I made this recipe last night and it turned out perfect. Spicy, pumpkiny, moist and super yummy. And at 142 calories vs. 390 from a well known coffee shop, it's a great alternative for those trying to cut some calories.
I bet you could substitute unsweetened apple sauce for the yogurt to make it even more healthful! Also of course you can substitute 1/4 cup Chia Seed gel (one part Chia seeds to 8 parts water) for each raw egg a recipe calls for if the egg is just needed for binding. The rest of the recipes sounds great!
I think they would work great! I haven’t done this particular recipe as muffins although I have another whole wheat pumpkin muffin recipe on my channel but it’s not quiet as healthy as this recipe is. I would do everything the same but start checking them around 25min or so since they will of course bake faster. Good luck and let me know how they turn out!
Yes it’s virgin coconut oil but you could use another healthy oil if you liked or even butter. I always use full fat Greek yogurt but I don’t think it would change it too much if you wanted to do a low fat Greek yogurt. The main thing is that it’s plain so it doesn’t add extra sugar to the bread. And I like to use Greek yogurt because it adds more protein to the bread. Hope that helps!

I baked it for 325 degrees, and at the 30 minute mark, it was looking a little burnt. I lowered the heat, and baked it for around 20 more minutes. Next time, what should I do? Thanks for the recipe!
Yes I may remake this video soon for Fall and fix my audio (obviously 325 is correct). If your loaf is browning too quickly, you can cover it loosely with foil when it reaches the desired color. You can also bake it on the lower, middle rack (instead of the middle) which may help too. I’m glad you liked it!
I’m honestly not familiar with oat flour. I think it would work since this recipe doesn’t rely on gluten for structure. The texture may be different, but I think it’s worth a try! Let me know how it turns out!
Mmm I’m sorry:( I’ve never had that happen. 325 degrees for about an hour should have baked it though. Maybe your flour was a different brand of whole wheat and absorbed much less moisture? If your batter looked a lot more runny than the one in the video that could be the issue. You could try adding a few more tablespoons of flour and see if that fixes it. Hope that helps!
I know that heating honey of course pasteurizes it just like if you cook with raw milk, or yogurt or sourdough starter or wine or any other food that is “alive”. However I haven’t seen any convincing evidence that cooked honey is “toxic” for our bodies, especially when compared to conventional sweeteners. But I’d be very interested in any peer reviewed articles you could recommend on the subject! For this recipe, you could substitute some date syrup if you wanted for an alternative natural sweetener or forgo the sweetener all together and enjoy it with some homemade honey butter!
This is definitely not for people who are diabetic who cannot have salt or whole wheat flour wheat is not diabetic honey is not diabetic the whole recipe is no good
I’m sorry you didn’t enjoy it :( this version is definitely more of a vegetable bread like zucchini bread but made with pumpkin. There are lots of sweeter versions out there you should try or even just try subbing out with white flour and see if you like it better! Don’t give up on pumpkin bread!
