- Join Chrissy Tracey as she makes vegan meatballs with a Marcella Hazan inspired tomato sauce. This recipe was actually inspired by Chris Morocco's (non-vegan) meatball recipe. Instead of using beef, Chrissy uses lentils as the mainframe of the meatball, mixed with oat milk-soaked bread. The oat milk adds a little more fat content to the recipe, giving the meatballs a much fuller taste.

INGREDIENTS:
Sauce
1 medium sweet onion, quartered
2 garlic cloves, smashed
½ scotch bonnet pepper, seeded if desired
1 28-ounce can whole peeled tomatoes
5 Tbsp. plant butter
2 basil leaves
1 bay leaf
Kosher salt
Freshly ground black pepper
Cashew Parmesan
1 cup raw cashews
2 Tbsp. nutritional yeast
¼ tsp. garlic powder
1 tsp. onion powder
1 tsp. kosher salt
Meatballs
3 slices white sandwich bread, crusts removed
¼ cup oat milk or other non-dairy milk
2 garlic cloves, finely chopped
¼ cup parsley, roughly chopped
4-5 Tbsp. aquafaba (the liquid strained from one 15-ounce can chickpeas)
⅓ cup Cashew Parmesan
2 cups cooked lentils
¾ tsp. fennel seeds
2 tsp. kosher salt
Freshly ground black pepper
⅛ tsp. nutmeg
1 tsp. marjoram
¾ tsp. dried oregano
¼ tsp. crushed red pepper flakes
¾ cup breadcrumbs (preferably Italian)
2-3 Tbsp. olive oil, plus more
Assembly
Cooked spaghetti
Cashew Parmesan
Flaky salt
Torn basil

Preheat your oven to 350°

8:20 Form the meatballs, freeze for 5 minutes
9:00 Boil water for spaghetti
10:02 Sear the meatballs in olive oil
10:57 Bake the meatballs for 7-10 minutes
11:08 Transfer meatballs to pan with sauce, toss to coat, then remove
11:14 Cook spaghetti in salted water, transfer to pan with sauce, toss to coat
12:08 Plate and taste!

I really appreciate these videos. Chrissy makes meatless meals feel more approachable - it's often difficult for non-vegetarians/vegans to come up with meat free meals that aren't salads. More of this, please!

I honestly love seeing an 80's era food processor and pans with oil baked on. A hardworking kitchen isn't a showroom.
I made this for my wife tonight. The only thing I modified is I didn't sear the meatballs because my non stick pan sucks and it was sticking really bad. I just baked them at 400*F until they were golden. It was really delicious thank you for the recipe.

Yeah that was weird, she made it seem like it's hard to find "vegan" pasta like it's not in every single grocery store across the country.
Depends on the country you´re in.

I was so confused by that statement. Like most pasta brands in the store don't contain egg, it's just water and wheat semolina. The only pasta I know that do contain egg are nearly all german tagliatelle and spaetzle. Well and most homemade ones. Is that different in other states?
Chrissy is so easy to watch + I am 7 years vegan and could use some more inspiration and new recipes I haven't tried. Rock on Chrissy!

Does it matter if they're heated before or after crushing? Genuine question, since the meatballs then get pan-seared and baked, with the fennel inside :o
@@Orynae with most spices (cumin, fennel) if you heat first and grind afterwards its more aromatic and flavourful. When you heat it beforehand, you are releasing some of the oils into the mixture. You can experiment on a batch, some fennel seeds without toasting and some lightly toasted and ground and see what you think.

Try Panko instead of the bread & breadcrumbs, the texture and dryness of it will soak up whatever fatty liquid you're using much better and improve binding all the ingredients
It didnt need the binding improved. They held together great
@@simplypaul8681 added fat might improve taste further, as well as making it easier to recreate (esp. Since she does mention that binding can be an issue)

@@yukito227 Yes, and that can mean that she often had issues in the past with this and/or similar recipes, so why not try to improve taste and idiot-proof structural integrity with Panko?

Thanks! That's quite interesting, I think that we could add some miso, soy sauce or any other yeast garum to bring out some strong flavors!
Why remove the onions? Seems like they could be broken up and kept as being part of the sauce
My thoughts exactly... or if you just want an onion flavor, use some onion powder or bits...
Don't question cooks, they do dumb stuff and waste food.
It's not uncommon, I've seen it in recipes. They want the flavor and a smoother sauce.
I guess it would dilute the tomato

As someone who has had like 50% luck in the past when cooking lentils until they’re tender enough, can someone recommend a foolproof way to make them? Appreciate any advice!
Personally I find soaking them ahead of time works best for me, I keep them in a bowl of water at room temp for a few hours and then drain, rinse add to a pot with a 1:1.5 ratio of lentils to water and simmer for 20 minutes. Check for doneness. If they've achieved the level of cooked you desire you can strain any leftover liquid. If they're not ready yet just keep cooking/add water if it's looking too dry.
This recipe I think would also be pretty forgiving to overcooked lentils, just add more breadcrumbs if the mix seems too wet.

You can definitely eat them. You don't use them for this recipe but you can definitely roughly mash them with a drizzle of olive oil to make an awesome spread for your toast :)

For my health and my parents aging health I hope to do more plant base and lower cholesterol levels and blood pressure and blood sugar levels! While tasting deliscious still I hope! I love spice and texture!

I’ve done it with walnuts and pistachios and it tastes great. :)
If you are allergic to nuts you can also try sunflower or pumpkin seeds

If using a stainless steel pot, do not add salt until the water is hot. Stir to disolve.
If you put salt in the cold water, the stainless steel will pit.

What happened?
I guess I missed the fiasco, is this why I stopped seeing vids.
You should take everything with a grain of salt. When people get fired, passed up for promotions,etc and quit or get fired end up always trash talking, lying and blaming the company. No one likes to admit being fired/wrong,etc. Take the current political climate we have where different groups get different amounts of points and you have a good recipe for this.
@@novellajohnson8714 the editor in chief did black face when he was younger and that came to light, then after that all the POC spoke up about their unfair wages, they weren't being paid for their videos while the white chefs were being paid for their videos. For example, if Sohla made a video for the BA youtube, she didn't get paid for it, she only got her normal wage. However if Brad made a video for the BA youtube channel, he would get paid for it, on top of his normal wage.
