    Prep time: 15 MINS
    Bake time: 1 HOUR 15 MINS
    Total time: 1 HOUR 30 MINS
    Yield: 12 SERVINGS
    INGREDIENTS:
    3 cups rolled oats (275 g)
    1 tablespoon pumpkin pie spice
    1 1/2 teaspoons baking soda
    1/2 teaspoon fine salt
    2 eggs
    1 cup unsweetened oat milk (240 g) or any type of milk
    1 cup tightly-packed 100% pumpkin purée (250 g)
    1/2 cup maple syrup (140 g)
    3 tablespoons olive oil (or any mild-flavored oil)
    1/2 teaspoon vanilla powder or 1 teaspoon vanilla extract
    INSTRUCTIONS
    1. Preheat oven to 325 F (160 C). Line a bread pan (8x4 or 9x5 inches) with parchment paper, or lightly grease with cooking spray. Set aside.
    2. Mix dry ingredients. Grind oats in a blender or food processor until they reach a flour-like consistency. Add in the pumpkin pie spice, baking soda and sea salt, and whisk until the mixture is evenly combined. Set aside.
    3. Mix wet ingredients. In a separate large mixing bowl, whisk together the eggs, milk, pumpkin purée, maple syrup, olive oil and vanilla until evenly combined.
    4. Fold the dry ingredients in with the wet ingredient mixture, and stir until the mixture is just combined. (Try to avoid over-mixing.)
    5. Pour the batter into the bread pan and spread it out evenly.
    6. Bake for 1 hour 15 minutes, or until a toothpick inserted in the center of the bread comes out clean. Remove pan from the oven and place on a cooling rack for 10 minutes.
    7. Serve. Serve warm. Or let the bread cool to room temperature, then store in a sealed container for up to 3 days, or freeze for up to 3 months.

      1 teaspoon cinnamon, 1/2 teaspoon of ginger powder, 1/2 teaspoon clove powder and 1/2 teaspoon nutmeg, mix all together and that’s the pumpkin spice

    Looks wet and rubbery.

      It is rubbery. I made this and I don't recommend. The consistency is awful, and there is too much soda, maybe author wanted to say to use baking powder instead of soda. Ingridients measurments are wrong. Probably too much pumpkin. I already did a few pumpkin-oat baking and always tasted amazing. Unfortunatly not this one 👎
