I’m 100% italian and been cooking for going on 60 years. Did it all like my mom and grandma. But I have learned, from you, there are more ways to make the favorites. I’m sure mom and grandma wouldn’t mind.
Hi Carole , There are so many great recipes out there that vary from region to region in Italy , I glad that you are enjoying my family recipes that my great grandmother taught us !! 😊
I make mine almost exactly like yours, wet bread and all. I only do 2 things differently. I add fresh basil and use an onion/garlic combo. Otherwise, I’m ingredient for ingredient. I just LOVE your channel. Binging it right now!
The Polish ARE the Italians of central europe. Creating good food, hard working in small businesses, and they dress elegantly and handsomely. They even gave us a Pope.
To keep food containing onions or and garlic from tainting ice cubes when freezing put food that is solid wrapped in parchment then plastic wrap then wrap in foil then into freezer if it's not solid food AS LONG AS YOU PUT FOIL WRAPPED AROUND THE COVERED FOOD THE GARLIC AND ONION ODOR WILL BE NEUTRALIZED BY THE FOIL... JUST LIKE ONIONY OR GARLICKY HANDS FROM COOKING A MEAL WASH HANDS IN WARM WATER AND SOAP AND TOUCH THE FAUCET COMPLETELY WIPING FINGERS AND HANDS OVER THE METAL AS IF YOU ARE WASHING THE FAUCET.. THIS WILL INSTANTLY GET RID OF ONION AND GARLIC SMELL FROM HANDS...
I am definitely gonna try making meatballs this way. I could almost taste them, thru the Internet, from halfway 'round the world in New Zealand. Quite a few really great ideas in this video. And the dialog is priceless! Nicely, nicely done, Kenny!
Love watching you a d feeling the love ❤️ and passion you have for cooking! I watch these "reality" recipes to pick up tips and family secrets to try not because my gravy or sugu and meatballs aren't already first class almalagamations of everything I have learned and love. You have one or two things that suprise me in every one of your great recipes. Thanks for sharing your love ❤️.
you are very welcome ! i’m so glad you found sone snippets in my videos to help you. we have a new round of filming coming up soon so definitely more to come soon 😊
Been making the gravy (we call it sauce) and meatballs, almost just like yours, for decades but I learned a few things from you that I will do next time. I will season each can of tomatoes, add baking soda to the gravy to cut the acid and I will cook my meatballs in more oil. I’ve been frying them in too little oil. I also cook homemade Italian sausage before the meatballs and add both to the gravy. It’s how I was taught. The sausage flavors the meatballs and the sauce and vice versa. Some of my family likes the sausage, some the meatballs. I also use about nine cans of tomatoes and I freeze in batches for later. I chop some meatballs and sausage to make meat sauce for lasagna. It’s to die for. You must be the real deal cause a little old Italian lady taught me almost identical to what you do. Saving your videos and I will subscribe.
Hi Belle , we definitely love sausages , braciole and a good piece of pork .. but i usually portion this big pot out for storage and later use and will put my meet in them for a sunday dinner …. if you store it meat free you can use it for other recipes like vegetarian eggplant parmigiano or seafood recipes like red clam sauce …. i hope you enjoy all our family recipes 😊
@@livelaughandcookitalian thank you. I remove the sausage and meatballs and store them separately from the sauce just for that reason. Some is dedicated to lasagna, some to chicken or veal parm. Love having a freezer full.
Yes I definitely will ..my production guy told me the same thing ....I am going to go back and add it to all the video this week. .I'm glad you enjoyed them !
Thank you so much for this incredible video. I made meatballs last Sunday and followed your recipe and technique as much as possible and they came out PERFECT. My family loved them and are already asking me to make them again. Thanks again!
Hey Joe I’m so glad your family enjoyed my meatballs ! I have the same issues with the meatball requests so I normally make a triple batch and freeze them for later. Hope all is well.

We are getting a Trader Joe's here in Murfreesboro, TN They have one in Nashville but I do my best to not go into Nashville. Bears, to keep them out of the garbage. I glad you and your wife making good memories. God bless you, your wife and family.
Same here; watched, listened, learned; My Gram , From Calabria; made them will all beef, , "day old" hard crusty Italian bread, soaked in water; eggs, onions, parsley s&p,garlic ,breadcrumbs , grated pecorino, etc; LOTS of bread, I only realized later in life, was a way to make them "go further" when feeding a family. ( Calabria and even during the depression in NJersey, times were tough; ) The bread does make it taste superb,; Fried some meatballs( cast iron skillet) made others in the sauce.
Ok! I had to subscribe when I saw this video. It showed up on my suggested videos screen. So glad I decided to click on it. Then I had to watch you make the gravy to go on them!
Welcome to our Channel , so glad you enjoyed my meatball and gravy videos … Hope you enjoy the others and stay tune for some new recipes coming out soon … !
Hi Kim , so glad you are loving our recipes ! Are you neapolitan ? I find that many recipes are regional we have a very heavy influence from Montefalcione, Avellino where my great grandparents came from
Was fun watching your video. You are the only one I've seen using water just like i do!!! I've made my meatballs with milk and made em with water. Can't tell the difference!! Look forward to watching morre of your recipes
Hi Patty-jo , i’m glad you enjoyed it ! We never used milk , always water …not sure why and i usually don’t question the masters that taught me 😊..I hope you enjoy my other videos and recipes
Have tried several of your "recipes" and am always amazed at how good everything is. Without exception you hit it out of the park every time. Thanks for your videos and now all we need is a cook book.
Thank you Al , it’s great to hear you are enjoying my family recipes .... my great grandmother really knew her stuff when it came to cooking and I’m still considering a cook book 😁
Great recipe...I made them...Everyone loved them ❤ thank you...I get tired of trying to perfect my grandmothers recipe...my meatballs NEVER come out as amazing as hers...but your meatballs are awesome...thank you so much...I will stick to this recipe ♡
Good recipe. I see a lot of people add onions to meatballs. In Italy, nobody adds onions to meatballs. Your recipe is more authentic Italian. Nice work.
This is Exactly how I was taught by my Mom! I make my meatballs in a few different ways these days and I make my Gravy and love Canning it to always have in hand! Canning my Sauce/Gravy I make very large batches for Canning several times a year. 🏝️🎶🤗
Hi Diane Very nice to meet you ...it’s ya tried and true meatball recipe ...and I do the same thing with my gravy ...it’s Episode 1 😁....hope all is well
Kenny, you're awesome and I really enjoy your stories and entertaining nature. I was trying to replicate my grandmother's meatball recipe and your's has so many great tips, it came really close... How close? "About that much"!
I just made these. They were like biting into a heavenly cloud with garlic, parsley, and cheese.😅😅😅 really good recipe, i will keep it in my Arsenal. I used beef. For some reason, veal is impossible to buy in Oklahoma.
Hi Jack , love hearing you enjoyed my recipe !! If you can’t find that prepackaged tri mix of beef , veal and pork … then try a 60% beef / 40% pork mixture
Wow, Meatballs, yipeee love your meat combination! Wish I could give you a thousand, more than a thousand, maybe a gizzillion, thumbs up, but i always make sure to hit the like button, remind everyone at the end of your videos to do that!
Kenny, great meatball recipe. Almost identical to mine. I use dried bread crumbs that I hydrate with milk to add moisture to the meatball mixture. I also fry my meatballs in an olive oil/canola oil blend. The olive oil has the flavour and the canola oil takes the high heat. Bravo! 🇮🇹🇨🇦
Glad you enjoyed it ...meatballs are one of my family's favorites .!! ..my grandmother is 92 ..she still makes meatballs and uses all canola oil to fry 🇮🇹
I like the "hybrid" reference; I took in all the ways my family have made them over the years and I believe 😅 mine are the best too! 😅 Very similar to my process; I use 4C breadcrumbs (this brand is a must....it's the Brooklyn roots in my family 😅), heavier on the breadcrumbs and less on the wet bread, I put in a little milk, only use romano grated cheese, a little heavier on the parsley, and.......I throw in some pinoli nuts. And I only brown them in olive oil and then submerge them in sauce to continue cooking. The other week, I made several batches of lasagna and my non-Italian wife asked me why I made a batch of meatballs the day prior for the lasagna and not a "meatsauce" the day of when making the lasagna. I gave her the look 😕. I said I'm not making booster club lasagna! 🤣
Thank you very much , i’m glad you are enjoying our videos and recipes. I usually put them in for 30 to 45 minutes … I will time all my meats accordingly, so if I’m making braciole or putting pork in there those will go in first after being PNC and they will usually put those in for an hour to an hour and a half then if I’m putting in sausage that will go in for a half hour then at the end I will put in the meatballs for a half hour to 45 minutes until they are tender and then it’s ready
I will make this for sure. Well planned out recipe and I enjoyed it. I like to put a dusting of flour on mine before frying them and I recently started letting them steam in a metal colander over the sauce after frying just like my mother used to. Right out of the colander as a kid is how I ate them! Will combine these into a Stromboli for sure
Love your channel Kenny. Just made your gravy and next these meatballs. Couldn't help but notice those amazing pans your sauce is in. Are those KITCHEN CRAFT from WEST BEND by chance. Sending kudos from St.Paul Mn
Hi Anthony , So glad you are enjoying my channel , You are going to love those meatballs ! I will have to take a look and see which pan i used and what brand it is … hope you enjoy all our recipes Kenny
Looks delicious. Just helped mom make meatballs this past Sunday. We don't use the wet bread and don't bother mixing the eggs. Mom always just broke em and plopped them in. They all mix in good anyway.
Hi Lorena , nice to meet you ! I’m so glad you are enjoying my videos…. You can find all the written recipes in the video description box for every video
I make mine almost just like yours, except I use milk on bakery italian bread without preservatives. I find the white bread gets too gummy. I try "shredding" it with a fork before I mix it in, makes it easier. Love the hybrid idea
Would you please show us how you mince your garlic? My organic bulbs i buy do not seem to have as large pieces as you get to actually do all those cuts b4 starting to mince. Are you using elephant garlic bulbs? Which i have never found organic.
@@livelaughandcookitalian yes Kenny I know that! Lucky woman. A man that can cook!!!! If you clean and do laundry, the MRS must be in heaven!!!! Thank for your show. Learning alot!!!!
Is it half cup of pecorino romano and half cup of parm cheese ... or half cup total of both. The video only mentions parm cheese. Just want to check, so I have it correct.
Absolutely love your videos! Made your gravy.. None freakin better! Where the hell can I buy a mix of all three meats? I live in Portland Oregon and veal is hard to find.
Hi Trent ...I’m happy to hear you enjoyed my family gravy recipe ....I usually buy the tri mix in my local supermarkets like stop and shop or market basket ...it’s by the ground beef section and will say meatball or meatloaf mix ...if you can’t find it as the meat department to grind you some veal and them buy equal parts of beef and pork ...hope you can find it
Awesome!!! I found your meatball recipe!!! Hey I have a tip for you...put some parchment paper on a cookie sheet...put olive oil on the cookie sheet...put your meatballs in the oven for about 15 to 20 minutes depending on how big...your family wont know the difference...trust me lol
Thank you ..my father bakes his as well ( and they are delicious ! ) and I have tried it myself ..but I still make them like my mother and fry them ...just tradition I guess 😁
I did a taste test with no sauce and five out of nine preferred the pan meatballs, two preferred the oven balls and two didn't care which! All enjoyed them!
Hi Judy , it’s one of the first videos on my channel . It’s actually a Masterchef audition video where I talk about the dish to Masterchef producers . Here is the link ruclips.net/video/cbFCRuG7SwU/видео.html
Very nice to meet you Judy , I’m so glad you are enjoying my videos and recipes .... I have not been since 2019 and miss it very much .... I was named American ambassador to Sciacca Sicily and it’s still not been able to go to receive my plaque I’m hoping to go this year
Omgosh. Ok, so we eat out a lot. We cook A LOT ! My younger brother has eaten in many many fine restaurants across the USA. And he likes my cooking. He could not believe these meatballs. They were amazing. We cooked the leftovers on pizza the next day !!!! My only variation was I divided the bread crumbs in half(I used a little more because I skipped the bread) and soaked half the bread crumbs in milk until the consistency of the bread, so happy I found you on you tube
@jeffhansen9157 , it really makes me smile that you guys are enjoying my meatballs !! I know my great grandmother is looking down and smiling, know that everything she taught me is being passed on to so many. I hope you try more of my family recipes and please feel free to reach out if you ever have any questions … hope you have a wonderful holiday season Kenny
I just subscribed to your videos and can’t wait to make your meatballs. Just one question, though. Your video mentions you use Parmesan cheese, but your recipe mentions Parmesan and Pecorino Romano. I think the video would be correct, but as you mentioned in your video, this is a hybrid of the different family recipes.
Welcome ..I’m so glad you are enjoying my videos ...actually the written recipe is correct with the mix of Parmesan and pecorino Romano....I didn’t realize I left out the pecorino Romano in the video until the editing stage and it was too are to reshoot ...but they will be perfectly fine with just Parmesan if that’s all you have ....let me know if you have any other questions and how they come out ..enjoy !! 😁
That’s the way we were taught by my great grandmother from Avellino....I think the milk is a preference and/or different family recipe....I can tell you I’ve had meatballs where milk was used and I could not taste a different
I was taught that the less you work the meat the more tender the meatball? I don’t know if the recipe is different and then the preparation is different? When I first started cooking I found that the meat was dense and maybe even dry because of me overworking the meat. This goes for meatballs, hamburgers, Salisbury steaks, and meatloaf. Pretty much anything that you are using ground/minced meat. I also use the three types of ground meat for my meatballs (ground beef, pork, and veal).
Made the meatballs and gravy today. Feels great to be Italian! Thank you for the great recipes.
So glad you got to make them...I'm sure they were fabulous ..and yes ..Great to be Italian ! 😁

this full Polish girl enjoyed your recipe. I must have been Italian in a previous life. Though my hubby half Italian & German. oh so good

This is by far the best recipe I've seen that is like the most sacred meatballs.

when you grate the garlic you lose a lot to skin and heel and you do need to grate some and chop some for the right taste profile 😁

So glad you are enjoying my channel , You are going to love those meatballs ! I will have to take a look and see which pan i used and what brand it is … hope you enjoy all our recipes
Kenny
Looks delicious. Just helped mom make meatballs this past Sunday. We don't use the wet bread and don't bother mixing the eggs. Mom always just broke em and plopped them in. They all mix in good anyway.
Thank you ! So many great recipes out there 😁
Looks delicious
Try making them ...they will definitely impress you ! 😁
Outstanding!
Thank you, glad you enjoyed it !!
Making these today for dinner I can’t wait
I hope your family enjoys them ...Let me know how they come out
Could I get a recipe for the meatballs? Love your videos
Hi Lorena , nice to meet you ! I’m so glad you are enjoying my videos…. You can find all the written recipes in the video description box for every video
you are hilarious...gonna try this with your gravy recipe
hope you enjoy them !!
Love your Big Apple dialect, mate. Lol!
it’s actually a Boston accent 😊
I make mine almost just like yours, except I use milk on bakery italian bread without preservatives. I find the white bread gets too gummy. I try "shredding" it with a fork before I mix it in, makes it easier. Love the hybrid idea
Thank you Cindy , I’m glad you enjoyed it...if I have scali bread on hand I would use that as well 😁
I use lactose free milk
Damb, you made me so so hungry! Thank you very much!
Glad you enjoyed it ! 😁
Can’t wait to try this! How many eggs would I use with 3lbs of meat?
Hope you enjoy them ..3 to 4 eggs pending size for 3 lbs
Would you please show us how you mince your garlic? My organic bulbs i buy do not seem to have as large pieces as you get to actually do all those cuts b4 starting to mince. Are you using elephant garlic bulbs? Which i have never found organic.
i show you the garlic grating dish i use and how i use it in the meatball video …and i use regular fresh garlic bulbs
LOVE IT
Thank you ..glad you enjoyed it ! 😁
20 min is the total cook time in the red sauce?
I would say a half hour to 40 minutes ... until your desired tenderness
I use milk, not water, and italian bread.
Yup, me too!👍🏼
He knows more than we do
My mother used to save me 2-3 right out of the pan - SOOOOOOOOOOOOOOOOOOOOOOOOO GOOD!!!
we eat a good portion right out of that bowl too 😊
Been waiting for your meatballs!
Hope they live up to the hype buddy..! 😁
Kenny, marry me!!!!!!!
@@luciapelosi4678 .. Thank you but I'm already married 😁
@@livelaughandcookitalian yes Kenny I know that! Lucky woman. A man that can cook!!!! If you clean and do laundry, the MRS must be in heaven!!!! Thank for your show. Learning alot!!!!
@@luciapelosi4678 I actually do clean and do Laundry and I think my wife is a pretty happy camper .! 😀
Is it half cup of pecorino romano and half cup of parm cheese ... or half cup total of both. The video only mentions parm cheese. Just want to check, so I have it correct.
It is a half cup of each .....if you ever need it , the ingredients list is in the video description box below every video ...happy new year !
when you freeze them, is it after you cook them or raw?
I freeze them after I fry them ...then to use , I will put them in the sauce/gravy frozen and heat them until desired tenderness
If the trio package of meat can't be found, how much of each to get the 2lb?
33 % of each
@@livelaughandcookitalian Your the "BEST" Thank you
You are very welcome !
Absolutely love your videos! Made your gravy.. None freakin better! Where the hell can I buy a mix of all three meats? I live in Portland Oregon and veal is hard to find.
Hi Trent ...I’m happy to hear you enjoyed my family gravy recipe ....I usually buy the tri mix in my local supermarkets like stop and shop or market basket ...it’s by the ground beef section and will say meatball or meatloaf mix ...if you can’t find it as the meat department to grind you some veal and them buy equal parts of beef and pork ...hope you can find it
Which Market Basket? The one over in Salem only has the beef, pork mix as the meatloaf mix.
The have the tri mix in the Reading market basket and they usually have it at stop and shop too
Awesome!!! I found your meatball recipe!!! Hey I have a tip for you...put some parchment paper on a cookie sheet...put olive oil on the cookie sheet...put your meatballs in the oven for about 15 to 20 minutes depending on how big...your family wont know the difference...trust me lol
Ps...flip them half way through
Thank you ..my father bakes his as well ( and they are delicious ! ) and I have tried it myself ..but I still make them like my mother and fry them ...just tradition I guess 😁
I did a taste test with no sauce and five out of nine preferred the pan meatballs, two preferred the oven balls and two didn't care which! All enjoyed them!
I'm here for the meatballs 😉.
It was such a pleasure to meet you Stephanie ! You will definitely enjoy my meatballs !
Just like what you said what the heck are you doing? But I like it yummy!
I can’t seem to find the video about the garlic grating dish, but I’d love it if someone could link it!
Hi Judy , it’s one of the first videos on my channel . It’s actually a Masterchef audition video where I talk about the dish to Masterchef producers . Here is the link ruclips.net/video/cbFCRuG7SwU/видео.html
I am loving your videos. Just got back from Italy two days ago. Mangia!
Very nice to meet you Judy , I’m so glad you are enjoying my videos and recipes .... I have not been since 2019 and miss it very much .... I was named American ambassador to Sciacca Sicily and it’s still not been able to go to receive my plaque I’m hoping to go this year
What is the amount/weight of meat .
2 lbs of tri mix
if you go to the video description box on any of my videos, all the ingredients will be listed there for reference
@ thanks man. Very funny and an excellent recipe. Looking forward to chicken limone next week after vacation ! Take care
let me know how it comes out !!
I hope you try more of my family recipes and please feel free to reach out if you ever have any questions … hope you have a wonderful holiday season
Kenny
You do like my mothers in-laws family from central Italy
These are definitely made very close to the same way my great grandmother from Avellino made them
9 eggs for tripple batch?
yes
I'm back lurking about watching food videos. 😸
I have some real good ones on here ...let me know what you think of them
I just subscribed to your videos and can’t wait to make your meatballs.
I keep going to your site and cannot get the recipe ! 😮
The ingredients list is in the video description box , under the video on RUclips
Why don’t you wet the bread in milk? Is there a reason water is preferred?
I use the same 3 meat mix
