Because of how light the cake is, it pairs perfectly with whipped cream and makes for a lovely dessert that isn't overly sweet. These fluffy cakes are definitely worth a try!

She’s just mixing egg yolks with the rest of ingredients like flour and oils/liquids then folding in the egg whites. It’s more fool proof for beginners alike as you don’t need to whip entire eggs together. It’s a very common technique to make a sponge cake. I’m Japanese and we make Japanese roll cake like this, not together with egg yolks and egg whites but we almost always separate egg whites then fold in later. In case of sponge cake we normally add hot melted butter (must be hot), and stir until no more flour. But her way works ok. She’s from Hong Kong. But this is a common Japanese roll cake. Inside we put strawberry cream or we also make matcha sponge cake and roll whipped cream like this. Make it like this and you get texture like this. It’s very moist fool proof way of making Japanese sponge cake. Btw adding lemon juice and salt is not commonly done in Japan. That’s foreign to me. We may add cream of tartar but not lemon juice and salt aside from sugar. It must be common there in Hong Kong. Also we don’t use this many egg yolks. It’s a bit lighter.
It's similar to Japanese cotton cheesecake which is based on a soufflé. You add the fats, then the flour fold in the egg white meringue. If you add fats directly to egg whites you won't get a meringue.
