    I do the eclair cake in many flavors..I use the cinnamon Graham’s for a diff flavor..I use choc pudding and vanilla frosting..pistachio,strawberry and pumpkin are also amazing...

    The pudding cake my mom made, was called an Icebox Cake. She use three to four layers of Graham crackers. One layer with vanilla pudding in between and the other with chocolate pudding, then repeat, and put sliced banana in between each layer, and on top, in a glass baking dish. Cover well and put in fridge, for at least 8hrs. Then top each piece with cool whip, when ready to serve. Delicious! Was a long time ago, we still love it. 😋😁👍

      God bless you both Ten fold. I live with my high functioning autistic nephew. I have taught him to cook and do yard work and he is doing amazing. He works doing lawn work for neighbors. And vollenteers at the food bank I am so proud of him he has come so far in the two years he's been here in Ak off Grid 😀🤸🎆🇺🇸🤴

    With the eclair ice-box cake, try putting a thin layer of the chocolate icing on the crackers! Extra chocolate in the middle!

    I make the eclair cake at least once a year but I have also discovered that I can do a Boston cream poke cake and it is so delicious. I used to make Boston cream pies but then I figured out I could do it as a poke cake. I have nobody to feed anymore my mother put just passed away and she was my last living relative so I'm still going to do all of my baking and give out goodie boxes to someone.

    I've made the chocolate eclair cake for years. The easiest way to spread store bought frosting is to place container in microwave in small increments (maybe 15 seconds at a time), mix to test it is slightly runny, pour it on top then spread it out evenly.

    I made the Oreo one and kept put the discarded cream in the mix. I don’t know who could ever throw away Oreo cream!

    Another idea: Use one half oreo biscuit in the bottom and then use the other half to press the filling into the cup

      Use the actual Oreo cream and get rid of half the sugar they have sugar inside the cream filling. That to the cream cheese with half of the sugar then do the rest as they say to do. Awesome

    Microwave the can of frosting about 15-30 seconds before putting it on the eclair cake. Makes it easier to spread and changes the consistency slightly for more of a ganache.

    JUST CURIOUS - why didn't you show the results later of the first two recipes? We didn't get to see the final look and that visual would be more inspiring to see how they held up and cutting into them to show how it all turned out would have been nice...

    For the peanut butter bars. I simply mix one can of sweetened concentrated milk with 3 spoon of p.b and ground digestive biscuits and it goes yummy 😎

    I worked with a girl that would make those cheesecakes. So good. She would also do strawberry ones and use vanilla oreos and they were so delicious!

    My mother made the eclair 60 yrs ago, sometimes adding sliced bananas in between one of the layers.
    Soooooo good. And sometimes white icing.
    Just a change up.

      I used choc. frosting for cookies it's a bit richer and not as thick as that icing on the top and it has a shine to it when it comes out of the fridge. I never added cool whip to the pudding when I made it.

    Great recipes. When I fold in cool whip, I don't use the beaters. I just fold it in. That way it stays light and airy. Keeps a nice consistency. Thank you!

      Christine Sexton: I thought about that too, you never use beaters to fold in whipped cream or topping as that high action breaks down the "fluff". That's probably why the mixture came out runny.

      @Let It Be Brenda Gail Ya, avoid the cool whip, whip the real cream. I can usually use only 1/3 the sugar in a recipe, plus about an extra spoonful of sugar and no one even misses all that excess sugar.

    I've made the Chocolate Eclair cake many times and I've found that using the Cinnamon Graham Crackers really enhances the flavor and as the lady said below sometimes to add a fruit layer (bananas, strawberries etc) So many ways to vary this dessert

    Have you thought about adding the chocolate on the bottom of the pan and let that cool in the fridge for 30 minutes so it is still a little soft for your Peanut butter graham cracker mix in and the add more chocolate on the top and let sit in the fridge for 2 hours I like a lot of chocolate. This was delicious.

      You are in control of the recipe. You don't have to use as much powdered so if you don't want to. It's not a main ingredient.

    I've never used frosting for the top ....way too sweet. I make a simple ganache with dark chocolate and cream. I've also use different flavors of pudding.

    Yum, yum and yum. Funny story: when I first got married my mother in law always made no bake eclair cake so I thought it was her original recipe lol. Now I make it all the time. I always use chocolate frosting. If you add just a splash of milk and stir it in, it makes it way easier to spread. Love all these recipes.

    So impressed and very interesting thats what thinking outside the sqaure and clearly evolving its like baking cakes and switching it around and delivering something new like for a example instead chocolate cake go for a much healthier option say grapefruit or mango or pineapple or honeydew or apricot added crushed almonds nuts now that would be exotic and on a winner! ✈️

    Sometimes, i do something similar with pudding and a bit less of the cool whip, (so its still a bit stiff, not so runny), and i use it as the middle layer for a layered cake. In stead of using frosting as center layer. Its lighter and so good!

    For the eclair, you can also use chocolate pudding instead of frosting. It's super-refreshing in the summer when everything is ice-cold. I do that with my poke cake.

    The frosting is...eeewww! Use ganache! Bag of chocolate chips melted with the tiny carton of heavy cream. Top with that!!

    Nice ladies here! Just rethink using Cool Whip, please. It's so unhealthy. When I eat it, my eyes feel like somebody threw sand into them. Read the label, it's all weird chemicals.

      Frosting:
      1/2 cup butter (softened)
      2-3 Tablespoons milk
      1 teaspoon vanilla extract
      4 Tablespoons cocoa powder
      3 cups powdered sugar

    Awesome video's with even better recipes. Thank you ladies. I am probably your mom's age and I used to make these peanut butter bars way back in the day when my kids were small. Then I forgot how to make them. Thank you so much. I can't wait to make all 3. Today is Christmas Eve 2020 and I am making ALL 3 plus a streusel for tomorrow am. IT's only hubby and me because of the Pandemic. (I miss my kids and my grandkids SO MUCH!) We moved out of state 3 mos ago. Anyway, we're gonna get fat and be happy until we can see them again.     Cool whip sucks.Might as well drink a cup of vegetable oil.Use Reddi Xtra creamy.Real cream.

    I made the eclair cake. Itcwascso pretty, I took a couple of pictures.
    I had some really ripe bananas, so I added slices to the cake and a chocolate ganache on top.
    Everyone loved it. My aunt ate hers and some of her mom's, too.
    The dessert was gone in 3 days. And it was a big dessert, too.

      Actually, I just looked it up & to say all those ingredients are "toxic" is radically over-stating the case. Corn syrup may not be the healthiest ingredient in the world but "toxic" is an extreme exaggeration & the same with most of the others.
      After all, you can Die from drinking too much water! Many things are fine when used in minute amounts as preservatives or whatever.

    Ummm, so u wasted the cream fillings from the Oreos!? U girls should have added most of them to the cream cheese and save 5-10 Oreo cream fillings so u can chop or dice them up and sprinkle on top with the cookie crumbs. Personally, I don't like to waste anything.

    I made the eclair dessert for Easter and my kids looooovvveeedd it. My oldest son is addicted to it. He asked me when will I make this again! Thank you for sharing your mom's frosting it tastes amazing. I will never buy store bought chocolate frosting again
