INSTANT POT Easy Meal Prep | Greek Inspired Recipe

  • Today we are making a Greek inspired easy Instant Pot Meal Prep! This is packed with protein! This is perfect for either 5 lunches or 5 dinners. Easily one of my top 3 recipes I've created in a long time!

    Ingredients:
    1 ½ cups Basmati Rice
    1 Scoop Bone Broth Collagen (substitute bouillon cube)
    75 grams sliced Kalamata Olives
    1 small Red Onion
    5 Cloves Garlic
    ½ cups Dry White Wine (substitute more water)
    70 grams Feta Cheese
    1 teaspoon Pink Salt
    1 teaspoon Dried Basil
    300 grams Grape Tomatoes
    2 tablespoons Balsamic Vinegar
    1 teaspoon Ground Black Pepper
    1 ½ cups Water
    575 grams Zucchini
    1 ½ tablespoons Olive Oil
    24 ounces ground Chicken
    1 lemon
    Instructions:
    Rinse and drain rice. Slice zucchini. Cup tomatoes in half. Dice onion and mince garlic. Set Instant Pot to sauté on high. When hot, add half the oil. Add zucchini and cook until almost tender. Remove from the pot. Add remaining oil. Add chicken and sauté until almost done. Add in onion and garlic and sauté for 1-2 minutes. Add in spices, vinegar, lemon zest. Stir well. Add wine, bone broth powder, and water and stir well (deglaze the pot). Add rice and ensure it is submerged without stirring. Close the lid. Press cancel on the Instant Pot and set to high pressure for 4 minutes. Allow 10 minutes of natural pressure and then perform a quick release. Open the lid and fluff. Add zucchini, tomatoes, juice of half a lemon, and feta cheese and stir well. Garnish with a lemon wedge. Enjoy!
    Stove top:
    Heat a large pot over medium heat and add half the oil. Add zucchini and cook until almost tender. Remove from the pot. Add remaining oil. Add chicken and sauté until almost done. Add in onion and garlic and sauté for 1-2 minutes. Add in spices, vinegar, lemon zest. Stir well. Add wine, bone broth powder, and water and stir well. Add rice and stir. Bring to a simmer and cover and cook for 10-20 minutes or until rice is tender. You may need to add more water if necessary. When rice is cooked, add zucchini, tomatoes, juice of half a lemon, and feta cheese and stir well. Garnish with a lemon wedge. Enjoy!
    Meatless substitutions:
    Instead of chicken add 1.5 cups of dried and soaked lentils. Follow the same steps.

    I agree that seeing all of the prep was really great! I am not a "natural" cook so this really helps me. I love the detailed instructions because I really need them lol.

      I am so glad to hear that it is helpful! I feel like so much of cooking is about doing it - removing the intimidation factor and getting in the kitchen. I don't believe in perfection. We are all imperfect...🌿 Eating a meal we create vs grabbing something at a fast food restaurant... Give me the home cooked meal 😍 Thank you so much friend ❤️
