I'm in Canada and for me the egg yolk mixture needed way more milk and oil for 3/4 cup of flour otherwise it would turn into a dough. I would start with maybe half that amount of flour next time just to be safe.
My eggs are large about 60-65g including shells, if you considered to try the recipe again, i think u should wait ur eggs, maybe add one more egg if they are smaller than mine.

You have to have a good baking sheet. So the steam from the cake doesn’t make it wet and start peeling
