Hi Rachel. I have been using home made yogurt rather than tahini in our humus. I also boil the soaked peas for 90 minutes. I use skins and all in the humus. The add ins are then similar, garlic, lime or lemon juice, olive oil and spices. I blend this in a ninja. The humus is smooth and excellent. John

You can make your own tahini if you have a high speed blender. Just add the sesame seeds and then add enough oil (sunflower or sesame) to get it moving. Use the plunger if you want or just add more oil.

You don’t want to keep the chickpea soaking liquid. It’s the chickpea cooking liquid you can use later. Traditionally, you soak the chickpeas with a teaspoon of baking soda, then drain and rinse, then boil with another teaspoon of baking soda for at least 45 minutes, and you DO want them to get mushy. They should be completely falling apart. The skins will boil to the top and you can scoop them out. Also, traditionally, you blend the garlic, lemon juice, and salt before anything else, let it sit for like 10 minutes to infuse the lemon juice, then strain the solids out. Though, of course, you don’t have to, it’s your choice. Then you blend the tahini with the lemon juice and a small amount of ice cold water, then add the over cooked chickpeas. That’s how it’s generally done throughout the Middle East.

get hulled tahini for the lighter and more pleasant taste, unhulled tahini gives the bitterness because the skins are still on the seed :)
