher when these desserts were popular. They often appeared in the teachcers' lounge. Good memories.
I made this cake yesterday, and the recipe was very similar! The only difference being that I used vanilla frosting instead of chocolate on top - due to personal preference! It Was delicious!!! Thanks Paula!

I’ve made this for 30ish years. It is delicious! In my recipe, I put the unsweetened baking chocolate, butter, Kari syrup, milk and vanilla in a sauce pan and heat until melted and combined. I then add 2-3 cups confectionery sugar. I top the eclair cake with chopped pecans.
This recipe reminds me SO MUCH of my Grandma Krycka, bless her soul. I miss her so much but these kinds of recipes bring her close to my heart. ❤❤❤
My Grandsons love this dessert I've made for years. I melt dark chocolate cake frosting and pour it on top instead of making the frosting. Oh, make your s'mores in the microwave for 20 seconds. Love all you do, we Paula's are something, aren't we?

I have yet to find a recipe for this like my mother's. No idea how it came to be so different from everyone else's! Her topping calls for melted chocolate chips, shortening, corn syrup, and milk. It is sublime.
My nana always made this for homecoming at church!! So easy! I sent in two recipes Mrs. Paula, so be on the lookout. It’ll be for Dump and go Lemon Pound Cake and Snickerdoodle Cookies! 😊
Mom used to make this but used butterscotch instead all the time for big get togethers and it waas a welcome gift by all. The only difference is that she would melt chocolate chips and pour over as a topping. Lovely and love you Paula.
I've been making this for years. Best with French vanilla pudding and half n half I also add a tsp of vanilla. A quick fix for top is store bought frosting, microwaved for 20 seconds.

I love your recipes, Paula. I think instead of graham crackers for this, I'd bake up some puff pastry "crackers" which would mimic eclair pastry better. Instant pudding tastes weird to me. If you made it from scratch, you would just have to wait for it to cool down before folding into the whipped cream. (I agree, real whipped cream is WAY better than "whipped topping"). A chocolate ganache frosting would not be any harder to make than yours and would send this dessert over the top.
I have made this for over 20 years. My husband loved it and my kids to this day request it often for get togethers. Fresh cream makes the difference. Yummy!

I’ve made this recipe for years and it’s a family favorite!
For a lighter topping version,
I use 8 oz. of cool whip mixed with some chocolate syrup. Spread on top. Then- drizzle some chocolate crackle sauce (the kind that hardens instantly on top of ice cream). Sooo light and tasty.

Momma loved pudding! I remember her first making it with corn-starch! She loved jello-pudding.especially when she had rice left over and made rice-pudding.me? Not so much…I loved banana 🍌 pudding with vanilla wafers.

we always use a can of chocolate icing soften in the microwave. Theresa use french vanilla pudding and can frosting any flavor chocolate flavor you like.
If you stir the milk and pudding mix together and just set it aside it will thicken by itself in under five minutes.

Do you use your recipe for stabilized whipping cream in your eclair cake?
WOW Looks FANTASTIC!! Reminds me more of a Napoleon than an eclair if you cut each serving into rectangles. Also when I think of eclairs, I think of puff pastry texture than graham crackers.
My hand mixer has a wonky beater too. I wonder when I turn it up if it’s going to fly off.

I’d really love to learn how to make it and see what the difference is. I didn’t have anyone to show me how to cook or how to do anything and because of that I’m still teaching myself how to cook at 38 years old. I wanna teach myself everything about cooking and baking.

I have made this exact same cake several times. I do use a thawed whipped topping and a can of milk chocolate frosting melted to a pouring consistency, Even using these shortcuts, I've always had rave reviews.
Yum! I use the same recipe BUT use a can of milk chocolate frosting for the topping. Just pop it in the microwave for 10 seconds to give it a more spreadable form. I love watching you Paula!

I think I would call this more of a pudding dish than a cake recipe. More like a banana pudding recipe to me.
