I think when you squeeze the white better on top of chocolate batter , somehow mixed together. use piping bag and use hand to do it. make sure touch the bottom when you swipe the pattern.

Yes you can! but the pattern will be thin, wash your finger after is no problem , trust me ! finger make the pattern better!

I suggest maybe using chopstick or any kind of tools will be better to draw the pattern. It felt cleaner
you can do it also. but ginger can give you the feeling that you can touch the bottom and the friction around it to make the pattern looks better

you mean the top of the roll? try to bake at high temp for couple mins make it more cooked and don't let it lay on the bottom for too long

当然可以的 28烤盘 5个鸡蛋就可以了 预热烤箱 预热都是高出10度 然后送入后再调低 不调其实也没有问题的 我很多时候都不调的 很快温度就会上来了

1. 是等蛋糕放涼「微溫」時就捲嗎?
2. 我實際操作時表皮有點掉皮,但捲的時候又整個裂的很嚴重,是溫度太高嗎?因為蛋白的部份我有照老師影片確認沒有打過發。掉皮又開裂應該怎麼調整呢?謝謝🙏🏻
掉皮的话 你就不要倒放就好了 卷的时候裂 确保搅拌均匀 同时温度不要太高 我感觉你烤过了
給你小小貼示,我以前也是做瑞士卷,卷的時候裂得嚴重,其實瑞士卷想卷的時候唔會裂最重要是蛋白打發的程度,蛋白打至濕性發泡就好啦,即是打蛋器提起時有大灣鈎就可以,別打至中性發泡否則卷時會裂,丟皮的原因只係蛋糕面不夠干身才會痴住烘焙紙
