Dr Michael Greger just posted a video on cooking nutrient loss. In general the pressure cooker = less cooking time=less loss. I recommend his video. You were pretty close on your answer.
This helped me decide whether or not to get one. I had no idea it took so long to first build pressure and then to depressurize after cooking. Definitely not something youtubers explain in their instant pot recipe videos. Thanks for the honest review!

I agree! Although, I don't have an Instant Pot (I use a rice cooker) or Vitamix, and my juicer is rarely used (I hate the cleanup). 😳 Derek has used a nut bag in place of a juicer, and it works just as well! 😊

I just bought an Instapot last week...was so excited when I saw this video because I made sushi rice & was unsure exactly what to do & it got a little over cooked but gonna try some other things after seeing your video...thanks Derek!!! 😁
Thank you Derek! I have a Crock-Pot I've literally never used but have been meaning to for ages. I'm going to try it out for dinner. Cooking is something I struggle with but your videos are helping me so much. Also, your shirt is awesome; is there anywhere online I can purchase it?
Brilliant video as always! I love my Instant Pot and I can recommend the amazing cookbook Vegan Under Pressure by Jill Nussinow that I got for Christmas two years ago and really got me into using it more. She really knows her spices, uses simple ingredients and doesn't use oil in cooking either. She has many free instant pot recipes on her website too. My favourite thing to make in the instant pots is probably soups, i just roughly chop ingredients and immersion blend at the end of the cooking. too easy!
If you have the space and $ get the 6 qt or 8qt because you can do pot in pot recipes, layering it all up to make 2 - 3 dishes at once in one device! It's also great for steel cut oats and if you're in a rush in the morning you can set it up the night before and use the delay start feature to have it ready and waiting for you when you get up. I have 2 instant pots and even take one on road trips for use in my hotel room. At home I make a lot of Indian food recipes so searching on Instant Pot Indian Recipes will get you some delicious healthy ideas.
I have the only slow cooker/rice cooker version and I love it. I can make lentils in 1 hour or beans in about 3, then it keeps it warm for hours which is awesome while you're away from home
Hi Derek, I’ve had three pressure cookers and all took the time to build up to pressure, the first was scary and very noisy, (45yrs ago) but my latest is brilliant. Mine is a generic pot with all the same programmes but over here it cost half the price. As we are using loads of lentils rice etc and it’s great for batch cooking. So thank you for showing me about it. Making 5 bean chilli for up to 6 adults is brilliant. X Ros in Cambridge.
Mines def the most used Christmas gift I ever received, so convenient my fav is white rice canned coconut milk and curry seasoning and veggies and a little water 👍
My go to recipe is minestrone soup w/ kale & kidney beans. I cook it in the instant pot for 15 min and everything is nice & soft ready to blend. I also make my favorite korean braise in there. I simply replace the meat w/ shroom mostly enoki.
I agree with being able to cook beans and pulses from dried. They taste so much better! I've been using Greek chickpeas recently and they taste amazing just plain cooked. It saves money on energy too as it takes so much less time to cook them.
I bought the 6 qt instant pot. Then also purchased the 8 qt. I wanted 2 instant pots, because it's so awesome and 1 is not enough! If I cook rice and some peppers and mushrooms, it will be hard to get the water amount right to get the rice perfect and not mushy. So by having 2 you can cook them separately at the same time. And things like kidney beans take 36 minutes in instant pot. You'd overcook any vegetables if you try to make them together.
You gotta check out one of nutrition facts .org videos about kale. Apparently the best way to have Kale is first to cook it. And further best pressure cooked, compared to steamed, steamed in microwave and boiled.
I have had mine for years now. I love it so much I got the mini. I cook beans, chickpeas, kale, rice, quinoa, potatoes, sweet potatoes and sooooooo many soups in it. I love it. My kids make noodles in it too.
Love my Instant Pot. Make all my soups in it. Makes great yogurt and rice too. I have the 6 quart and the mini. The six quart will accommodate most recipes. You can cut recipes in half for the mini. Never over fill your Instant Pot.
I finally purchased an Instant Pot a few months ago. I use it two to three times every day. I hardly use the stove at all now. Oatmeal, bean and veggie soups or chilli, and pressure cooked potatoes are among my favorites.
I actually saw a study using tomato paste to aid with gingivitis and tomato paste cooked in pressure cookers were FAR more nutrient dense than other methods. Pressure cooker is a win win!
Thank god you talk fast, your videos are on the long side but compared to everything else on youtube yours are informative and fun, no 5 minutes of "HI MY NAME IS, MY LIFE STORY, 2 seconds of useful information, 30 minutes of HOPE YOU FOUND THIS USEFUL" while i look up how to make fricking hummus. keep it up
Yes please do many more instant pot recipes! Every single morning I make my porridge in it using the "pot in pot" method, cooking it in the bowl I'll eat from. I set it up, push porridge, it remembers my settings and I go for my morning walk, I can eat two hours later and it's still nice and hot, no burned pots! I also love making soup where I'll clean out the freezer, throw all kinds of veg bits and bobs in, some kind of grain and bean and it's a complete meal. At the end you can open it to stir greens in, even chopped kale. I haven't baked in it yet but I do make super easy soy yogurt sometimes, no mess, right in the jars I'll store it in!
Gosh I love it when you talk facts! And this is totally unrelated, but I had to say so: Don't be mad at sweet Coco for yowling, meowing, being on the counter (we assume you clean it, dude - and I'm sure you're not really mad, I'm just saying). I lost my cat of 15 years last week and really, you don't notice how much mental, emotional, and physical space our furry, meowing friends take up in our homes and hearts until they are gone. To the topic, my Instant Pot was a gift from my mother in law and it was THE best gift ever! It has been totally instrumental in keeping me vegan and I love using it. It's so easy! I use it at minimum once a week. I love making refried beans, rice, lentils and such it in while I chop other veggies. And I love it for soup! So much soup! Thanks for another great video! Would love to see some more of Coco though. :)
I bought one in winter and love it! Beans!!!! Bought in only for the beans which is perfect, rice on it's own I did not like in the instant pot and almost burned once but it's very good for cooking mush like mixed grains and porridge and soups and for steaming veg!
Instant Pot is awesome for cooking Tofurky. Only takes 15mins with some veg stock!!! I bought one and only really used it a few times. When I get my own place I plan to use it more.
🤗 Thank you and YES it's always nice to see more Instant Pot users and recipes. I've been using for a year now 👏🏽 was introduced by my sister and her daughter who's vegetarian and raved about it. Now both my sisters have and myself and I love finding new vegan recipes or like you just throw a bunch of Healthy Items in and VIOLA 🥰👨🏻🍳🥘
My hubbie surprised me with one of these last week. I was so excited! I ran round the house screaming. IV got a curry in it now 😁 I find the beans don't fall apart like they do on the stove. I cook a big batch of beans let them cool and then freeze. I defrost for a salad or throw them into a meal while cooking.

This video is going to help me a LOT with the new pressure cooker I just bought. The tip about how to decide how much liquid to come in.... for the dish to be good... is invaluable! I would enjoy more instapot shows, yes!
I just bought an Instapot last week...was so excited when I saw this video because I made sushi rice & was unsure exactly what to do & it got a little over cooked but gonna try some other things after seeing your video...thanks Derek!!! 😁
Your meals always look so good! That lentil sweet potato thing omg
"Your food should be ready in about an hour"-pot helps you do other stuff while your food is preparing :).
LOVE my instant pot - although a word of caution is to use enough liquid because once I burnt the bottom of mine by forgetting to add in enough.

I’ve burnt my instant pot once. But it came clean after steaming some water in it for a little and washing it like regular.
Legit good and the usual genuinely funny comedy. "When unsure, just use the Bean button.." at the end made me smile :)
Nisha over at Rainbow Plant life just wrote an instant pot cookbook, and it's vegan😁💪👏👊
Thank you Derek! I have a Crock-Pot I've literally never used but have been meaning to for ages. I'm going to try it out for dinner. Cooking is something I struggle with but your videos are helping me so much. Also, your shirt is awesome; is there anywhere online I can purchase it?
Awww Coco is so loving! 😻
Also, I love my instant pot and would love to see recipes using it from you!
Have loved my instapot for a while now. As I transition to a more plant-based diet, I am excited to try these recipes! Thanks!
Love the colouring of your cat, beautiful. Thinking of the Instant pot, I love making soups and stews
Thanks for sharing 👍❤️😊
just arrived, immediately tried it, cooked rice with vegetables, good quality, I recommend it.
Cooking is an art, baking is a science, you are an artist in your creative realm
Thank you for mentioning the starch digestibility and antinutrients; those are the things I worried about.
I really love your videos and I love the instant pot! It would be so great to have more instant pot videos, your recipes are really inspiring 😀
Great video. Always thought of instant pots as just an appliance to make cooking a little easier, but not having to soak beans is a game-changer.
Pressure cooker for beans is a game changer, it saves you a lot of time and money for sure
Keep dropping videos like these! Vegan kitchen essentials!
I don't have an instant pot, but I definitely want one after this video. Thanks so much for the instructional!
I guess I'll start using the pressure cooker I got as a gift about a year ago. Never thought about using it until now. 👍
New Years 2020, this is in fridge for today’s lunch, its my favorite recipe, thank you
Pleaseeeee more videos with insta pot🎊🎉🎊🎉🎊
Such a sweeeeet kitten!!! Thanks for the video.
I’ve had mine for a little over a year, total game changer and so convenient.
Love my two instant pots for sure! Another great video 😍
The instantpot change my life for the better !
Thank god you talk fast, your videos are on the long side but compared to everything else on youtube yours are informative and fun, no 5 minutes of "HI MY NAME IS, MY LIFE STORY, 2 seconds of useful information, 30 minutes of HOPE YOU FOUND THIS USEFUL" while i look up how to make fricking hummus. keep it up
Please - more Instant Pot recipes. Love your Starch Stew! Making your Lentil Stew now. Recipe starts at 10:40.
I liked your comment about saving money on pre-cooked beans. I think I will get one.
This is great! We are thinking of purchasing one but wanted to know more about the benefits etc! Thank you! We are going out to get one!
I bought one in winter and love it! Beans!!!! Bought in only for the beans which is perfect, rice on it's own I did not like in the instant pot and almost burned once but it's very good for cooking mush like mixed grains and porridge and soups and for steaming veg!
Finally bought mine yesterday, will definitely try it tomorrow. Beautiful cat!
Instant Pot is awesome for cooking Tofurky. Only takes 15mins with some veg stock!!!
I bought one and only really used it a few times. When I get my own place I plan to use it more.
Your videos are getting better and better. Keep up the great work! 👏👏😂😂😂
🤗 Thank you and YES it's always nice to see more Instant Pot users and recipes. I've been using for a year now 👏🏽 was introduced by my sister and her daughter who's vegetarian and raved about it. Now both my sisters have and myself and I love finding new vegan recipes or like you just throw a bunch of Healthy Items in and VIOLA 🥰👨🏻🍳🥘
please more instant pot recipes!! love my instant pot
Yes more please, and can you list your past videos using the instant pot please???
I have two and love them. I use them nearly every day. Great time saver. I only use Manual!
You figure freezing doesn't kill vitamins etc?
This is so cool .. really enjoying your instant pot recipes.. thanks so much Derek for all the inspiration.. you are amazing 🌱🍀❤️🌿🌱🍃😊🙃
Please please do a series of instant pot recipes. It can be simple, that's fine. I have one and it is so hard to find vegan instant pot recipes. Thanks so much for all you do on RUclips.
Mine came yesterday and it’s much bigger at 6 qts. Going to donate my Teflon lined rice cooker. It’s still in decent shape. Thx Derek again.
