I THINK THAT IN THE BEGINNING IT DID HAVE SOME BUTTER FLAKES LEFT OVER FROM MAKING BUTTER BECAUSE FRESH UNPASTEURIZED MILK STRAIGHT FROM A JUST MILK COW WOULD BE STRAINED TO MAKE SURE THAT NO HAIRS FROM SWISHING TAILS AND TAIL SWATTED FLIES AND STOMPED DUST WAS REMOVED FROM THE MILK, THEN MY GRANDMOTHER WOULD COVER THE TOP OF THE JAR OR BOWL THAT SHE HAD STRAINED THE MILK INTO LEAVE IT SITTING OUT OF THE REFRIGERATOR TO LET THE BUTTER CREAM SEPARATE FROM THE THINNER MILK CONTENT THE BUTTER WOULD RISE TO THE TOP; SHE WOULD SPOON THAT INTO A QUART CANNING JAR AND GIVE THE JAR TO US GRANDCHILDREN TO SHAKE, ""YOU HAD TO WORK IF YOU CAME INSIDE"" IT REALLY WASN'T HARD WORK BUT THE JAR HAD TO BE SHAKEN UNTIL ALL THE BUTTER PARTICLES WERE STUCK TOGATHER FORMING BUTTER, AND ALL THE KIDS THAT WERE INSIDE (NO AIR CONDITIONER, JUST OPEN WINDOWS AND A FAN) GOT THEIR TURN OF SHAKING THAT JAR TO MAKE THAT BUTTER😅; THE LIQUID WAS POURED BACK INTO THE ORIGINAL STRAINED MILK TO SIT AT ROOM TEMP, TO 'CLABBER' THOUGH MOST OF THE BUTTER CREAM WAS REMOVED THERE WOULD STILL BE SOME LEFT BEHIND, GIVING THE 'CLABBERED' MILK A RICHER TASTE, THUS.........
