    Oh my goodness! How pretty! I feel terrible for having thrown out so many of those green berry baskets over the years. You are so clever using it this way. In Europe, they (used to?) wrap goods in newspaper. It’s sooo hard to escape all of the silly packaging. Thank you for always reminding us through your actions to take responsibility for the well-being of our planet. I am looking forward to trying out this recipe!!!!

    Great I will definitely try this. Also, just a bit of advice you put the lemon into the squeezer the wrong way around :) Do it in reverse and you will get the correct result with loads of juice coming out of the holes of the squeezer.

    Whenever my hubby hears your video music he asks if I'm watching you. Yes, I am watching my youtube friend Connie! LOL. This recipe is outstanding and so satisfying! I've made it several times as a spread and in shells. Add a little maple syrup and vanilla if want sweet. Perfecto.

    Connie, if you put the cut side of the lemon in the squeezer, so reverse the lemon from how you used it in the video, you'll get more juice out of your lemon. Just a little tip😉Love listening to you talk during your cooking 💗

    Connie, I have made this three times and it is simply amazing! Thanks soooo much for the recipe. FYI, the third time I made it in the big blender (not cup). It was nice to be able to walk away and run it until the mixture was smooth (about 6 mins.) My NON vegan son-in-law thought it was fantastic!!! (and he's picky lol) :)

    Thanks so much for simplifying this recipe. I did not have a basket and so wanted to make your ricotta. Your recipes look so amazing.

      Doesn't matter if u don't have a basket...When I make it like this I still use a basket but only for presentation. otherwide it never last long enough to look pretty lol

      I have made several of your recipes and no they don't last long. lol I recently made ravioli inspired by you. Not your recipe as i recently went gluten free. But they were gone as soon as i was done making them. My husband was so missing them and he ate three servings . I will definitely be making this version of the cheese .

    I made something similar to this week and did a sour cream consistency. I added garlic and onion seasoning for fun after the salt. I’m not s huge fan of the flavor of cashews. It’s so yummy and the granular texture doesn’t bother me one bit. It was so yummy on my tacos. ;)

    thank you thank you for this awesome recipe! I have made it several times and it is so easy and yummy! I like the texture w/o the water and carrageenan. Made stuffed shells with vegan sausage and my non-vegan family members enjoyed and said they'd never know it wasn't non-vegan. A winner. :)

    I soaked (and peeled) my almonds over night. I'll be making the other recipe today and letting it sit in the fridge (in a cheese basket) overnight. Spinach ravioli on the menu tomorrow. Thanks Connie!

    I guess you could put the ricotta mixture is a cheesecloth and tie it up above to sink to drip out some of the excess moisture? To save the paper towels :)

      yes you can do that But know how busy my kitchen is this way is faster...You can also use a clean linen towel. no waste there.

      Elizaloutwo oh for God's sake! I am vegan I buy paper towels and the air used very sparingly 6 rolls of paper towels will last me 6 months! I have to tell my caregivers to use what I show them to clean with which are cloths but if I am doing something with food it's going to be paper towels! Just like draining anything I ever for I once a year. People do it on the paper bag and it doesn't absorb a thing! I fry Japanese eggplant briefly once or twice a year to make a Chinese stir fry dish that I love. This means you would have to never buy another paper towel no paper to write on no sales flyers no pizza boxes no envelopes you would not be able to buy anything made from paper! I choose to live my life a little more comfortably especially since I am disabled and Connie is an extremely busy woman! Yes you can tie it from the faucet but she's in and I would have her faucet water all day and evening so it's just going to get wet hang in there. I know I lived in Morocco where I had to make my own cheeses because they didn't have the kind that I wanted.

      Wow, apologies my suggestion got taken as a criticism. There's really no need for your tone (!). I appreciate the time and ease elements, just trying to offer an alternative - also since I always have a cheesecloth to hand but run out of paper towels from time to time.

      Elizaloutwo I hope you don't think it was me who had a tone. And if I came off with one I am genuinely sorry. I am vegan and I believe in treating all animals well including the human animal. I'm sure you know there are many many vegans who come around and think that a tree will be saved by not using a paper towel or a piece of paper and for those of us who were just laid back reasonable regular old vegans that stuff tends to get under our skin mine anyway and some friends of mine many people really. It was very hard to tell what you meant by the little that you said and of course you know there is no tone of voice when we write. I for one did not understand that that's what you meant when you explained it and I read it today. I'm not a mean girl and I was sticking up for Connie who does have an incredibly busy life and dogs which would be enough to drive me right down the sink! I on the other hand am disabled and have all day and night to hang something from the sink and that's what I do. But also if I needed it in a hurry I would use the paper towels. Again I am genuinely sorry if my reply upset you and would never do that on purpose to somebody. Have a great day! :-)

    I have yet to find a vegan cheese recipe I like till I tried cultured mozzarella. This is better. Once the moisture is drained from these I have several things I want to try it in.

    I like your new knives, Connie! *Bark bark bark bark* Since we live so isolated my dogs bark at cars on the dirt road that borders our property! It's LOUD! If anyone happens to stop they see ten dogs tear out of the house running and barking at them! Lol Thank you for the recipe!

    Wonderful recipe, Connie! Thanks for the bonus tip to create a goatie flavor using a small amount of onion : ) As far as your being a bad vegan because you _might_ have washed some caterpillars down the drain unwittingly goes: You gave the one left an entire basil condominium to himself!     I wish i had a blender so bad right now to try ur cheese recipe i burnt my old one blending cashews it wasnt powerful at all but i cant complain since it was given to me for baby puree im gonna buy another one soon i dont have the money to buy à vitamix type of blender but im saving to get a 1500w ninja is it gonna work for cheese making? Once again great recipe plus its an easy one too so its on my to try list thanks Connie

      I use my nutribullet for small batches :D pretty good and not that expensive :) Maybe I will do a draw one day

      Marj B I bought a little blender called Cooks Rocket Blender. It was under $15 here and does the job. Like Connie mentioned.. in small batches. Perhaps you can find similar in your area.

    I'm loving your videos Connie but do me a favor when you're using that kind of squeezer for your lemons or limes I know it looks wrong but turn the lemon around the other way it works so much better you're using it backwards my dear

    Hi Connie I made it today and it was to thin to flip very watery I must of added to much milk. Another flop on my end. Darn still taste good though. I will try again untill I get it down. I'm determined. Lol thank again

    Does this work for Cashews ?? I just ordered a box of raw Cashews... wishing I had Almost now.. 😆... 😳AND. If so, do I need to roast them?? I know raw Cashew messes with me pretty bad . Thank You for sharing your recipe 😊👌

      never made it with cashews, not this system. U can make it but it will be a different process and texture. I will try to make a video for you

    What is Kappa Carrageenan where can I buy it?

      I have a recipe where you don't need it. It's a longer more orginal way of making it. Kappa is a gelatin

    But how long do you use the mixer ? I'm trying since yesterday, letting cooling the mixer for 10minutes every 30-40secondes of usage... I use a 900W but cheap mixer, same blades and shape as your.

      you have to do it slowly if you don't have a powerful machine. When making cheeses the best way is a powerful machine it makes your life easier. But if ur making little batches take your time. It won't be as creamy but still good

    Could anyone tell me whether they have TRIED freezing almond or cashew ricotta cheese PLEASE? Is the taste and texture ruined as a result ? I would love to make large quantities of nut ricotta cheese and freeze them so that I will have them available when I need them. If so, can I freeze it in a plastic container with lid or do I first freeze the nut ricotta in ice cube trays and then transfer them in a plastic container as I do with my lemon juice?

      I might be freezing some ravioli this week we shall see lol the first time for me. I normally make it fresh but making a batch for my twin grandkids Bday :)

    But, it drives me crazy that you are squeezing lemon wrong:
    CUT side goes next to holes.
    That way you'll get more out of each half and it will drip from holes.
    Speaking as an expert margatita maker

      Alice Gordezky it's a red seaweed extract

    Connie good morning what else could I use instead of the kappa carrageenan since I don't have it since it's a thickener could I use flour or corn starch

      no just don't use it after it's done place your mixture in a Tupperware...then place a bunch of paper towels on top. flip it upsidedown....and place that on a small dish change paper a couple of times a day and you will get ur firm ricotta
