    I tried this recipe and I LOVED it . It’s so worth the time . Tastes exactly like meat . Seriously guys . I made a marinade of soy sauce , garlic powder , and paprika after I boiled it and then fried it and it was AMAZING. Definitely worth it . Thank you so much Connie !!

      You know what tastes exactly like meat?
      Meat!
      You could take and old kitchen sponge and soak it in that marinade and it would taste the same.
      You are only fooling yourself.

      And PRO-TIP: It only tastes good to you because you cook it with marinades. So it's no different for us to do the same. No killing of an animal required. 😛

      No, thank you for teaching us your recipes, you're ahead of your time, and in a good way. Your recipes could easily help anyone transition and live a happy life vegan, and never want to break the lifestyle. You're awesome, and I kind of have a question, I know you know how to make vegan scallops, but do you know how to make vegan lobster or crab? I see very far and few recipes, and I was wondering if you hacked that too! Again, love your videos and you're so flipping amazing.

    In China this process actually uses both the glutan/seitan and the leftover starch. Noodles are made from the starch water that rises to the top and then sliced, and the gluten peices are used in the noodle dish as the "meat", served cold, in a spicy fragrant chili oil laden, vinegary, sweet and salty sauce with bean sprouts, cucumber julienne, minced garlic and cilantro. The dish is called "Liang Pi" noodles if you live in a major US city you can probably find them in any place that says they serve "Xi'an" Food. One of the greatest vegan dishes on earth.

      Search "Liang pi" on youtube, first video that pops up. It'll be a lot of work to prepare everything, especially the chili oil which is a vital ingredient. But it's worth making if you can't get it locally.

    The weather is chilling down and it's Quilting time and spending the days with Connie! I put your videos on my TV as I work and get inspired as to what I will make for dinner. Just over a year ago my Fibromyalgia and MS was so bad I couldn't sew I was lucky I could cook. I credit you for keeping me away from animal products and dairy. My allergies disappeared. The the wheel chair is where I was headed but not anymore. I'm sure you have helped so many others. Thank you and always remember someone in Arizona loves you! You're the best!

      Sadly if they are vegetarian, then they are participating in the following:
      "“Organic” Milk
      [ "What's Wrong with Vegetarianism" uvearchives.wordpress.com/2008/09/09/what-is-wrong-with-vegetarianism/ ]
      Like humans and all mammals, cows need to be impregnated to produce milk. “Organic” cows are therefore repeatedly impregnated, often on a device called a “rape rack”, where they are inseminated either artificially or by a bull. Cows would normally live about 20 years, but due to the economics of the “organic” milk industry, they are usually slaughtered after about 5 years when they lose the ability to generate commercially-viable quantities of milk. During this short 5-year life, they are pregnant about 9 months out of every 18 to 24 months and give birth to a calf two or three times. Some of the female calves will end up as dairy cows to eventually replace their mothers and grandmothers. Most of the calves from “organic” dairy producers, however, are forcibly abducted from their mothers - who often grieve the loss intensely - and sold to the veal industry. Although some “organic” dairy cows are permitted to graze outside during part of the year, many “organic” cows never see the light of day until they are transported to slaughter.
      Just as with “free-range layer hens”, “organic dairy cows” and their calves are transported and slaughtered in the same manner as any other cow or steer. Often, they are confined to a tractor trailer for days of transport, and sometimes through extremely hot or cold weather conditions. Because they are depleted from so much milk production and from genetics designed to maximize milk output, they are often much weaker than “beef cattle” when they arrive at slaughter. Indeed, most of the “downers” - cows too sick to walk - are dairy cows, including dairy cows from “organic” dairies. When they arrive at slaughter, downers are often cruelly prodded with electric prods and/or bulldozed into slaughter, as was displayed earlier in the year on national television in undercover films provided by HSUS. Actual slaughter can be an unimaginably horrific and terrifying experience. Although the cows and steer are supposed to be “stunned” with a captive-bolt gunshot to the skull, this can be difficult for workers to achieve, especially with the rapid pace at which the animals are moved on the line. This can result in the animals being fully awake when they are shackled, hoisted upside down, and cut at the throat. Because cows and steer who are not properly stunned are sometime flailing around at the cutting section of the fast-paced line, they occasionally miss the throat cut or the cut is not sufficient to kill them. Due to production pressure to keep the line moving, these cows and steer will often end up alive at the hide-ripping machine.
      Commercially-viable “organic” milk production, regardless of the label it is sold under, is extremely cruel to cows and calves and requires mass-slaughter. “Organic” dairy cows are physically and psychologically broken by the time they reach the slaughterhouse, which can be an unimaginable horror story in itself. Consuming “organic” dairy products - milk, cheese, ice cream, cream cheese, sour cream - simply makes no sense for anyone concerned about the treatment or slaughter of animals."

      But vegetarianism is an introduction to veganism, going from milk to oat milk etc. is MUCH easier than changing from meat to seitan etc.

    Had Nazi Germany's holocaust victims,

    that is inflicted upon animals for food from birth until slaughtering,
    generation after generation, after generation, after generation,
    Nazi Germany's holocaust today would be one hundred times more disturbing,
    and that was a motivating factor for me to choose to go vegan,
    and I don't think I could have done it without Connie's RAWsome Kitchen.

    Dear Connie, today I tried your recipe and I'm happy to report success! I used 1 kg of all-purpose flour, didn't measure the water, but mixed it up and kneaded it just as you described. Let it rest 40 minutes, then grew impatient, and covered it with water, let it sit another 30 minutes. Finally washed it. I don't eat onion or garlic, so I mixed the gluten with minced celery, brewer's yeast, shitake mushroom powder, allspice, fennel and coriander powder, coarse black pepper, a bit of chickpea flour, panko, salt and agar agar powder. My grinding machine (don't have a food processor) is a heavy duty machine purchased from India, but it nearly leapt off the counter, had to hold it down. Nevertheless, it did the job. I pulled the mass out of the grinding machine and sliced it into thick strips, which I then patted into thin steaks, as you showed. I didn't use a rolling pin because the mass was quite sticky. Meanwhile I heated up some stock I had started the other day, and added to it some mushroom soya sauce, brown rice vinegar, sugar, salt, pepper and mirin. I let it reduce for about 30 minutes. Then I reduced the fire and plunked in the steaks, threw a cover on the pan and let it simmer for almost an hour. I removed the steaks and let them sit for a few minutes, but I really needed to get dinner on the table, so they didn't really have time to rest very long - at most 20 minutes. I'm sure with advance preparation, these steps can be broken into stages so that one doesn't have to spend all afternoon in the kitchen. ;) Anyway, I cooked two of them in olive oil with some black pepper and chili flakes, that's all, till they were nicely browned. There remain three big steaks, which I stuck in the refrigerator to experiment with tomorrow. I was expecting the texture to be quite rubbery and spongey as has been my experience making gluten by this process, but it really wasn't at all. They were not chewey; I could sink my teeth into them without my teeth bouncing off. :) But of course, the steaks were also not juicy, which is one of the main things that meat eaters would miss. All in all, not bad, and worth repeating. I actually think they would serve well as burger patties. Thank you for your inspirational videos!

    Listing ingredients in the description would be so helpful. I used the closed caption to try to understand and read what you were saying. At 10:20, you say," Almost forgot, I'm going to add some breakfast to this." Finally figured out it was panko bread crumbs after rewinding and going through it a few times. Agar was a new one for me as well. I'm still new at this stuff and have a lot to learn.

    My hubby and I switched to plant based diet after watching 'What the Health'. My hubby is Italian and was a huge carnivore. In an effort to keep his taste buds satiated I have become obsessed with making Seitan. This is a wonderful recipe! I added to your base recipe as you instruct us to do. 1/2 cup red beans, and I used beet juice, tomatoe paste and a touch of apple cider vinegar in my wet ingredients. I was a little apprehensive about the panko, but it really made the texture amazing!

      i used all-purpose flour unbleached...and it's like maKing a pizza dough without the yeast ...JUST FOUR AND WATER

    I gave up making vegetarian steaks this way a very long time ago. I found a recipe in a magazine which appeared to be quite old. I lost this magazine so I had to try to remember the recipe. So I put 1/2 cup of milk in a bowl, then I put in 2 beaten eggs, then you have to season the mixture so the steaks will be flavoursome. To do this you can use whatever you like, salt and pepper.... Massell vegetarian stock powder.....garlic powder and onion and celery powder or whatever you like. I even like finely chopped up walnuts. Nutritional yeast powder. You can use any combinations of these ingredients that you like to flavour your steaks. Then I sprinkle in gluten flour. I don't remember how much was in the recipe. But I just sprinkle in enough until it comes together in the bowl. Then I leave it to rest in the fridge covered for 15 minutes. Then I take out portions and flatten them in the frying pan. I get about 6 steaks with this recipe. Make sure you flatten them out like a pancake because they will puff up. I even put them in the freezer and when I thaw them, I crumb them with Panko crumbs. This recipe can be done vegan. Just use whatever milk you like and use an egg replacer. The steaks shrink after fried the first time, but after crumbing them they expand to large steaks again.

      Hey Tanya ( called ) agar agar...it is a gelatin that is derived from seaweed. normal gelatin is made from animal bones or fish bones... I will do my best to make it easier for you to see the ingredients. If you do a screen print. on my video's u will see the list.     Is agar different to tapioca starch? I’m struggling to find agar where I live, I can only find tapioca starch or vegetarian gelatine (it contains carageenan and locust bean gum)

      yes it is different. Agar is from seaweed and is common in asia for making jellies, so try asian store!

      VERY SIMPLE IT'S FROM SCRATCH BECAUSE YOU HAVE TO WASH UR DOUGH RATHER THAN BUYING VITAL WHEAT GLUTEN. As for how you make ur dough no different than a bread dough without the extras just use flour and water. nothing else. make a dough and then rest it then u wash it

      She has a lengthy episode where she shows how you CAN take flour and water and make a dough. Rest it, soak it, wash it and wash, wash, wash. THIS episode was starting with her pre-made gluten and taking it from there. It was thrilling to watch as she took her dough ball and made it into steaks. Most of us binge-watch day and night so we get this. She's DA BOMB!!!

    I prefer WTF over Vital Wheat Gluten. Also, I've tried making my seitan with the autolyse method. Much easier! I always come back to your videos for seasoning and cooking.

    I am veggie/vegan for over 30 yrs.and I made this out of vital wheat gluten last week, loved it, and then felt sick for days. I should have remembered loooong time ago, I figured this, but never realized how much my body didn't take to it. OY. What to do. I loved the taste and ate three in 2 days. 2 steaks the first night, and I felt like I had eaten a rock. So now I am looking at alternatives, but daaaang.

    How often do the members of your family eat Seitan? We love it but so many sources say you shouldn't eat it too often but don't give the best reasons why!

      depends sometimes they have it daily and there are times they go without for weeks If I haven't made any. but seitan as been around for 1000s of years in the Buddhist lifestyle they eat it every day. If u can eat bread u can eat gluten that is my take.

      they don't recommend it because it's not a "whole food" even though it's vegan........its almost like eating bread basically, it's not bad for you but it's not nutritious either

      A lot of online articles saying vegan products are not good for us are actually published by the meat and dairy industries. It won’t look obvious but they will be behind it. The dairy industry started the whole soy is bad thing about 30 years ago when soy milk really started to take off. If you are not allergic or intolerant to gluten then seitan is perfectly fine to eat as much as you want to

    I just discovered your channel and subbed. I love how you use Old World cooking to make vegan meals. My husbands grandma was Sicilian and I loved her food, but I learned cooking from my Ohio Mid Western family.       @Colleen De koning the reason cows fart so much is because they feed on vegetation which requires 4 stomachs just to digest... and you expect humans to be able to do the same thing without any special adaptations? like it or not vegans are gassier than most people and any vegan worth their cent can admit this.. its a gassy lifestyle. also i misspelled 'your' because i was on my phone- had less to do with brain shrinkage and more with typing one-handed with short fingers (^_^)

    If you want it a little lighter put a bit of soy flour in it. A quick way would be to use some gluten flour straight up. In Australia it is readily available at the supermarket in the healthfoods section. You may also like to put a little vegemite in it too. You can also 'play patty cake' with the mixture instead of a rolling pin. If you pad with a clean tea towel and take a little of the broth out you can bread the patty and another thing that my family like, is to coat the patty in gravy quick and then lightly fry.

      You are very inspirational. My family are both meat and vegetarian. My brother who normally chucks an absolute fit about eating vegetarian really like these little 'steaks' that we make. I have found that if you add some seasoning for the cuisine type to the broth it adds a little something else to the water. I can't wait for you to add more recipes. Cheers Ms Connie

    Anyone in Virginia Beach, Harris Teeter's has vital wheat gluten and Whole Foods has miso paste, the two things I found hard to find except online, and at Christmas HT's has whole real chestnuts. :)

      yes we use them also in fried sweet ravioli :D it's a dessert we mix chestnuts with booze and other goodies and fill ravioli and then fry yum :D

    Hey Connie! I'm a young and new vegetarian in a family full of omnivores, your recipes help me so much! Since I have to cook everything for myself and I haven't had much practice, I was wondering what some of your favorite recipe videos are? I have a hard time figuring out what I should eat and typically just go for tofu as its pretty fast and easy. However, your seitan always looks phenomenal so I picked up some wheat gluten to try some myself. Is there a particular seitan recipe you think I should try first?     I really can`t wait to try this ,I am so amazed how flour can really feed us all and it`s so cheap and versatile . still can`t believe you can do that with flower .Also another good one look up the nettle plant and how nutritious it is plus high protein and high vit C content and some minerals .

      Angela Pardue try chick peas and make them.into pancakes with salt ofcourse you can add moringa leaves and ginger about three cm, green chillies. Make pancakes or patties. Cook them like pancakes. And serve with tomato or onion chutneys

      Anna H ok. Take chick peas preferably the broken one thats out of its shell. It's a lentil. Take it. Soak one cup cup in water overnight for about five hours maximum. Drain water and add ginger, salt, chillies, mushroom powder, all the spices that u like that gives a chicken or meat flavor. Grind it into a normal paste or smooth paste according to ypur liking. Then add moringa leaves or herbs that u love. Put a tsp of oil and make thick pancakes. Pat em with a flat spoon or laddle. Once one side is done. Flip em. Cook till they are brown. Don't burn em. That's it easy. Look out for gram flour dosa videos in youtube. Place them on plate. Add tomato chuttnies and serve hot.

      Ginger gives a meaty flavor to anything. And don't forget the salt. Some ppl add onions just like in the video it gives a flavor. Vegetarians in South India love em. Try the onion, green chillies chutney with a dab of coconut oil. Its yummy.

      "Vegan" really doesn't mean healthy. It's a pledge not to contribute to all of the atrocities done to animals.
      A "vegan" diet can be very healthy or very unhealthy. That's all up to you.

      Well... "flour is bad for you" is just another oversimplification by people who like to be edgy. Most kinds of flour consist of carbs, proteine, fibre and a few other nutritional components. While some kinds of flour such as white/processed wheat flour have a somewhat "poor" nutrinional profile and can have bad effects on your health IF consumed in high measures and/or exclusively, flour by itself is neither good or bad.
      There are many better performers like whole grain flours which are packed with complex carbs that will keep your insulin response lower and more steady over a certain time period, or deliver more fibre and micro nutrition...sure. A little plain old flour is not gonna hurt you anyway.
      In this case the product you get after washing out the starch (carbs) is pretty much just the protein residue and doesn't resemble flour anymore. Wheat protein (gluten) is a solid protein source in a plant based diet except if your body cannot "disassemble" it. That's the case in about 1 in 100 persons. Product information that says "gluten free" implies for many consumers that gluten is bad, but it's just wheat protein. Most people can eat it without any problems.
      Sorry for possible misuses of technical terms. I am German.

      mushroom powder is very easy to make. but if u don't have it's not a big problem. I use it for flavor. fresh isn't good because it's too wet. I would dry them out first and then use a blender to turn them into powder

    I only have the metal attachment for my food processor...would that work too or is the only alternative to kneed it by hand? Does that change the texture? Congrats on 20K!!

      Bread machine works for working mochi dough, probably work fine for gluten also then.

      I couldn't find my plastic blade one day when making gluten so I tried the metal blade and never went back. It works as well and is much faster too.

    I watched the whole thing. I used to buy seitan in a health food store in Santa Monica. It was in some sauce made with tamari or some such. I liked it and cubed it and put it in some dishes but never had a desire to make any, but this looked like fun. I never knew that you could put other ingredients in it/them. Looks delicious but I'm salt and oil free so it's not for me as you make it. For fun, I might try making it just to learn how and make my own style 'meat.' It's been so long that I don't miss meat or feel a need to make it. Still, might be nice to have the skill. Thanks for posting.
