How to Make Chocolate Eclair Cake -Easy no-bake dessert recipe -pudding, graham crackers, Cool Whip!

- Chocolate eclair cake is an easy, delicious, no-bake dessert that is great for family events, church fellowship meals, or whenever you just want something yummy and impressive to serve to your family and friends! The ingredients couldn't be easier: pudding mix, milk, Cool Whip, graham crackers, and chocolate frosting.
INGREDIENTS
• 2 boxes of vanilla (or French vanilla) instant pudding
• 2 1/2 cups of milk
• 12 oz. Cool Whip
• 3 packages of graham crackers
• tub of chocolate frosting (or feel free to make your own if you prefer)
INSTRUCTIONS
1. Mix instant pudding and milk until well blended then fold in Cool Whip until it's all incorporated.
2. Line bottom of 9 x 13 baking dish with graham crackers.
3. Pour half off pudding mixture over first layer of graham crackers then top mixture with another layer of graham crackers.
4. Pour the rest of pudding mixture over middle layer of graham crackers and top with final layer of graham crackers.
5. Pop tub of chocolate frosting (after removing foil seal) in microwave for ~ 20 seconds or so until it seems pourable with stirring. (I needed to microwave it for 32 seconds total, but microwaves vary in intensity.)
6. Pour frosting over top of eclair cake then cover and refrigerate for at least 6 hours before serving.
7. Enjoy!

I'd love to know how you make yours! This is the only way I've ever known to make it, of course I know there are the variations of what kind of frosting you use (tub or homemade) and what kind of pudding you use, but beyond that, I've not heard anything different. Like you, I also love hearing about and trying different variations. 👩🏻🍳
@@OldTimeKnowledge I use the big 4.6 oz Cook & Serve Pudding mix...do a few layers with the crackers and refrigerate all day. Then right before serving I add the cool whip on top. I drizzle it with Hershey's Chocolate syrup, and then drag a butter knife through it gently in a couple of directions. Makes it look kinda fancy... lol! My Grandma and Great Grandma always made it like that. Love how you folded the Cool Whip in with your pudding and used frosting though! It's on my next shopping list. :)
@@JenniferBoggs77 You know what, now that you mention it it seems like I do remember making this once upon a time with Hershey syrup on top although the Cool Whip was still folded in. I had forgotten about the Hershey syrup thing but I must’ve been thinking about it because I chose Hershey frosting. 😄

For the chocolate layers, I melt chocolate chips 🍫 in a microwave on the “defrost” setting so it doesn’t burn the chocolate. Then I mix in some pure, cold pressed, unrefined coconut oil and stir it. Pour over your desserts and put in the fridge for 4 hours. This is the same way to make the hard shell chocolate for ice cream. I love that hard shell, and when coconut oil gets cold, it sets up hard.
Oh, yep! I make homemade magic shell frequently. Never thought of using that on this particular dessert. Good idea though!

this is delicious. only thing is i don't like Hershey's chocolate so I been trying find a good one to put on top. And I put mines in the freezer. mmmmmmm............................

Can you use little debbies instead of graham crackers?
Can v use fresh cream instead of whipping cream
You'll either need to use store-bought whipped topping or whipped cream, or you'll need to whip up heavy cream yourself to make the whipped cream.
Can I make half the recipe?
Sure! I don't see why not.
