  • Well it sure is a long video..But do take the time to watch :) Not only will you get to try the best vegan meatballs. But you will get to know the reason behind my recipe. So thank you ahead time , it is long but it is also worth your while!!!

    1 cup vital wheat gluten
    1 tbsp. mushroom powder
    2 tbsp. chickpea flour
    1/3 teasp. nut meg
    1/4 teasp. clove
    1/4 teasp. sage
    1/2 teasp. salt
    1 TBSP caribbean spice with roasted garlic
    1/3 cup tvp
    1/2 cup soy milk powder
    1/3 cup panko bread crumbs
    1 large portobello mushroom
    1/2 a small onion chopped
    1/2 cup chopped parsley
    2 cloves crushed garlic
    mix all dry ingredients...
    then add
    1/2 cup water Plus 1/8 cup
    3 TBSP olive oil
    2 tbsp. pesto ( basil )
    mix everything together...and form meatballs..
    in a small plate add some vital wheat gluten and roll ur meat balls in it. u should have about 22 meat balls..
    you then want to suatee on a med. lowish heat to get them golden brown ...after they r nice and golden u will add
    some water a little at a time cover and steam pan cook for at least 2o min. make sure there is always a little water about 1/4 cup at a time.
    keeping the lid on will steam them and keep them nice and golden. You can then drop into ur sauce and cook for at least
    60 min in your sauce. on a low setting.

    I made your "meat" balls and they came out great. I noticed that you used chick pea flour in your recipe but you left it out in the video and here where is says "show more".

    Second time making your meatballs. Added garlic bread , noodles made of quinoa, teff, amaranth, millet and sorghum and a Caesar salad. My 6 and 4 yr old tummies are so stuffed. I blended some down for our 9 month old and she is cooing. Your recipes have changed our home and health.

      The noodles can be purchased at a grocery store (not all stores though, you may have to order online) The brand name is Ronzoni Healthy Harvest Ancient Grain noodles and they even make a green noodle made of kale and spinach.

    I am just on the threshold of Vegan/Whole Food Plant Diet required by my health. I have spent the past few months searching and making recipes and only just discovered you. I believe a tedious struggle is over. As an Italian you can just imagine trying to adjust. You are a pleasure to watch and your video's leave me salivating. I have scrapped my accumulated recipes am scooping up your recipes building a new library. I look forward to enjoying meals again. Thank you Connie.     OMG!!! Thankyou , i tell my family that you are my new best friend. They look puzzled, and then roll their eyes, until the food rolls out of the kitchen. Wonderful food, all 15 million recipes . I made three of your recipes yesterday. We had lemon chicken out of your seitan. I could eat it every day. the texture and flavor , winner. tonight we eat the meatballs with home made pasta. We sampled it yesterday, and my husband was sure it was meat. ,My son has been a vegan for 21yrs, and is in a wheel chair. and on a disability pension. The store bought vegan meat is so expensive, and not always available. Don't even get me started on the taste of some of them. We live in a beautiful little town in British Colombia Canada. It seems that availability and price sent me to youtube in search of you. I tried making seitan 10 yrs ago but just managed to make a large inedible mass of glue. With your genius i am back at it , this time with success, and maybe a couple of bucks in my purse. Keep up the amazing work.

    Connie, I tried these and the recipe is added to my list of regulars. I made some tweaks, like using bulgur instead of TVP. Used your Montreal Steak Spice mix, and reduced the added oil. I baked the meatballs at 375F for 35 minutes, without coating them. They came out pretty hard and I thought they were inedible, but I threw half into my home made tomato sauce, and half into a "beefy" broth, and both batches came out great! The tomato sauce variety stayed firmer, and a true carnivore was fooled. Never realized that he was eating meatless balls, haha! The broth variety came out less firm but made great mince. Thank you for sharing the recipe!

    Hi Connie❤️ we eat spaghetti when the cupboard is getting bare. I used the grain basics of your meatball recipe and used the bits I had in the fridge. I didnt have the veggies you used but I had some red and yellow pepper, some celery leaves, and green onions. Used vegan cream of mushroom soup I had in the freezer. I ground some fennel seeds with onion powder, some steak spice, garlic powder, nutmeg, oregano, red pepper flakes and black pepper. Added some no beef and roasted garlic bouillon. Used the nutmeg and cloves and added dried parsley.
    These meatballs were the bomb. You show us how to be creative and use what we have by example. 💕 has always been part of my experience with your cooking. Thank you dear lady.

    made the meatballs yesterday! with a few adjustments, i think they turned out great. My family even liked it! left out the TVP, used our special spice in place of the "caribbean" spice, and used soy milk in place of the powder and water. ground up some dried mushrooms for the powder and baked the balls because ran short on time. (the kids came over)! they got overcooked but really softened up in the sauce. will definitely give this recipe another go! thanks

      Connie's RAWsome kitchen not only did I enjoy making these...but my son ate TWO meatball sandwiches. I love the flavors from the clove and nutmeg and the consistency is perfect! You need your own cooking show, I'd never miss an episode. Can't wait to try the cheese next!

    I made these meatless balls earlier this week. OMG! Half of the seitan I made meatballs the other half I made meatloaf. I adjust your recipe slightly and added organic BBQ sauce and ketchup. The meatball were so good. I'm making another batch today to freeze. Thank you again Connie'sRAWsome kitchen for the great recipes!

    These are best ever I froze the left overs. I made ravioli with wonton wrappers I followed a recipe for tofu ricotta it was tofu garlic powder oregano basil lemon juice pulse then add olive oil. I used my leftover Connie s meat sauce it was incredible
    I'm sure your recipe for tofu ravioli would be ecstasy

    Connie! (Squeals your Name) I am so over the Moon excited about these Meat balls. I got up early this morning and made them and the spaghetti sauce. I didn't have enough fresh basil to make pesto but I added the small bunch I did purchase yesterday, I couldn't find the soy powder mix so I used unsweetened soy milk in place of the water. I will have to grow my own fresh spices now. But these WERE AND ARE THE MOST DELICIOUS ITALIAN MEATBALLS I HAVE EVER, EVER, EVERRRRRR HAD! I have eaten in a few good Italian Restaurants, but nothing compares to these. I'm making a triple bath next time for sure. I gave a meatball to my room mate and she couldn't believe it wasn't made with hamburger meat, she's like Really these are not meat? I told her NO they are not, then she proceeded to ask me what they were made from and I told her. Your making it a joy to be a Vegan and stay the course. I look forward to making many more of your recipes. I want to make the ricotta and the mozzarella next so I can make Lasagna (my favorite italian dish. Thank you, Thank you. I praise God the day you were born.

    This was the best gift to wake up to today!!! My daughter is going to be so excited. Her hubby lives for meatballs. My sister surprised me with a massive jackfruit last night so that's what's on my menu for the next few days. I put it in my grandsons car seat to drive it home last night and it's bigger than her is. Haha. Thank you for all your wonderfulness!!!

    Connie....I'm having a Connie marathon tonight. I'm sitting here on my couch for about three hours watching (and rewatching some) of your videos. I watch mostly on my TV and it's difficult to like as I go because it goes to the next video faster than I am...but when I am quick enough I get to do it otherwise, when I watch on my computer, I like them as I go. I'm making a sourdough starter tonight and I am making the jack fruit ribs for my dept at work next week. I'm going to bring in my panini maker and my George Foreman grill to grill before serving. I'll take pics of all the happy people and send them to you.

    My husband has always been a meat and potatoes without the potatoes kinda guy, but decided that since I've been vegan and losing weight, he will try starting in January. It's so hard to find things that I think he will try, and you are a LIFESAVER, literally! He will eat this I'm certain because he's Italian! Thank you so much for sharing. I'm going to use his Grandma's sauce recipe and make these meatballs! He will be thrilled! I'm also going to check out the cheese videos. Seriously, you ARE a lifesaver. He's had two separate heart bypass surgeries and each one was a quadruple bypass. If he doesn't change his diet, his life expectancy will be shortened considerably. You don't know how much I appreciate this. From one Italian wife to another, GRAZIE! ;-)

      I will let him know! His brother keeps teasing him telling him that eating vegan isn't 'manly' but as his doctor says, there's nothing manly about having clogged arteries. According to the doc, the first symptom of heart issues is erectile dysfunction. Nothing very manly about that, now is there? :)

    Connie, I am revisiting this recipe as this was my first ever vegan recipe (and yours the first vegan channel) that I tries when I first went Vegan! I had made the Vegan Meat ball subs ... awesomeness! and since then made many other of your recipes (french toast, burgers, cheeses, etc.) - so many more I want to do! Such as the corned beef :) The other day met a random person at a bar and was discussing my vegan journey and he randomly related that he liked "Connie's channel" and that is where he learned to make VWG!! Thank you for you Love of food and the animals. Coming to your channel feels like coming home! Craving Italian Meatball subs with sauce, cheese and fried peppers!!! LOL

    Made these came out delicious. Yes I do eat fruit and veggies plus my homemade juices like watermelon juice just blended. And refrigerated in mason jars.

    I discovered your channel today. I'm thinking I might add some cooked wheat berries for some extra chew. I have to say, I've been intimidated by the thought of making my own seitan, but you're so unpretentious and so experienced, relaxed, that I feel comfortable giving it a try.

    I have tried various, vegan meatball recipes and have decent results. However, I just made your recipe and it by far the best ever. The texture and flavor is absolutely fantastic. The only thing I did different was add extra mushrooms and a few sundried tomatoes to compensate for lack of TVP, which I cannot readily find here. Thanks so very much for sharing the recipes and tips. This video is extremely helpful!!!

      so so glad u like them :D These r good we can never make enough of them :D try making a big batch up to cooking in the pan and then freeze them. take them out and trop in sauce :D presto meatballs are ready :D

      @@conniesrawsomekitchen I can tell you right now I make your chikn bouillon. I used some diastatic malt instead of soy milk powder (it seemed right at the time) and I am seriously impressed! I'm doing a fodmap protocol do no onions or garlic. I used dried garlic flowers and chives instead.

    Hi Connie. I made this for the second time and it was 👌👌 ( first time the balls fell apart while cooking in the sauce)
    My daughter and I have been having it in rolls, pasta or just straight out of the pot! Soooooo good. Definitely one of my favourite dishes to make if I want to impress vegan dinner guests.

    I just made these because I just happened to have all the ingredients. They are awesome! I forgot to roll them in gluten flour before frying and they still came out perfect. So perfect that I could put a bamboo skewer through them and they held together. I didn't make the sauce because I plan to serve some jerk sauce on the side. Thank you for sharing this wonderful recipe. I know people are going to ask me for the recipe.

    Hello Connie, I made the meatballs today along with the pesto w/cheese. hubby grossed me out when he ate 3 subs. I made the mistake of washing the mushroom right before using it so I had to add more VWG, I ended up yielding 40 meatballs (lucky for hubby). I just want to thank you again for your videos. As Itold you previously, I am a new vegan as of May after being vegetarian for many years and was eating store bought mock meats which could be very expensive when feeding a family of 4. You have opened up a whole new way of living for me and I hope you understand the importance of your videos in my life (I'm sure I speak for most of your subscribers). I hope you don't mind me stalking you bc I am obsessed with your videos-I'm sure you on when I mention that I did 4 of you recipes today and will do it again as your recipes will live on in my home for as long as I'm able to cook. love you and please keep them coming. Hmmm, have you thought of writing a Vegan Cook Book? ; )

      lol wow 3 subs he sounds like my hubby!!! As for mushrooms yes no washing!! :) But I am sure u managed to get the texture right after adding the VWG right?? :D You can freeze some for a latr date if u made too much :D gotta love those meatballs :D

    I also buy at my Asian store and they sell a litteral Giant 5 lb bag of shitake mushrooms in a bag for 30$.. it over fills a 5 gal bucket.. we only need to buy about once a year. 👍🥰

      Connie's RAWsome kitchen FYI, I enjoy your videos lengthy or not. Honestly, I even watched a video several times to make sure my seitan is prepared perfectly!.....I attempted to make buffalo wings (following someone else's recipe) smelled great - taste NASTY - insides SCARY! I need details!

      Really enjoy watching your recipes, but a little bit of 'mise en place', would really help to speed them a long a bit. Most of the time I find I have to set the playback speed to 1.5 or greater. Unfortunately there just aren't enough hours in the day.

    Ground walnuts also add fat and help with the “ground beef” texture. The portabella mushroom, combined with the wheat gluten, TVP, chickpea flour, Panko Bread crumbs- this is the creation of a basic ground beef recipe. Can make meatloaf too.

    CANNOT WAIT TO DO THIS EVENING .!!d). Yumm ..!! But your comment Connie .... about the Portabella Mushrooms skin being soo tough. You are RIGGGHT ..!! I wonder if they could be SKINNED SOMEHOW and used as a say DUMPLING wrap ..??? OC cabbage leaves work too. But. Shrooms would be soo tender once steamed like a traditional flour wrap. IDK.     These are sooooooo good! The only change I made was that I did not have pesto so I just added a tablespoon of dried basil and a little extra olive oil. This recipe is so versatile, you can tweak it so many ways. I love that. Thank you so much :-) They are DELISH!!

      @@conniesrawsomekitchen Well, my husband doesn't really care for vegan meat substitutes but these meatballs he loves! I think it's because you really layer a lot of flavors and it makes it huge difference. With seitan you need lots of flavor added and the way you spice things is perfection!     Hi Connie, is there any reason that I couldn't try using a bit of red wine to steam the meatballs instead of water? I think the flavor it would add would be very complimentary, but I just don't know that much about seitan and wondered if there might be a reason that you don't use wine? Thank you! I'm just working my way through your recipes, so this will be on the table tomorrow! Hubby says he doesn't need to eat meat, dairy or eggs as long as I keep these kinds of meals coming! I'm so happy!!! :)

    to clean the pesto from the bottle you can put the water into the bottle close the lid and shake it and then pour it out and add other ingredients

    I made these last night for dinner and they are as good as they look! I had a little trouble keeping the onion in them though, it kept falling out so I chopped what fell out smaller and that worked. I've never had a seitan quite as much like real meat before, it was a little weird eating them at first but I managed lol. Thank you!

      I loved them! Wow, 9 years, you're persistent! I had them like a sub, so yummy! I didn't have the Carribean Spice in them either but I found that on your channel too so I'm going to make it and add it to my collection of spices. :-)

      yes lol I remember back then there was no vegan food to buy. had to learn to create and make foods by memory taste if I wanted to eat things I remembered. And then coming from an Italian family I had to learn to make those Italian dishes. like the cutlets... stuffed olives. so yes my kitchen was my life if I wanted my hubby on board too :) Now he's vegan for 7 years very proud of him! :)

      I found the same thing and have 'veganised' most of the dishes I grew up with. Like you say, there wasn't much in the shops those days so I made up my own. I use Tvp a lot and it's been great for dishes like my chilli. I love Italian food... well, I love all foods. Congrats to your husband too!
