Greetings from California. I appreciate your emphasis on the healthy ingredients you use, but not sure of using cream with its high fat content. Is there something else I could use? Plant based milk? Olive oil?

Born and raised in Germany and never ate an Eggplant until I meet my husband from CA . So no Eggplant wasn’t a vegetable we ate when I was growing up !

I didn’t say I never had Eggplant , but it wasn’t a vegetable we grew up with . I’m almost 60 years old and neither I or my Parents ever had Eggplant until I got married . Eggplant (Aubergine) wasn’t even available in any out Grocery stores those days .
