    I initially was making Buddha Bowls but it all looked so crazy in one bowl so I show you them in little bowls. My favourite way to eat these meals is ALL TOGETHER! Literally was on cloud 9 munching through all the recipes. Hope you guys like the recipes! xxxx

    This is a big Buddha bowl feast! Everything is delicious. Never thought of using artichoke for the saltfish. I would add some ripped up nori and dulse too. Gives it that "fish" flavor -- if that's what you're looking for.

    Doubles or roti, either way...this was awesome, Rachel. I soo need to get on sharing my family's vegan Trini recipes. Some tamarind sauce on the channa, or some mango chutney on top of that salad?? With a drop of kuchela?? Yum! Oh, and I stan soo hard for Chief curry powder...seriously the best out there. I highly recommend it (it's on Amazon). Thanks for this!! 💚

      Rachel Ama No prob! I grew up in Trinidad with a mango tree and a coconut tree in my Granny's backyard and weekends were mango chutney/curry mango/red mango/kuchela (and soursop ice cream!!!) making time and I was her little helper, so my kids are obsessed with all those things now, lol! ALSO...Matouk's green seasoning is great with Caribbean-inspired dishes too. It's perfect for when you're in a pinch and don't have time to prep your seasonings. It's another Trinidad-made product that I grew up seeing in my Granny's kitchen. She had her own special green seasoning recipe that she'd keep in a glass bottle too of course, but Matouk's was an awesome option as well. Thank you so much for your videos, btw. You are a treasure!!

      Thanks for sharing this I'm not vegan but I've been vegan on some days lol. I'm carribean and it's good to see how to incorporate carribean flavours in a vegan way. I love the roti idea!! I've got to make that now can I use a normal frying pan?

      you can, depending on the size of your pan, you might need to make the roti a little smaller so it fits and gets an even distribution of heat 🧡

I have been craving fish cakes (that’s what we call the salt fish fritters in 🇧🇧Barbados🇧🇧 )since I became vegan and it’s really great to find some West Indian vegan recipes to make the transition more familiar.     Try a nice size wine bottle as a rolling pin. I think I let someone borrow my actual rolling pin and been using the wine bottle every since.

    Instead of frying the plantain all the time you can spray a light coating of vegetable spay on a tray or silicone sheet lightly salt with sea salt and spray the top of the plantain also and bake in oven it comes out sweeter and less fat and not oil you will not have to pat dry or lay on paper towel.

    Okay so I made the fish fritters for dinner and OMG IT IS AMAZING AND THE SALAD ...OMG..I MADE A ORANGE JUICE DRESSING WITH IT SO GOOD AND I ADDED BREAD CRUMBS TO THE FRITTERS ...ON FLEEK ..STRAIGHT POPPIN ..ALL THA WAY!!!
