Thank you for being so descriptive and detailed about how to fold in the egg whites. Many recipes just say, "mix gently" or "fold in as usual" - your way is super helpful.
My mom never made swiss roll, reading your comment makes me feel a bit cheated lol. Otoh, my mom had her hands full trying to grow enough food to feed 9, so only love and respect for her. And now I can make it myself!
John, my husband and I made this together yesterday for my birthday! We had the best time making it, and our guests loved it! Everything about this cake is fantastic, and my kids have already requested it for their upcoming birthdays! Thank you for sharing this - your step-by-step instructions made it easy to follow and gave us the confidence to attempt something we perceived as complicated but was in fact very doable!
I freaking love swiss roll more than almost any other cake. I've never met a buttercream or frosting that comes even close to the deliciousness of whipped cream between fluffy, tender, superlight sponge. So delicious!
My mother used to bake from old cookbooks she got on a trip to England in the early 80s and most of them used whipped cream with chocolate brownies and cakes and that's how I like it. I think chocolate icing on chocolate cake is an American trend that has now gone global.
@@mariamtee I was born in the late 70s so the time frame matches up! My mum definitely used buttercream (just the basic, standard stuff, no meringue-based ones etc) but it was never my favourite. However, if you want a cool kids' cake, you have to go with something other than whipped cream. I remember several Barbie dolls wrapped in clingfilm to act as the top half of a "princess" where the cake was the skirt. LOL
You should dust the cake with the cocoa powder then put the towel over it, after put a same size pan on top of the towel and flip the cake. It will make it easier to flip and you won’t get cocoa powder all over your counter/table. Just a helpful tip 😊
THANKYOU for keeping everything RAW in your videos and NOT editing them to make everything look perfect, clean and organized, because in all reality every one of us watching these videos, is not any of that in our kitchens or restaurants. We drop things, break things, burn things and always always have more powdered sugar outside of our mixers instead of the inside, more than we care to admit 😂 I personally watch your videos and purchased your amazing book, because you are genuine and true to yourself and that relates to many of us.... That is the type of person I want to support....So THANKYOU John for keeping it all REAL xx
This looks absolutely scrumptious and I can’t wait to try it! Thank you for sharing it and for letting us see your boo-boo! Happens to all of us. I make a German Chocolate roll up cake and the one thing I do differently than you is that I do not powder my towel. As soon as the cake comes out of the oven, I powder the cake, place the towel over it, (confidently) flip it onto my working space and proceed to roll it like you do. For me, it seems to create less of a dusting mess and in the end, it comes out the same!
Excellent tip. I'm planning to try this cake tomorrow and, while I like being able to prep the towel beforehand, I think for the sake of my kitchen, I'd rather try to avoid the cocoa plume that John created. Thanks!
Oh my goodness I was so sad when your cake rolled off the cooling rack! Lol! Happy you weren’t too bummed about it and made a new one. I love that you leave in bloopers! 💜
Love love love that you include mistakes because not only does it make me chuckle, it is something I would do! Thank you for showing us how to fix mishaps!
I laughed when you dropped the cake. You are so real. At 62 I have definitely had my share of incidents in the kitchen. Just discovered you and love your videos. I made the tortellini soup last night (chicken instead of sausage) and I had your crumble cake with my coffee this morning. Both the soup and cake are delicious! I also ordered your cookbook.
You definitely need your own cooking show on television! You are up there with the very best of the best! Great try to save on that cake fumble ! I can’t wait to make this recipe!
I'm ambivalent about the TV show thing. I think that with a show, comes the people who would want to supervise and limit. I like that your presentations are your ideas and done in your way. I would assume you have more freedom as to planning, scheduling etc. It seems as if you have the perfect situation for you and your family. I think you have developed a closeness with us that we wouldn't have with someone on Food Network for example.
By far…. It is the best video you posted to date!!!!! It is excellent for many different reasons. You educate us in more ways than you probably intended.
I made the pumpkin roll at Thanksgiving and everybody loved it so I made a bunch as Christmas gifts for my kids and their families. I want to make this with my grandkids when they come back over.
The chef delivers the recipes easy to follow, practical, and results have been reliable and great. From him I learned to make tiramisu without any hassle, and the end result was a delicious dessert.
Love your videos. I made cakes for 50 years. I add about 1/2 cup meringue powder to my buttercream icing. Gives it a marvelous tang that tones down/enhances the sweetness. Marvelous flavor!!
Omg John! When I saw that pan going I inhaled deeply. I almost lost my breath. And…..John with the save!🎉🎉🎉🎉 Why is it that EVERY time I watch one of your videos I almost drown in saliva?🤣😂 That ganache waterfall….I just heard the heavens open up and sing….🎤🎼🎵🎶 ((Ahhhhhhhhhh)). Tfs. Have a wonderful day.🤗
Brotha, you are quickly becoming my Go-To resource for all things in the baking world. Whenever I want to impress my wife with a fancy new dessert, I find myself here soaking up some inspiration and direction. Thank you, sir.
Inspiring. A definite must for home-bakers to try. Making a rolled cake will lift your game. Once you have mastered the Swiss Roll, the baking world is your oyster - you can dip layers in ganache and dry the layers, make your own gabache wuth cream, any kind of chocolate, spread warmed apricot jam on the crumb layer, etc
one of my favorite cakes if it ever shows up! You make every recipe so fun and enjoyable to understand how to make it better, techniques etc, and just being yourself. Thanks for a fun video! 😲😁
I've used your recipe twice now, and both came out great despite having to adjust for having a slightly too small sheet pan and a birthday girl who didn't want chocolate but strawberries and cream. I actually tried a cookbook version of the cake, thinking I could ip my game, but it was a disaster, and I came back to this recipe which is easier and more reliable! Thanks for sharing this. I'm finally making the Swiss Roll version now as I type.
That drop! 😮 I’m sitting here with Covid (isolated) and almost zero sense of smell or taste. This looks so good! I really hope I regain my senses. I have to make this. ❤️
Thank you for making this video. I have always wanted to tackle a roll cake but was intimidated to do so. However, after seeing how easy it is to make a roll cake, I am so going to try this tomorrow. Thanks John.😀
One thing i learned from a different recipe and found to be easier. Line your pan with parchment paper, then when the cake comes out of the oven, put a piece of parchment paper on top. Then roll. No need for the mess this way! Parchment will peel off when cooled. Making this today and waiting for it to cool! Can't wait to eat it. 😊
Yaaaaaasss!!!! Love love loved when you dropped the cake omg. LOVE YOU for leaving that in the final product, you are AWESOME. Made me smile and made me an even bigger fan. ❤
Just made this today for a little pick me up, and it's sooo good! I added 1 tsp of coffee and added it on the yolk mixture, and i used dark cocoa powder.
I never made a roll cake before and watching your video inspired me. Made it for my colleagues at work and everyone raved about it. Trying the pumpkin roll today. Thank you. ❤ 👍👏
Oh my god when you said your mom makes that cake but adds espresso to it I salivated. That sounds sooo good. I am definitely going to make this. Thank you so much!
I almost had a heartattack when the cake fell off🤯By the way I love your recipes so much. I actually made some of them and had great results. Thank you for sharing your knowledge with us. Keep up the good work🙌🤎

When you dropped the rolled-up cake.... We can ALL relate!!💯😂😂💖
As a swiss roll, I can confirm this is how I was made

Not only do I learn baking techniques, but you are so fun to watch! So educational! So entertaining!
I made this for a dinner party and it was a huge hit! Extremely airy and smooth. I’ve never made a roll before and it came out perfect!
