I'm also an amateur cook. I do however use beer in Alfred sauce, bbq sauce, seafood bisque, chilli, stews, and as a beer batter for fried shell fish an veggies. My one and only cooking secret is using one or more of the three B's, in most dishes; Bacon, Butter or Booze! 😊

I am wondering if i have an extreme pallete to rosemary. I tried ot on steak and it was so overpowering and i coukd not eat it. Can i sub it for thyme? Also, i hate honey. Is it necessary in this dish?
Be careful with the Himalayan salt it does have some side effects. Read on it before you use it. Recipe looks great and I will definitely try it but will go with a little bit of the original Iodized salt, not too much.

You can skip honey but you won't get the sweet taste. The honeu just neutralizes the sour taste from lemons and mustard. Yes you can use thyme.
