    Today I'm going to show you how to make pumpkin bread from scratch.
    It's a healthier twist on traditional pumpkin bread, made without oil, all-purpose flour and white sugar.
    This moist pumpkin bread is bursting with fall flavors, and it's moist in every bite.

    PUMPKIN BREAD RECIPE
    Ingredients:
    1.5 cups ground oats or oat flour (150g)
    1 cup quick cooking oats (90g)
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 tbsp pumpkin spice
    2 eggs (or 2 flax eggs)
    1/3 cup maple syrup, agave or honey (80ml)
    1/4 cup unsweetened applesauce (65g)
    1 tsp vanilla extract
    1 cup pumpkin puree
    1/4 cup dark chocolate chips (50g)
    NUTRITIONAL INFO (per slice):
    136 calories, fat 2.9g, carb 24.2g, protein 4g
    Preparation:
    In a bowl, mix together the ground oats, quick cooking oats, baking powder, baking soda, salt and pumpkin spice. Set aside.
    In another bowl, beat the eggs and add the liquid sweetener (maple syrup, honey or agave), applesauce, vanilla extract, and pumpkin puree, and whisk well until combined.
    Pour this mixture into the dry ingredients and stir just until combined, no more than that.
    Gently fold in the dark chocolate chips.
    Grease your loaf pan with some butter or coconut oil, pour in the batter and smooth the top. Sprinkle with some pumpkin seeds on top.
    Bake for 55-60 minutes at 350F (180C), tent with aluminum foil to prevent excess browning.
    When baked let it cool in the pan for at least 10 minutes, then turn it onto a wire rack to cool completely.
    Serve with pumpkin whipped cream (1 cup heavy cream, 1/2 cup pumpkin puree, 1 tbsp honey).

    PUMPKIN BREAD IN A MUG
    Ingredients:
    4 tbsp ground oats or oat flour
    1/2 tsp baking powder
    1/2 tsp pumpkin spice
    2 tbsp milk
    1 tbsp maple syrup, honey or agave
    2 tbsp pumpkin puree
    Preparation:
    Mix all the ingredients in a coffee mug and microwave on high for 1 minute.
    HOMEMADE PUMPKIN SPICE
    4 tsp cinnamon, 1 tsp nutmeg, 1 tsp ginger, 1 tsp cloves, 1 tsp allspice

    I bake everything without refined white sugar, in fact we don’t have refined white sugar in the house…but don’t mistake honey for a natural sweetener and say it is not sugar. All forms of sugar, sucrose and fructose, turn to glucose in the body; fruits, refined sugar, turbinado sugar, honey, maple syrup, agave, etc. I also usually replace the eggs with flax seed and/or chia seeds. Love your channel. Great ideas.

    There are many recipes of pumpkin bread but I like your healthy version! Great idea to use oat flour instead of all- purpose flour! I like butternut squash puree you used instead of pumpkin, how smart it is, never thought about it! The bread looks so delicious and moist! Definitely gonna try it soon!🎃😋

    I made this yesterday, and it's fantastic. I added both the chocolate chips AND some chopped walnuts. Next time I would use raisins instead of chocolate though. I used rolled oats instead of quick-cooking, which I think perhaps impacts the moistness; I might add more applesauce next time to offset that. But it's a wonderful breakfast bread. I just received 8 lbs. of Bob's Red Mill rolled oats and I'm looking forward to trying more of your healthy baked goods recipes. Thank you!

    Great recipe! I didn't have a loaf pan so I subbed it for 12 muffins. And to make it fruit-sweetened I made a paste consisting of 10 dates and 1/4 + 2 tablespoons of milk. It baked for about half the time a loaf would bake for and turned out great! thankyou so much for this amazing recipe.

    I tried the recipe, but with raisins instead of chocolate chips and it was delicious! I also added a few roasted and chopped almonds and it gave a nice crunch. In my opinion the bread was sweet enough, but some of my family members said they would have it just a little bit sweeter.

    If you take any kind of bread like this and dehydrate it you end up with a wonderful biscotti type of thing with flavors concentrated and a nice crunch.

    I used Bob's WW flour and almond milk as substitutes in your Pumpkin bread in a mug recipe. I did it in a bowl then I put 1 tbsp Calorie free Walden farms Caramel syrup after it was cooked. It was delicious. Thank you for your recipe!

    Love this recipe...tried them as muffins - doubled the recipe and was able to get a dozen. Had some batter left over, so I added a half cup of melted peanut butter and made some cookies. I got 10 cookies, and they turned out very nicely!! (PS, I used your homemade date pate as sweetener, which I highly recommend!)

    Made it yesterday but with barely flour . Some stores sell it. It was delicious 😋. Thanks. and I used sweet potatoes instead of pumpkin coz it s more available and easier to deal with. Boiled water and put it then when soft I smashed it .

    Just made it is really good, thank you! Used flax eggs & a few chopped walnuts and some chopped stem ginger instead of choc chips, also didn't have apples so made pearsauce - good combination too. Cooked for just under an hour.

    Instead of baking the pumpkin for an hour u can just cut into wedges without the peel, cover and microwave for 10mins (flip after 5mins) until fork tender. Then blend :)

      Some cooks bake the pumpkin because it deepens the caramelized flavor-kind of like comparing a baked sweet potato to a boiled one. Microwaving is a good holiday timesaver though.

      I would like to know this too. In an other recipe I found you could use banana puree instead of apple saucr, but I don't know for this recipe!

      Hi Lucia! Thanks! So it's a perfect moment to make one for yourself. You can replace it with mashed banana or even 2-3 tbsp coconut oil.

      You could use almond flour, he loves oats a lot so he uses it in alll his recipes
      But u can simply swap with almond flour or wheat flour

      I found that 2 cups rolled oats = 1.5 cups ground. Your mileage may vary, of course.

    We Malaysian rarely use pumpkin in our baking but I just love PUMPKIN.

      Tbh..it's a bit diff taste than normal because there're spices in it & my family just rejected it 😂 (as I am expected)
      We don't use spices in our baking. So it's understandable why they rejected the cake.
      But I do love it 😍 Just not sure on the moist...I feel like I need to adjust a little bit but I don't know how.. 🤔

      But I'm truly suprised there's not much taste of pumpkin & I was delighted by the new taste 😍

    Actually,this is a great idea - I will try to make this version or "experiment" (I am not experienced at making/baking bread) as good as possible.
    Little bit of a doubt about chocolate into bread (walnuts are great option,too),however,it can be interesting. Pieces of dark chocolate will serve their purpose too,I believe,if you lacking in chocolate chips (which is hard to find in here,especially healthier and better quality version).
    One more thing - 0:42 , gotovo ulje (if I am right about gotovo,cause you've been covered it),one of the highlights of the video...:)
