- Fall is almost here and I am ready for pumpkin recipes! Bring on the cool weather! If you are a pumpkin lover, you must try these 3 easy desserts! They are so easy and your guests will think you slaved all day in the kitchen, when really, it only takes a few minutes to throw together!

Quick tips:
When the recipe calls for only 3/4 of a can of pumpkin, you can easily but the rest in a freezer bag or in container and stick it in the freezer!
Want to use fresh pumpkin?
Fresh pumpkin and canned pumpkin work a little differently.
Fifteen ounces of canned pumpkin is just shy of 2 cups (16 ounces would be 2 cups).
A 3-pound pumpkin (meant for pie) will likely give you enough puree for your recipe.
Here are some good tips for using fresh pumpkin: Pumpkin math: After cooking and draining, this is about what to expect from a typical cooking pumpkin.
2-1/2 pound pie pumpkin = 1 3/4 cups puree 3 1/2 pound pie pumpkin = 2 1/2 cups puree 6 pound carving pumpkin = 2 3/4 cups puree 5 pound round pumpkin = 3 1/3 cups puree.

If you whip the cream cheese first, then add the powdered sugar before you FOLD in the cool whip, you won't have lumps and you'll have a light and fluffy topping!

These look awesome, can't wait to try! Yes, would love to see more pumpkin recipes. I eat pumpkin all year round. I also make pumpkin smoothies to drink for breakfast. I/4 th 15 oz can pumpkin, 8 oz. Almond milk, 8 oz. Coconut milk, 1 tablespoon brown sugar, 1 tea. Vanilla, and sprinkle in some cinnamon. Whip it all together in my blender...yum! Sometimes I also add in coffee ice cubes to make like a frappe for an extra kick to take to work. Hits the spot every time! 😊

My favorite is pumpkin pie bars. The crust on the bottom of this bar reminds you of pie crust and the filling is a pumpkin pie recipe. It is topped with walnuts and a brown sugar crumble.

Pumpkin is my favorite 'flavor' food item! They all look great! Pumpkin should NOT be relegated to harvest time in our day and age of canned pumpkin! : )
My Walmart has pumpkin puree at all times.
...and so does my pantry! lol (Have you tried instant pumpkin pudding? I buy it from Amazon 'cause its almost NEVER in a local store). Its - the - bomb! : )
It's sometimes hard to find canned pumpkin during other seasons. My sister's birthday is in March and she always wants a pumpkin pie instead of a cake. One year I visited every grocery store in my area and couldn't find one can. I finally cooked and pureed carrots and substituted them for the pumpkin and she couldn't tell the difference. Now I always buy extra canned pumpkin when it's on sale.
Yur darn tottin' "buy extra canned pumpkin!" Being caught short of tinned canned pumpkin is just not an option a second time! lol. : )

I love to make pumpkin bars for thanksgiving! It’s similar to the poke cake, but you bake on a cookie sheet and the icing is similar too, minus the cool whip!! It’s so good!!
