    this recipe is so good, quick tip for people that don't have cake flour for this recipe just take out 1 tbs of the all purpose flour and replace it with 1 tbs of cornstarch ( do this for every 50 grams of flour).

      @@yoongisbigfeet3449I like it a bit eggy, otherwise you can put .5 tspoon of vanilla in or more but up to 1 tspoon to get rid of the egg taste or even put coffee or matcha powder. Sorry for late reply

    gut mit Schnebesen vermischt und 2 mal durchgesiebt (sehr gut vermischt)

    I wish I could see a close up of the crumb, because otherwise the baked consistency looks similar to a cheesecake, but very interesting.

      This type of cake is a very light and airy sponge cake with a texture similar to a brand new dish sponge - it's made in the same way a chiffon cake is made and it's so light and gentle because whipping the egg whites creates lots and lots of tiny little air bubbles. Despite it looking dense, it's probably the most light and fluffy type of cake there is! It's not as common in western bakeries but is a very common type of cake in East / Southeast Asia! A similar cake is the french genoise cake which is made by heating egg whites and sugar and then whipping them. Because of how light the cake is, it pairs perfectly with whipped cream and makes for a lovely dessert that isn't overly sweet. These fluffy cakes are definitely worth a try!

    Can someone kindly explain to me why adding the egg yolk at a later time yields different results vs: mixing the egg yolks in the beginning with the egg whites?

      She’s just mixing egg yolks with the rest of ingredients like flour and oils/liquids then folding in the egg whites. It’s more fool proof for beginners alike as you don’t need to whip entire eggs together. It’s a very common technique to make a sponge cake. I’m Japanese and we make Japanese roll cake like this, not together with egg yolks and egg whites but we almost always separate egg whites then fold in later. In case of sponge cake we normally add hot melted butter (must be hot), and stir until no more flour. But her way works ok. She’s from Hong Kong. But this is a common Japanese roll cake. Inside we put strawberry cream or we also make matcha sponge cake and roll whipped cream like this. Make it like this and you get texture like this. It’s very moist fool proof way of making Japanese sponge cake. Btw adding lemon juice and salt is not commonly done in Japan. That’s foreign to me. We may add cream of tartar but not lemon juice and salt aside from sugar. It must be common there in Hong Kong. Also we don’t use this many egg yolks. It’s a bit lighter.

      It's similar to Japanese cotton cheesecake which is based on a soufflé. You add the fats, then the flour fold in the egg white meringue. If you add fats directly to egg whites you won't get a meringue.
