2 INGREDIENT VEGAN MEAT⎜BETTER THAN SEITAN STEAK
I have been working on a seitan alternative that would be both easier and tastier than regular seitan and after months of brainstorming and countless attempts, I have finally managed to make the perfect meat/ seitan substitute you can make under 10 minutes and store it in the freezer for later use.
This is the first video of a series of three in which I teach you how to make the seitan substitute and later I will teach you new recipes using this precious nutritious recipe.
👉 IMPORTANT: The mushrooms I have used are the dried whole shiitake ones that you buy at the Asian shops or online, and NOT the cut dried ones you buy at regular supermarkets. They are completely different kinds of shiitakes and taste totally different and there's a considerable difference in price between the two - the Asian ones cost about 3 to 4 dollars per 90g and the ones you find at the supermarkets costs 3,50 dollars per 20g.

INGREDIENTS FOR 2 INGREDIENT VEGAN MEAT⎜BETTER THAN SEITAN STEAK
- 4 cups of REHYDRATED of Asian shiitake mushrooms (about 160g/ 5.64oz)
- 4 TBSP vital wheat gluten flour
- 1 TBSP soy sauce or tamari (optional)
DIRECTIONS:
- Rehydrate the dried shiitake in cold water for 2 to 4 hours or gently simmer them for 10 minutes or until very soft
- Cut the rehydrated shiitake in halves or thirds to help to pulse them
- Gently pulse them in the food processor, careful not to mash them
- Add 4 tablespoons of vital gluten wheat flour
- Add the tamari or soy sauce (or water)

I just made a batch! So easy and very versatile. I froze most of it but was eager to taste it, so I'm going to put it in a tortilla wrap for dinner. Then garnish with arugula, a smidgen of cheese and sour cream. SO good and brilliant idea! Thank you, Jana. (First-time seitan user)

I made a batch yesterday and I used it for tacos. They were so tasty and so savory I almost couldn’t believe it.
This recipe is so much better than anything I’ve tried before to make tacos. Good thing I have a store near me I can buy dried shiitake mushrooms and saitan flour in bulk!
I froze the broth and will be using it for my next batch of soup.
Dash of liquid smoke would be good for some dishes...

Surprisingly I discovered by accident that simple mushroom combos appeared to be meat, and were accepted by non vegan friends and vegan friends alike. Wonderful to see more formal recipes, with many variations. This channel is a treasure. Chef Jana is a favourite. Thanks so much.

This is the video that helped me to not be afraid of making Seitan./Mock Meats. After using this recipe I froze a couple of packages in my freezer. When I found one months later, it looked like ground beef. And the taste was fabulous!

This is a great recipe. I seasoned it with tomato sauce and chilli spices and froze it. Last night I put it on nachos with salsa, cheese and green onions and served it to my son who loved it and couldn’t believe it wasn’t made with meat. Thinking of spicing it with tomato sauce, red pepper paste and onions ( maybe a bit of rice as well) and then stuffing green peppers with it next.

This is great- - when using dried shiitake, the tough stems are cut away & discarded (work!). Leaving them in the mushroom mixture and pulsing them must give the alt meat just the perfect chewy texture.

I enjoy using alternative ingredients when cooking. We love many foods from different cultures. Thanks to many commenters in suggesting making lasagna, pizza topping, Shepard’s pie,tacos, nachos, stuffed peppers & tomatoes. I’d like to add a few other foods I’d try to make with this mixture and I’m sure there are similar or more variations out there among various cultures-

I read that soaking the mushrooms in cold water for several hours brings out better flavor and keeps the mushrooms from getting bitter

You can rehydrate the mushrooms with any flavorful liquid doesn't just have to be water

Isaac Owens I wouldn’t soak fresh shitake at all. No need. The dried are maybe more economical and that’s probably why they’re used in this particular recipe
@@kegugino Yes of course! Dehydrated mushrooms may be reconstituted with a flavorful liquid ;-)

Looks yummy :-) I often use mushrooms as a meat alternative. Adding some quick oats to the mushroom mixture works well too. I love simple, tasty recipes using fresh ingredients. Thank you for sharing.

An excellent alternative to a ten-minute, arm-numbing workout, kneading Seitan dough. Great in Spaghetti Bolognese, Tacos and Shepherds Pie. It's a great base recipe to experiment with. Subscribed.

I will be starting to uploading vegan recipes to share my cooking ideas in the kitchen people think vegan food is boring and as you see here this is an awesome recipe 2 thumbs up.
I find ordinary white mushrooms and red or green lentils a good combo. This might work for cooks who don't have access to shiitake mushrooms, either because of no supply or because of cost.

Do they have to be shitake mushrooms or can I use other kinds of mushrooms? In Italy the shitake mushrooms are pretty expensive.
Yes, you can use other mushrooms, I chose the shitake ones because they are a bit more bouncy and chewy than the other ones :)

Yes, I've relucted for years cuz I didn't want to buy a food processor but now making the videos, I've had to... :) The mushroom broth is precious, gives depth in stews, it's really a lifesaver.

Many people who think they are gluten intolerant actually are reacting to the fodmaps in wheat. 10% of the population has SIBO and fodmaps excaserbate this. Gluten doesn't contain any fodmaps at all so you may react to wheat but probably won't react to vital wheat gluten. Sourdough bread may also not cause a reaction because the fodmaps are converted in the fermenting process. Try seitan and see if you have the same reactions as you do with regular wheat.

You can fine dried shiitake mushrooms in Asian supermarkets go on Google maps and type Asian Indian Mexican etc. And their is Utube channel that shows how to shop vegan at their just type Vegan shopping at the Asian or ___________etc. Maket .

I just made 18 Shiitake mushrooms balls and placed on parchment paper in the oven.
They look and taste better than any kind of meat. As additional ingredients, I added: Panko, Nutritional Yeast, Garlic and Onion powder, Raw Wheat Germ, Oregano...

I also have a bonus for you. Mushrooms are the only vegetarian food that can make Vitamin D when exposed to the sun’s ultraviolet (UV) radiation. Because I do not know how the commercial mushrooms are dried, I will buy fresh and dry them outside at Florida Sun.
