I made this recipe for my sister and I. We really liked it! The only difference is I used beef only & dry parsley instead ( bcs that's what I had on hand but next time I'll use fresh). Watching this video made me think of my dear dad who passed on 13 yrs ago. My family always did things from scratch so watching Chef Pasquale brings some great memories to mind. I love the Italian accent. My gram had a strong accent too and I miss hearing her talk or as others would say yell...lol. Chef Pasquale ur meatballs look delicious. I make mine similar but I drop them in my sauce bc I cook my sauce for hours so when the sauce is done so are the meatballs. Thank you for a nice trip down memory lane. I miss my family so much.

I use to taste the Raw chop meat also Growing up Today only if it's fresh ground from the Meat Dept, & not Packaged Meat etc.Reason being, You do not know, How long it's been laying in the Meat Case Dept etc.

Thank you Chef Pasquale! I used 1/4 C mix of parsley and Italian seasoning, 1/4 tsp black pepper, 1 C bread crumbs; added 2 tbsp tomato paste and 1/2 C chopped white onions. Baked for 20 minutes. Delicious! This recipe is very close to my (Irish-American) mom's meatloaf, which I now claim as my own. 👍 and subscribed!

Truthfully cooking doesn't need to be exact measures..... baking does though off by a little bit when baking will change the outcome, but cooking generally doesn't need to follow strict rules. Even his oven at 400 for 15 mins could be oven at 425 for 10 mins, or 350 for 20 minutes. Whatever you are comfortable with as long as you get there. The wrong measures is the difference between a good cake or a bad cake in baking, But with cooking it's all about taste and you do what you like to taste.

This is the default recipe almost everybody in Italy is using, except for the way the balls are grilled, fried or put in the sauce right away. It is much easier to fry the balls in a pan by the way, no difference in taste and no hassle. Size depends on where you come from. Make sure there is enough moisture in the meat and it is at room temperature. And use Italian bread, soaked in some water or milk. We normally use some stale bread or leftovers.

Chef, as soon as you said “the sauce has to go inside” I smiled. The way I make my meatballs let’s them absorb the sauce. I’ve had restaurant meatballs or even friends invite me over for their meatballs only to bite into something as chewy as an eraser and tasteless. They do it all wrong and then roll the thing so tight it doesn’t absorb any sauce. I may voice my complaint at the restaurant but never at my friends dinner table. Sometimes I’ll make them a little too loose and they start to split up. I put those aside for myself (maybe a midnight cold meatball sandwich with a glass of sparkling grape cider). I do not eat pork and most meatball that is in freezer bags in the grocery store already have pork in it.The turkey meatballs I didnt care for the taste. However I love this homemade recipe.I did chop my onions,added to the ground beef along with Greek seasoning,pink salt(only salt I use) and sage to amp the flavor.Oh and yeeees I put my foot in the sauce and everything was delicious.Words can not Express my appreciation !

My grandma was from Calabria and only she would make meatballs a certain way. She would use stale Italian bread that she rehydrated with a bit of water and she rolled into little tiny balls. She used that instead of breadcrumbs and she would pan fry her meatballs until they get a crust on them. Then she would add them to the sauce. The meatball had a harder consistency and was unique. Everyone else would do it the way he shows. My wife is Portuguese and she makes meatballs out of Turkey meat and she uses finely shredded carrots and onions in hers and sometimes adds a bit of sauce to the meat to add moisture. That’s also what the shredded carrots and onions does. She adds breadcrumbs too and everything else is the same as Pasquale. I have learned to prefer hers over my families method. My family is half Sicilian and half Calabrias
Remember though, he ground the meat himself from steaks, so it’s ok he tasted it raw. Personally, I wouldn’t taste raw stuff that you buy pre-ground....
Good advice. In Italy the meat is controlled so (except for poultry meat) it's safe to taste it. Also I perfected my meatball recipe and just today I found out Chef Pasquale and I share the same recipe without knowing! (so now I know mine are good)

By the time the video was over my mouth was watering. I'm now a liker and subscriber! Now, by following your directions, I can cook genuine Italian meatball that are very authentic. Quick and easy, even for me! I'll recommend this channel to my brother in law. He's the real cook in the family.
No quick searing of the balls in a pan? I like mine with a slight crisp on the outside. 10min in the oven then a 1 min tumble in a fry pan for a quick sear on the outside. That being said, I'm not legit like this dude.
You could also do 15 min in the oven normally, and broil for the last 5 min. Depends on the texture you want, really. Since he's cooking the pork bone in the sauce, the sauce is gonna have a strong meaty and umami flavor already though.
Yep. Mama used to fry hers in a cast iron skillet.. now she cooks them in the oven and “finishes” them in the sauce. ( says it’s healthier for you ). Lol.
MonsterMetalManiac I make them the same way as your mama. They get nice and crispy on the outside. Then, I add in a half a cup of good red wine and scrape the bottom of the skillet to deglaze it and get that flavor, then I dump it into the sauce. It ends up being only like 1/3 cup after deglazing but al of that flavor is amazing.

Make "meatball heals" = get some nice soft rolls (not too long) cut them in half and hollow out the bread on both ends making a "nest" for each meatball inside the ends (heals). This gives you less bread = less filling and more meatball per bite. Try it, you'll like it---thanks Chef Pasquale!

TX GABBY yes sir. Absolutely no difference between raw meat and cooked meat of any kind. If the bacteria were already there, reproducing, no amount of cooking is going to kill the toxins they left behind. Meat that makes you sick raw will also make you sick cooked.
This is exactly how I make meatballs , but I put non stick foil on my cookie sheet. Easy clean up & no sticking ❤ I’m from a town called Frontenac, KS . It is full of Italians & they taught my mother to cook.

When I was a kid we ate this spaghetti and meatballs every week, sometimes the leftovers lasted 3 meals, but we were poor and we used pork neckbones. my father liked them. the meatballs where all beef with Left over Italian bread, Garlic, salt egg and some oregano. You could taste raw beef then but no way will I do it now unless I killed the animal and wouldn't taste raw pork. When our kids were growing up, we ate this type dinner twice a week, We preferred it to turkey on thanksgiving. When you went outside and walked down the street, that's all you could smell. Those were the days. Now I am as old or older than Pasquale.
You could have used parchment paper to avoid the meatballs sticking. Also i like to use soaked bread mixed very well in to the meat rather than crumbs.
I use 3 slices of bread with the crust removed per three pounds of ground beef ( my favorite is potato bread). I dip the bread in milk or half and half in a bowl. I squeeze out all of the excess liquid, and then tear up the soaked bread into the mix. I also add about 4 oz. of tomato sauce to my mix. I still use about half of his amount of bread crumbs just to help keep them tight yet soft. I probably use more grated cheese, and if you have FRESH Oregano from the garden, a 1/4 of a cup will add a wonderful aromatic flavor. Don't try this with dried oregano, it's not even close to the same. Oterwise my recipe is pretty close, but I still love to fry them in a cast iron skillet in 3/4 corn oil, and 1/4 extra virgin olive oil mix. Only fill the skillet with a half inch of oil. Get it nice and HOT, then fry 10 at a time; don't crowd the pan. Leave em pink inside to finish cooking in the gravy. Unless of course your gonna eat one without sauce. Then cook it all the way through. They crack open perfectly with the touch of a fork. 😋

My grandma was from Calabria and only she would make meatballs a certain way. She would use stale Italian bread that she rehydrated with a bit of water and she rolled into little tiny balls. She used that instead of breadcrumbs and she would pan fry her meatballs until they get a crust on them. Then she would add them to the sauce. The meatball had a harder consistency and was unique. Everyone else would do it the way he shows. My wife is Portuguese and she makes meatballs out of Turkey meat and she uses finely shredded carrots and onions in hers and sometimes adds a bit of sauce to the meat to add moisture. That’s also what the shredded carrots and onions does. She adds breadcrumbs too and everything else is the same as Pasquale. I have learned to prefer hers over my families method. My family is half Sicilian and half Calabrias
Remember though, he ground the meat himself from steaks, so it’s ok he tasted it raw. Personally, I wouldn’t taste raw stuff that you buy pre-ground....
Good advice. In Italy the meat is controlled so (except for poultry meat) it's safe to taste it. Also I perfected my meatball recipe and just today I found out Chef Pasquale and I share the same recipe without knowing! (so now I know mine are good)

By the time the video was over my mouth was watering. I'm now a liker and subscriber! Now, by following your directions, I can cook genuine Italian meatball that are very authentic. Quick and easy, even for me! I'll recommend this channel to my brother in law. He's the real cook in the family.
No quick searing of the balls in a pan? I like mine with a slight crisp on the outside. 10min in the oven then a 1 min tumble in a fry pan for a quick sear on the outside. That being said, I'm not legit like this dude.
klesh Our family fries fast on outside to get a crusty outside rhwn drop in gravy and simmer til tender.
You could also do 15 min in the oven normally, and broil for the last 5 min. Depends on the texture you want, really.

Yep. Mama used to fry hers in a cast iron skillet.. now she cooks them in the oven and “finishes” them in the sauce. ( says it’s healthier for you ). Lol.
MonsterMetalManiac I make them the same way as your mama. They get nice and crispy on the outside.
Then, I add in a half a cup of good red wine and scrape the bottom of the skillet to deglaze it and get that flavor, then I dump it into the sauce. It ends up being only like 1/3 cup after deglazing but al of that flavor is amazing.

Bravissimo Pasquale. The recipe is an authentic Italian recipe. I suggest to cook them fried instead of in the oven
Make "meatball heals" = get some nice soft rolls (not too long) cut them in half and hollow out the bread on both ends making a "nest" for each meatball inside the ends (heals). This gives you less bread = less filling and more meatball per bite. Try it, you'll like it---thanks Chef Pasquale!

TX GABBY yes sir. Absolutely no difference between raw meat and cooked meat of any kind. If the bacteria were already there, reproducing, no amount of cooking is going to kill the toxins they left behind. Meat that makes you sick raw will also make you sick cooked.
Trusted raw hamburger and eggs will not hurt you. I’m 65 yrs old and still alive.
This is exactly how I make meatballs , but I put non stick foil on my cookie sheet. Easy clean up & no sticking ❤ I’m from a town called Frontenac, KS . It is full of Italians & they taught my mother to cook.

This is exactly how my high school best friend's dad did Meatballs and tomato sauce. And their last name was Veneziano. So, you know, it's Italian.
When I was a kid we ate this spaghetti and meatballs every week, sometimes the leftovers lasted 3 meals, but we were poor and we used pork neckbones. my father liked them. the meatballs where all beef with Left over Italian bread, Garlic, salt egg and some oregano. You could taste raw beef then but no way will I do it now unless I killed the animal and wouldn't taste raw pork. When our kids were growing up, we ate this type dinner twice a week, We preferred it to turkey on thanksgiving. When you went outside and walked down the street, that's all you could smell. Those were the days. Now I am as old or older than Pasquale.
You could have used parchment paper to avoid the meatballs sticking.
Also i like to use soaked bread mixed very well in to the meat rather than crumbs.
I use bread too. They come out so soft!
I use 3 slices of bread with the crust removed per three pounds of ground beef ( my favorite is potato bread). I dip the bread in milk or half and half in a bowl. I squeeze out all of the excess liquid, and then tear up the soaked bread into the mix. I also add about 4 oz. of tomato sauce to my mix. I still use about half of his amount of bread crumbs just to help keep them tight yet soft. I probably use more grated cheese, and if you have FRESH Oregano from the garden, a 1/4 of a cup will add a wonderful aromatic flavor. Don't try this with dried oregano, it's not even close to the same. Oterwise my recipe is pretty close, but I still love to fry them in a cast iron skillet in 3/4 corn oil, and 1/4 extra virgin olive oil mix. Only fill the skillet with a half inch of oil. Get it nice and HOT, then fry 10 at a time; don't crowd the pan. Leave em pink inside to finish cooking in the gravy. Unless of course your gonna eat one without sauce. Then cook it all the way through. They crack open perfectly with the touch of a fork. 😋
