Hi everyone!!!! Sorry for posting so late but I had so much to do today! Since the 4th of July is right around the corner I figured... that is a big cheat day holiday for me so why not post a cheat meal edition this week! This No Bake Chocolate Eclair Dessert is so AMAZING that I promise people will be begging you for the recipe! Happens to me every single time! I have to thank Eric's grandma for getting me hooked on this so I thought I would put this one up for her! Give this a shot for the holiday weekend and let me know what you all think! Ingredients
For the filling
3 Cups Milk
2 3.5 oz Boxes Jello Vanilla Instant Pudding
1 8 oz Container Cool Whip
1 Box Honey Graham Crackers
Chocolate Topping
1 Cup Sugar
1/3 Cup Natural Unsweetened Cocoa
1/4 Cup Milk
1 Stick Unsalted Butter
1 Tsp Vanilla Extract
Directions
1. In a large bowl combine milk and instant pudding mix and beat until mixture thickens. Stir in Cool Whip.
2. Place a layer of graham crackers in the bottom of a 9x13" dish. Spread 1/2 of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and pudding mixture and then top with a final layer of graham crackers. You will use about the whole box of graham crackers.
3. In a small sauce pan add sugar, cocoa, milk and vanilla extract to a boil for about 1 minute. stir very frequently. Turn off heat and cut butter into cubes and add to sauce pan. Stir until butter has melted.
4. Pour and spread chocolate topping over the top layer of graham crackers.
5. Refrigerate over night.
Enjoy!!!!!
For the chocolate topping, add the vanilla when it's off the heat. Letting the vanilla boil will boil away the flavour. Otherwise, great go-to recipe for holidays, parties, church gatherings, etc. since you can make it the night before.

I make t his but I use regular choc frosting..heat it slightly in the microwave..and simply pour over the top. IT will set up once in the fridge

I made this yesterday and it taste amazing. I didn't add the chocolate topping bc I was trying to be good so I put a little of the filling on top sprinkled with nutmeg, cinnamon, and honey😊

I have made this using a container of Hershey’s chocolate icing.
Can use canned milk chocolate frosting, microwave for one minute and pour on top ... easy peasy and very good.

Hi making this today and I stir my jello like u do I stir now like 30min but still not tick like your, still watery. I follow ur instruction. I repeated and repeated this video for 5 times to figure it out what I have done wrong. But I follow only what u do too 😔 I'm frustrated.
+Belle bonifacio Hi Belle! Did you buy the Instant Jello Pudding? I think if you use the regular one it will be more watery. I think if you add a little bit of flour or corn starch it should thicken it right up! Sorry for the late response... just got back from Europe! I hope it worked out!

I make this often, the first time I made it a few years ago it came out just perfect. The topping was just hard enough that you could cut it without the filling oozing out on the sides. Ever since then every time I make it the topping comes out soft runny, I haven't been able to make it like the first time. Yesterday I let the chocolate boil about 1:20 and it still came out soft and runny. Could it be the butter? Yesterday I used margarine but usually I use salted butter. Could the salt in the butter be the cause? I can't remember what I used the first time but it just doesn't come out the way it did that time.

I have never made this but you could try a simple chocolate ganache?

Vi Yin Wong You can use the margarine but the chocolate on top won't be as firm and more like frosting! Either way works and taste the same :)

You can actually make graham crackers. They are nothing but crispy 'cookies'/biscuits as you call them in the UK. You only need whole wheat flour and then the usual things like baking soda, vanilla, sugar, honey, cinnamon... A quick google for homemade graham crackers will bring up heaps of recipes :)

you'll need whipped cream so for that it would be heavy cream/whipping cream, I don't think all purpose cream does the job =)
